PASTA WITH TOMATO & HIDDEN VEG SAUCE



Pasta with tomato & hidden veg sauce image

Get your family to eat more veg with this superhealthy pasta sauce recipe which counts as 5 of your 5-a-day. The sauce is freezable too

1 tsp olive oil
1 large onion, chopped
2 celery sticks, chopped
2 carrots, chopped
1 leek, chopped
2 peppers, deseeded and chopped
2 cans chopped tomatoes with garlic
1 tbsp each caster sugar and balsamic vinegar
300g dried pasta shapes
parmesan, shaved, and rocket, to serve (optional)
1 tsp olive oil

Steps:

  • Heat the oil in a large non-stick saucepan and gently cook the onion, celery, carrots and leek until soft, about 20 mins. Add the peppers and cook for 10 mins more, then tip in the tomatoes, sugar and vinegar. Simmer for at least 20 mins - the longer the better.
  • Cook the pasta following pack instructions. Meanwhile, blitz the sauce with a hand blender until smooth, season and return to the heat to keep warm while the pasta cooks. Drain the pasta and toss through the sauce. Serve in bowls topped with shaved Parmesan and rocket leaves, if you like.

This is something my daughter does to get her boys to eat more vegetables. It sure works for her...should work for you!

Number Of Ingredients 4

4 cups of your favorite red spaghetti sauce
1/2 cup carrot, sliced thin
1/2 cup frozen peas
1/2 cup frozen wax bean, cut in small pieces

Steps:

  • Prepare vegetables & steam until soft. Add more water as needed so water continues to boil.
  • Heat up spaghetti sauce.
  • Add one cup of sauce to blender along with two cups steamed vegetables. Close top & place kitchen towel over top. Puree. Be careful -- this is hot stuff!
  • Empty into clean pot.
  • Repeat until all the vegetables are pureed.
  • Add some water (from the steamer) if sauce is too thick for your taste.
  • Serve over spaghetti.
  • You may change the vegetables to meet your needs.

Be sure to brown all the vegetables, my son once saw a piece of green zucchini skin and refused to eat it. You can add 1 pound of crumbled ground beef if you want to do so.

1 pound(s) cooked spaghetti.
1 pound(s) fresh mushrooms
3 medium zucchini
1 bag(s) fresh spinach
1 tablespoon(s) chopped garlic
1 tablespoon(s) olive oil
2 bottle(s) marinara sauce

Steps:

  • Brown garlic in olive oil. Use food processor to chopp all vegetables together until finely chopped.
  • Add vegetables to garlic and saute until they are brown.
  • Add marinara sauce and cook until it is all brown. Cover cooked spaghetti in large pot with sauce and stir until coated. Enjoy.
