BONUS RECIPE: DO THE CABBAGE PACK!

Bonus Recipe: Do the Cabbage Pack! image

Provided by Food Network

Time 45m

Yield 4 servings

Number Of Ingredients 8

1/2 head of green cabbage
1 small onion, sliced
2 tablespoons light whipped butter or light buttery spread
Dash salt
Dash black pepper
Dash paprika
1/4 cup precooked real crumbled bacon
1 teaspoon chopped garlic

Steps:

  • Preheat the oven to 400 degrees F.
  • Carefully remove the tough core from the cabbage using a sharp knife. Slice the cabbage half into 4 thin wedges. Halve each wedge, leaving you with 8 "chunks."
  • Lay a large piece of heavy-duty foil on a baking sheet and spray with nonstick spray. Spread the cabbage out in the center, and top with onion. Add butter in four evenly spaced dollops over the onion. Sprinkle with salt, pepper, and paprika. Top with bacon and garlic.
  • Place another large piece of foil over the veggies. Fold together and seal all four edges of the two foil pieces, forming a well-sealed packet.
  • Place the baking sheet in the oven and bake for 30 to 35 minutes, until the veggies are soft.
  • Let it cool slightly. Using oven mitts, carefully flip the packet over, allowing the butter mixture to coat the veggies, and then return to right-side-up. Cut the packet to release steam before opening it entirely. (Careful - steam will be hot.) If you like, season with additional salt, pepper, and paprika, to taste. Mmmmm!

FOIL BAKED CABBAGE RECIPE - (3.9/5)

Foil Baked Cabbage Recipe - (3.9/5) image

Provided by Renna

Number Of Ingredients 5

1 head cabbage
8 tablespoons butter, divided into tablespoons
2 cloves garlic
4 teaspoons salt
Pepper, to taste

Steps:

  • Oven to 425ºF. Start with a whole head of cabbage and remove a couple of the outer layers. Rinse the head as best you can. Then cut off the stem part of the cabbage and quarter the cabbage. Tear off 4 pieces of foil that are long enough to cover and seal in each wedge of cabbage completely. Place each wedge on its own piece of foil and create a pouch. Place 1 to 2 tablespoons of salted butter or butter substitute in each pouch. Mince 2 cloves of garlic, more if you like it more garlicky) and put about a half a clove in each pouch. If you are using pre-minced garlic, I would say about 1 to 2 teaspoons in each pouch. Salt and pepper the cabbage, then roll the foil pouches tightly closed. I place an extra layer around the other way to ensure it was creating an adequate steaming pocket. Place on a baking sheet and leave in the oven for approximately 1 hour or until cabbage is nice and tender. Remove from oven, add additional salt or pepper to taste and enjoy.

SLICED, BAKED CABBAGE

Sliced, Baked Cabbage image

I made this one night to go along side a casserole. I was short options for a vegetable dish, and this is what I came up with. It turned out wonderful. This is for 2 servings. I like to use the leftover cabbage for coleslaw or chopped cabbaged gives a lovely texture to lettuce salads.

Categories     Vegetable

Time 1h10m

Yield 6-8 slices, 2 serving(s)

Number Of Ingredients 6

1 green cabbage (medium-sized and firmly-packed leaves)
3 tablespoons olive oil
2 tablespoons apple cider vinegar
1 tablespoon caraway seed (that is approximate, I really didn't measure. The small container allowed me to sprinkle the seeds o)
2 teaspoons garlic powder
salt and pepper

Steps:

  • Preheat oven to 375°F.
  • Line a sheet pan with foil. (I used an 8x2").
  • Treat the pan with 1 Tbsp of olive oil and spread to coat evenly.
  • Slice cabbage with core-side down. You should end up with 6-8 slices. Don't slice into core. Just use sides of the cabbage.
  • Place sliced cabbage in two rows, each slice slightly overlapping.
  • Drizzle 2 Tbsp of olive oil and apple cider vinegar over each row. (If your cabbage is rather large, increase it to 3 tablespoons Again, use your own judgement).
  • Next, sprinkle on Caraway seeds, garlic powder and salt-n-pepper.
  • Cover with another sheet of foil.
  • Bake for 45 min - 1 hour -- ovens vary.
  • To serve, arrange slices along side your favorite meat dishes or casseroles.
  • Variation: You can also add sliced bell pepper and sweet onion to this, by putting the vegies in between the sliced cabbage.

BOILED CABBAGE

Boiled Cabbage image

This simple, but deeply flavorful side is the perfect accompaniment to roasted pork or chicken, sausages or your St. Patty's Day corned beef. The crinkly leaves of savoy cabbage hold up well to this cooking method and the buttery sauce readily clings to them, but you could use regular green cabbage, too.

Provided by Food Network Kitchen

Categories     side-dish

Time 30m

Yield 6 to 8 servings

Number Of Ingredients 6

4 slices thick-cut bacon (about 4 ounces), coarsely chopped
4 tablespoons unsalted butter
1 1/2 cups low-sodium chicken broth
Pinch freshly grated nutmeg
Kosher salt and freshly ground black pepper
1 medium head savoy cabbage (about 2 1/2 pounds), cored and chopped into 1- to 2-inch pieces

Steps:

  • Scatter the bacon in a large Dutch oven and cook over medium heat, stirring occasionally, until crisp, 6 to 8 minutes. Transfer the bacon to a paper towel-lined plate using a slotted spoon and set aside.
  • Remove all but about 1 tablespoon of the bacon fat from the pot and add 2 tablespoons of the butter. When the butter has melted, add the broth, nutmeg, 1/2 teaspoon salt and a generous amount of pepper. Simmer for about 2 minutes to blend the flavors.
  • Add the cabbage, bring the liquid back to a simmer over low heat and cover the pot. Cook, stirring occasionally, until the cabbage is very tender, about 20 minutes. Season with salt and pepper, if needed. Melt the remaining 2 tablespoons butter in a microwave or a small pot and drizzle over the cabbage. Just before serving, top with the reserved bacon.

Time 2h30m

Yield 6 servings

Number Of Ingredients 7

1 cabbage, about 2 to 2 1/2 pounds
2 large Idaho potatoes, about 2 1/2 pounds
12 ounces lean bacon, cut into 1/2-inch dice
2 cups yellow onions, peeled and sliced lengthwise
1 teaspoon salt
1 teaspoon ground black pepper
2 cups homemade chicken stock, or canned, low-sodium chicken broth

Steps:

  • Preheat the oven to 375 degrees F.
  • Rinse the cabbage under cold running water and remove the tough outer leaves. Cut the cabbage into quarters and remove the hard core. Cut the cabbage quarters into halves and place, rounded side down, in a roasting pan.

  • Fry the bacon in a heavy medium skillet for 7 minutes. Add the sliced onions, salt, and black pepper to the pan and cook until soft, about 5 minutes. Evenly distribute the bacon mixture and pan drippings over the vegetables, then pour the chicken stock on top. Tightly cover the pan with aluminum foil and bake for 1 1/2 hours.
  • Remove the pan from the oven and allow to sit, covered, for 15 minutes before serving. Serve the vegetables with the bacon and broth spooned over them.
