Chicken, peppers, onion, and a blend of spices cooked in a foil packet.

1.5 lbs Chicken Breasts (cut into strips)
3 Bell Peppers (I used a mix of red, green, and yellow)
1 Red Onion
2 Tbsp Chili Powder
2 Tbsp Cumin
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Salt

Steps:

  • Cut chicken breasts, bell peppers, and onion into strips.
  • Mix spices together in a bowl.
  • Toss spices, chicken, and vegetables together and wrap them in foil.
  • Cook on grill over indirect heat for 20 -25 minutes OR in oven at 400°F for 20 - 25 minutes or until chicken is cooked through.
  • Serve with tortillas.

Easy Chicken Fajitas in Foil Packets image

Relax and enjoy your day, knowing that dinner is ready with these easy make-ahead meals of juicy chicken fajitas in foil packets. Grill, then load them up with your favourite fajita fixings! Easy prep, easy clean-up.

4 chicken breasts (boneless, skinless)
3 tablespoons taco seasoning mix (* see recipe in Notes below )
1 red onion (thinly sliced)
3 bell peppers (1 each of red, yellow and orange, thinly sliced)
1 tsp smoked paprika ((optional))
1 lime
1 tbsp olive oil (extra virgin)
2 avocados
2 cups cherry tomatoes (halved)
1 cup light sour cream (or Greek yogurt)
1/4 cup cilantro leaves (finely chopped)
2 oz (50 gm) tortilla chips (for garnish (or wrap in tortillas))

Steps:

  • Cut four squares of heavy-duty aluminum foil, about 16 inches square.
  • Lay out on your counter and top each with a 16-inch square of parchment paper (optional)
  • Slice chicken breasts crosswise into thin strips. Toss with a little olive oil and up to 1 tablespoon of taco seasoning mix. Place one breast on each of the foil/parchment paper squares.
  • Divide peppers and onions evenly and arrange beside each of the chicken breasts.
  • Sprinkle the peppersand onions with 1/4 teaspoon smoked paprika, if desired. Drizzle the chicken and peppers with 1 teaspoon olive oil. Squeeze a little lime juice on each.
  • Fold foil loosely over chicken securing ends, but allowing a little space for heat to circulate. Refrigerate until ready to grill.
  • Grill over medium heat, checking for doneness after 20 minutes. Use an instant-read thermometer to make sure the thickest pice of chicken registers 165°F.
  • Garnish with cilantro and serve with sliced avocados or homemade guacamole,cherry tomatoes, sour cream, and tortilla chips. Alternatively, you can wrap these fillings in warmed tortillas.

1 1/2 cups minute rice (, brown or white)
1 1/2 cups water
1 pound boneless skinless chicken breasts (, cut into thin strips)
2 bell peppers (, any color, sliced into thin strips)
1 yellow or purple onion (, sliced into thin strips)
2 Tablespoons olive oil
1 packet fajita seasoning or taco seasoning (, divided)
tin foil (, for wrapping)
small flour tortillas
guacamole
salsa
sour cream
fresh cilantro
hot sauce
limes

Steps:

  • Combine rice, water, and 2 tablespoons taco seasoning and stir. Set aside for 5 minutes.
  • Add chicken, bell peppers and onion to a large bowl. Drizzle with oil, and season with the remaining taco seasoning packet, stirring gently to evenly coat everything.
  • Coat four large pieces (about 12'' long) of tinfoil with cooking spray.
  • Divide the rice and remaining liquid evenly between the pieces of tinfoil. Add chicken and vegetables on top.
  • Bring the sides of the tinfoil up, sealing the tinfoil closed to form foil packs, ready to cook.

1 1/2 cups instant rice, uncooked
1 1/2 cups hot water
1 tablespoon taco bell home originals taco seasoning mix
4 small boneless skinless chicken breast halves
1 green pepper, cut into strips
1 red pepper, cut into strips
1/2 cup Taco Bell Home Originals thick 'n chunky salsa
1 cup shredded mexican-style taco cheese

Steps:

  • Heat oven to 400. Fold up all sides of four 18 x 12" sheets of heavy duty foil to form 1" rim; spray foil with cooking spray. Combine rice, water and taco seasoning; spoon onto center of foil sheets. Top with remaining ingredients.
  • Bring foil sides up. Double fold top and ends to seal each package, leaving room for heat circulation inside. Place in 15 x 10 x 1" baking pan.
  • Bake 30-35 minutes or until chicken is cooked through (165 degrees). Let stand 5 minutes. Cut slits in foil to release steam before opening packages.

  • In a large bowl, toss the chicken, onion and all the peppers with the olive oil and cumin seeds. Season generously with salt and pepper and toss again. Pile the chicken and vegetables evenly on one half of each foil sheet and top with the oregano and lime. Fold the foil over the ingredients and pinch the edges to seal.
