TILAPIA WITH FIESTA RICE

Steps:
- Place tilapia in a 15x10x1-in. baking pan. Mix chili powder, salt, cumin and pepper; sprinkle over fish. Broil 3-4 in. from heat until fish just begins to flake easily with a fork, 10-12 minutes., Meanwhile, prepare rice according to package directions. Transfer to a microwave-safe bowl; stir in beans, corn and salsa. Microwave, covered, on high until heated through, stirring once, 2-3 minutes Serve with fish.

TILAPIA MASALA WITH RICE

Steps:
- Bring the rice, 1 1/3 cups water and 1/4 teaspoon salt to a simmer in a saucepan over medium-high heat. Reduce the heat to low, cover and cook 15 minutes. Remove from the heat and add the peas; cover and set aside.
- Puree 1/2 cup yogurt, the garlic, ginger, lime juice, cumin, cayenne and 3/4 teaspoon salt in a food processor. Transfer all but 3 tablespoons of the mixture to a large bowl. Pierce the fish a few times with a fork and season with salt; add to the bowl and toss. Marinate 15 minutes.
- Preheat the broiler. Place the fish on a broiler pan; top with the marinade and butter. Broil until opaque, 6 to 8 minutes. Mix the remaining 1/4 cup yogurt, the cilantro, and salt to taste with the yogurt mixture. Serve the fish and rice with the yogurt sauce and lime wedges.
TILAPIA FOIL PACKETS

- 1. Preheat the oven to 400 degrees F. Whisk together the white wine, olive oil, lemon zest and juice, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl.
- 2. Place each tilapia fillet on a separate 14-by-12-inch piece of nonstick foil. Drizzle one-quarter of the white wine mixture over each fish fillet and top with one-quarter of the tomatoes, capers and thyme. Fold the foil up over each piece of fish and seal to create a packet. Put the packets on a sheet pan and bake until the fish becomes fragrant, 20 to 25 minutes depending on the thickness of the fillets; let cool for 3 minutes. Open the packets, sprinkle 1/2 teaspoon salt evenly over the fillets and serve.

Steps:
- Cut tin foil into 12X16 inch rectangle.
- Place green pepper, tomato and green onion on lower half of foil sheet.
- Sprinkle with 1/4 teaspoon basil, salt and pepper.
- Place fish on vegetables.
- Sprinkle with remaining basil, salt and pepper.
- Top with lemon slices.
- Fold upper half of foil over fish and vegetables.
- Double fold edges of foil to make a tight 1/2 inch seal.
- Place foil envelope on baking sheet and bake at 450F for 15 minutes or until envelope puffs.
- To serve, Cut an "X" in top of envelope and fold foil back.
BAKED TILAPIA WITH VEGGIES IN FOIL
Steps:
- Preheat the oven to 450 degrees F (230 degrees C).
- Create aluminum foil packets for each fillet. Place fish into the individual foil packets and place carrots and celery on top of each fillet. Divide vermouth and butter evenly between each pouch. Seal each foil packet and place on a baking sheet.
- Bake in the preheated oven until fish fillets flake easily with a fork, 15 to 20 minutes.

This Mexican recipe is known as "pescado empapelado" in spanish. Light and Tasty, you can add other herbs or vegetables to your choice.

Steps:
- Cut six squares of aluminium foil, as to make an envelope with them.
- Pour a little olive oil over each square of foil. (about 1 Tbsp).
- Put the fish over the oiled foil, add salt and pepper.
- Place the onion, tomato, cilantro, celery, chile, and then place lemon slices over the fish. Finally squeeze some lemon juice over it.
- Close the foil, and repeat for each fillet.
- Place the foil envelopes over a steamer during 20 minutes or until the fish flakes easily, and serve.
- I love to serve it with brown rice!

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Lay 4 sheets of aluminum foil on a work surface.
- Place 1 tilapia fillet in the center of each piece of foil, and top with 1/2 tablespoon butter. Sprinkle each fillet with dill, garlic powder, pepper, and salt. Fold foil over top and roll up edges to create a sealed packet. Place packets on a baking sheet.
- Bake in the preheated oven until fish flakes easily with a fork, about 20 minutes.
