Anybody can add water to a boxed pancake mix, but you're better than that! These pancakes are not too thick, not too thin, but tender, light, buttery, and delicious.

1 ½ cups all-purpose flour
3 ½ teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
3 tablespoons butter, melted
1 egg
1 ¼ cups milk
cooking spray

Steps:

  • Sift together flour, baking powder, salt, and sugar in a large bowl.
  • Whisk in melted butter, egg, and milk until combined. Let batter rest for 5 minutes.
  • Preheat a large skillet over medium-high heat. Spray with cooking spray. Pour batter into the hot skillet, about 1/4 cup of batter for each pancake. Cook for 2 to 3 minutes, until bubbles appear on the sides and center of each pancake. Flip and cook until golden, about 1 to 2 minutes.

1 1/2 cups all-purpose flour
3 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon salt
1/8 teaspoon freshly ground nutmeg
2 large eggs, at room temperature
1 1/4 cups milk, at room temperature
1/2 teaspoon pure vanilla extract
3 tablespoons unsalted butter, plus more as needed

Steps:

  • In a large bowl, whisk together the flour, sugar, baking powder, salt, and nutmeg.
  • In another bowl, beat the eggs and then whisk in the milk and vanilla.
  • Melt the butter in a large cast iron skillet or griddle over medium heat.
  • Whisk the butter into the milk mixture. Add the wet ingredients to the flour mixture, and whisk until a thick batter is just formed.
  • Keeping the skillet at medium heat, ladle about 1/4 cup of the batter onto the skillet, to make a pancake. Make 1 or 2 more pancakes, taking care to keep them evenly spaced apart. Cook, until bubbles break the surface of the pancakes, and the undersides are golden brown, about 2 minutes. Flip with a spatula and cook about 1 minute more on the second side. Serve immediately or transfer to a platter and cover loosely with foil to keep warm. Repeat with the remaining batter, adding more butter to the skillet as needed.
  • Procedure for adding fruit to pancakes: Once the bubbles break the surface of the pancakes, scatter the surface with sliced or diced fruit, or chocolate chips, nuts, etc. Flip with a spatula and cook for 1 minute more, being careful not to burn toppings.

3 ½ teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 ¼ cups milk
1 egg
3 tablespoons butter, melted

Steps:

  • In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
  • Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Old recipe that I've been making for a long time. I've tried many others, but I always go back to this one!

Yield 8-9 5-6" pancakes

Number Of Ingredients 7

1 1/2 cups all-purpose flour
1 teaspoon salt
3 tablespoons sugar
2 teaspoons double-acting baking powder
1 large egg
3 tablespoons butter, melted
1 1/4-1 1/2 cups milk (refer to note below)

Steps:

  • Sift flour before measuring. Into a medium sized bowl, resift flour with the salt, sugar and baking powder.
  • In a small bowl, add egg and beat. Add butter and milk to egg mixture and combine thoroughly.
  • Form the flour mixture into a well. Pour milk/egg mixture into the well and with a wooden spoon gently combine, being careful not to over mix, making sure that it's at the right consistency.
  • Let the pancake batter sit for a few minutes or more. I've made these ahead of running an errand and have placed the batter into the refrigerator. I find that if it sits a bit, it develops a better rise.
  • Pour the pancake batter onto a medium/hot skillet that has been buttered. Once the edges firm up and the tops bubble slightly will indicate that it's time to flip them over. Cook on other side until golden and cooked through.
  • Serve with maple syrup or other syrup of your choice.
  • NOTE: the amount of milk used depends on the humidity in the air. More humidity - less milk. Dry environment - more milk. The amount of liquid used makes a difference if you sift or not sift the flour. Not sifting results in more flour than indicated.

My hubby is forever asking me to make this bread. I've tried many banana breads through the years, but this is my tried and true and one I always make. Save those brown yucky looking banana's!! The more black, the better quality banana bread you'll reap. Place them in the freezer whole or mash and freeze.

1 1/2 cups flour
3/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup butter
1 1/2 cups sugar
2 eggs
1/4 cup buttermilk or 1/4 cup sour milk
1 cup banana, very ripe and mashed (about 2 medium)
2 teaspoons vanilla extract
1 -2 teaspoon banana extract (optional)
1 cup walnuts, chopped (optional)

Steps:

  • Combine flour, baking soda and salt and set aside. Cream butter with sugar until fluffy. Add eggs and buttermilk and mix well. Add flour mixture alternately with bananas, beginning and ending with flour. Stir in vanilla, banana extract (if using) and nuts (optional). Bake in a well greased 9 - 5 inch loaf pan at 350 degrees for 1 hour, or until a toothpick, inserted in center comes out clean.
  • NOTE: If you don't have buttermilk on hand, make your own. To your measurement cup add about 1 tablespoon of white vinegar or 1 tablespoon lemon juice. Let it sit a bit and you'll have your substitute buttermilk. The banana extract is my own addition, this is a huge help if your bananas are not quite brown/ripe enough, it'll boost the flavor. As a matter of fact, I always us it even when my bananas are perfectly ripe. It's a definate must if you want your product to stand out.

1 cup uncooked quick oatmeal
1 cup buttermilk
1 egg, slightly beaten
2 tablespoons margarine, melted and cooled
1/4 cup flour
1 tablespoon granulated sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon cinnamon
1 dash salt
1/2 teaspoon vanilla or 1/2 teaspoon other extract

Steps:

  • Combine the oats and buttermilk in a bowl. Cover and refrigerate overnight.
  • In the morning, add the egg and margarine.
  • Stir just to blend.
  • Sift dry ingredients together and add to wet mixture along with the extract.
  • Stir to moisten.
  • If too thick, add extra buttermilk.
  • Cook on a sprayed griddle or skillet til bubbles appear, then flip and cook about the same amount of time.
  • Serve with syrup.

And you can also add fruit to the mixture. The batter can be made from scratch in about the same time it takes to make toast. The most time-consuming part of making pancakes, of course, is cooking them. But that time is so short you should consider these an everyday convenience food, not a special-occasion feast. 1/4 teaspoon salt

Steps:

  • Heat a griddle or large skillet over medium-low heat. In a bowl, mix together dry ingredients. Beat eggs into 1 1/2 cups milk, then stir in 2 tablespoons melted cooled butter, if using it. Gently stir this mixture into dry ingredients, mixing only enough to moisten flour; don't worry about a few lumps. If batter seems thick, add a little more milk.

I used to use Krustease Buttermilk pancake mix for many years, always wih success.I don't know why I even tried this recipe, but I'm so glad I did! I hope you will try it and enjoy it too. If you have a small or medium ice cream scoop, it's great to scoop up the batter and pour it onto the griddle! Feel free to add your favorite fruits, chocolate chips, even trail mix into the batter.Whenever I make pancakes, I always prepare the batter the night before, it just seems to make them better. 100g plain flour
1 large egg
300ml milk
oil or melted butter, for frying

Steps:

  • Sift the flour and a pinch of salt into a bowl. Make a well in the centre with the back of a spoon then break in the egg and pour in half the milk. Whisk together, gradually incorporating the flour to make a smooth thick batter. Beat thoroughly to remove any lumps, then stir in the rest of the milk.
  • Heat a little oil or butter in a medium frying pan, then tip off the excess into a bowl. Pour about 2 tablespoons of batter into the pan, tilting the pan as you pour, until the batter thinly coats the base. Cook over a moderate heat for 30 seconds to one minute until golden brown on the underside.
  • Flip over the pancake with a palette knife, and cook the other side until it is golden brown. Slide the pancake out of the pan on to a plate, heat a little more oil or butter and cook the remaining pancakes one at a time in the same way.
  • If preparing in advance, cook and stack the pancakes. Reheat in the microwave on Medium (750W) for about 2 minutes. Alternatively, heat the oven to 180C/gas 4/fan 160C. Wrap the pancakes in foil and warm them through in the oven for 10 minutes.
