THE BEST, EASIEST FOCACCIA BREAD RECIPE
Cold, refrigerated dough is the secret to making delicious focaccia! Allowing the dough to rest 18 to 24 hours in the fridge will yield extra-pillowy and airy focaccia, though if you are pressed for time, you can make this start-to-finish in 3 hours. This 4-ingredient recipe requires only 5 minutes of hands-on time. Video guidance below! Adapted from the focaccia recipe in Bread Toast Crumbs. A few notes: Plan ahead: While you certainly could make this more quickly, it turns out especially well if you mix the dough the day before you plan on baking it. The second rise, too, takes 2 to 4 hours. If you are short on time and need to make the focaccia tonight: Let the mixed dough rise at room temperature until doubled, about 1.5 to 2 hours. Then proceed with the recipe, knowing the second rise will only take about 30 minutes. You can use various pans to make this focaccia such as: two 9-inch Pyrex pie plates. (Use butter + oil to prevent sticking.) One 9x13-inch pan, such as this USA pan - do not split the dough in half, if you use this option, which will create a thicker focaccia . A 13x18-inch rimmed sheet pan - this creates a thinner focaccia, which is great for slab sandwiches. As always, for best results, use a digital scale to measure the flour and water. I love SAF instant yeast. I buy it in bulk, transfer it to a quart storage container, and store it in my fridge for months. You can store it in the freezer also. If you are using active-dry yeast, simply sprinkle the yeast over the lukewarm water and let it stand for 15 minutes or until it gets foamy; then proceed with the recipe. Flour: You can use all-purpose or bread flour here with great results. If you live in a humid environment, I would suggest using bread flour. If you are in Canada or the UK, also consider using bread flour or consider holding back some of the water. Reference the video for how the texture of the bread should look; then add water back as needed.

- In a large bowl, whisk together the flour, salt, and instant yeast. Add the water. Using a rubber spatula, mix until the liquid is absorbed and the ingredients form a sticky dough ball. Rub the surface of the dough lightly with olive oil. Cover the bowl with a damp tea towel, cloth bowl cover, or plastic wrap and place in the refrigerator immediately for at least 12 hours or for as long as three days. (See notes above if you need to skip the overnight rise for time purposes.) NOTE: It is important the dough really be slicked with olive oil especially if you are using a cloth bowl cover or tea towel as opposed to plastic wrap or a hard lid. If you are using a tea towel, consider securing it with a rubber band to make a more airtight cover. If you do not slick the dough with enough oil, you risk the dough drying out and forming a crust over the top layer.
- Line two 8- or 9-inch pie plates or a 9×13-inch pan (see notes above) with parchment paper or grease with butter or coat with nonstick cooking spray. (Note: This greasing step may seem excessive, but with some pans, it is imperative to do so to prevent sticking. With my USA pans, I can get away with olive oil alone; with my glass baking dishes, butter is a must.)
- Pour a tablespoon of oil into the center of each pan or 2 tablespoons of oil if using the 9×13-inch pan. Using two forks, deflate the dough by releasing it from the sides of the bowl and pulling it toward the center. Rotate the bowl in quarter turns as you deflate, turning the mass into a rough ball. Use the forks to split the dough into two equal pieces (or do not split if using the 9×13-inch pan). Place one piece into one of the prepared pans. Roll the dough ball in the oil to coat it all over, forming a rough ball. Repeat with the remaining piece. Let the dough balls rest for 3 to 4 hours depending on the temperature of your kitchen.
- Set a rack in the middle of the oven and preheat it to 425°F. If using the rosemary, sprinkle it over the dough. Pour a tablespoon of oil over each round of dough (or two tablespoons if using a 9×13-inch pan). Rub your hands lightly in the oil to coat, then, using all of your fingers, press straight down to create deep dimples. If necessary, gently stretch the dough as you dimple to allow the dough to fill the pan. Sprinkle with flaky sea salt all over.
- Transfer the pans or pan to the oven and bake for 25 to 30 minutes, until the underside is golden and crisp. Remove the pans or pan from the oven and transfer the focaccia to a cooling rack. Let it cool for 10 minutes before cutting and serving; let it cool completely if you are halving it with the intention of making a sandwich.
FOCACCIA WITH ASPARAGUS, PROSCIUTTO, AND TRUFFLE OIL
Again, this was taken off of truffle-oil.com's website and I'm posting it here in case I lose it. Please review if you make this. I'm also guessing on yield and times again, as well as servings as they didn't include this in recipe. The site says to add the truffle when everything else is finished. Also, it suggests using a pizza stone.

- Place the warm water in a food processor and sprinkle the yeast over the top.
- Wait for two minutes, then add the sugar, half of the olive oil, and half of the flour.
- Mix thoroughly until smooth, cover with plastic, and allow to sit for 45 minutes; it should be very foamy.
- Add the salt, the remaining oil, and half of the remaining flour.
- Mix thoroughly and, with the processor running, add the rest of the flour gradually, just two Tbsp at a time, until the dough forms a ball and pulls away from the sides of the bowl.
- The ball of dough should be moist to the touch, but not too sticky and you may find it necessary to add additional flour, a very small amount at a time.
- Place a small amount of olive oil in a mixing bowl and add the dough, turning the dough several times to coat.
- Cover the dough ball with plastic wrap and set aside in a warm spot until it has doubled in size, which should take about 45 minutes.
- Punch down the dough and turn out onto floured surface and knead until smooth.
- Form into another ball.
- Bring a large pot of salted water to a boil.
- Trim the asparagus ends off and discard.
- Peel the asparagus skin off of the stalk, starting just below the tip.
- Boil the asparagus until it is bright green, about 2-3 minutes.
- Chill immediately under cold running water.
- Cut in half lengthwise and reserve.
- Place the pizza stone in the oven and preheat to 350 degrees F.
- Cut the dough into four pieces and roll into balls.
- Use a rolling pin to roll the pieces into small disks, about 8 inches wide.
- Cover them with plastic and allow them to "proof" for about 5-10 minutes.
- Roll out again until each piece is about 1/2 inch thick.
- Sprinkle a pizza pan with cornmeal and transfer the dough pieces to it.
- Press your fingertips into the dough, leaving dimples in the surface.
- Sprinkle the dough with the 1/4 Celsius olive oil, salt, oregano, rosemary, and sage, being careful to distribute the ingredients evenly over all of the dough pieces.
- Sprinkle the pizza stone with cornmeal and bake the dough disks for about 20 minutes, or until lightly browned on top.
- Use a sharp knife to poke any large bubbles that form during baking.
- Remove the foccacia and top with the prosciutto, asparagus, and cheese slices.
- Return to the oven and bake until the cheese is melted and the toppings are warm, about 10 minutes.
- Cut the finished foccacia into wedge shaped pieces before drizzling with the truffle oil.
- Sprinkle with pepper and serve while hot.

ROASTED ASPARAGUS AND PROSCIUTTO

- Preheat the oven to 400 degrees.
- If the asparagus are thick, peel them halfway up the stalks. Cut off and discard the bottom third of the asparagus. Place the asparagus in a single layer on a sheet pan, drizzle with olive oil, and sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper. Roast for 10 minutes, until the stalks are just tender. Meanwhile, place the prosciutto in a single layer on another sheet pan and roast in the same oven for 5 minutes.
- Melt the butter in a medium (10-inch) saute pan over medium heat and wait until the bubbles almost subside. Crack the eggs into the skillet, keeping them separate, if possible. Sprinkle the eggs generously with salt and pepper and cook over medium heat until the whites are cooked but the yolks are still runny. Don't turn them over!
- Arrange the asparagus on 3 plates. Place 2 slices of prosciutto on top of each pile, drizzle with hollandaise, and place a fried egg on top of the prosciutto. Serve hot.
- Place the egg yolks, lemon juice, salt, black pepper, and cayenne pepper in the jar of a blender and process on low for 15 seconds. Melt the butter in a small saucepan until it is sizzling hot. Remove the small clear insert in the top of the blender. With the blender on low, slowly add the hot butter to the egg and lemon mixture and blend for 30 seconds, until the sauce is very thick. Use immediately.

- For asparagus, snap off tough ends of spears where they naturally give when bent. Place spears into 1-inch of boiling water. Cover the pan and cook asparagus for 3 or 4 minutes, until spears are just tender but remain bright green in color, about 3 to 4 minutes.
- Drain and cold shock the spears in a colander under cool water. Return cooked asparagus to skillet and coat with lemon juice and a drizzle of extra-virgin olive oil.

- Bring a large pot of salted water to a boil. Cook the prosciutto in a large skillet over medium-high heat until it renders some fat and begins to brown, about 2 minutes. Add the garlic and thyme and cook until the garlic just begins to soften, about 30 seconds. Remove the skillet from the heat and add the wine. Return to the heat and cook until the wine evaporates slightly, about 2 more minutes. Add 1/4 teaspoon salt and pepper to taste. Add the cream and nutmeg and cook, stirring occasionally, until the sauce thickens slightly, about 3 more minutes.
- Meanwhile, add the pasta to the boiling water and cook as the label directs, adding the asparagus during the last minute of cooking. Reserve 1/2 cup cooking water, then drain the pasta and asparagus.
- Add the cheese to the cream sauce and stir to combine. Add the pasta and asparagus and toss to coat, adding some of the reserved cooking water to loosen, if needed. Season with salt and pepper. Divide among bowls and top with more cheese.
FOCACCIA WITH HERBED-HONEY PLUMS AND PROSCIUTTO
Featuring a combination of tart plums, sweet honey and salty prosciutto, this focaccia is delicious as a snack or appetizer and also as a light lunch when paired with a salad. Go with fresh, ripe but firm plums as they will soften once baked. The herb of choice is rosemary, but any fragrant, woodsy herbs, such as thyme, marjoram or oregano work well, too. Letting the dough ferment slowly in the refrigerator builds more flavor. The dough can be refrigerated up to 3 days in advance of baking.

- In the bowl of a stand mixer, whisk together the yeast and warm water. Let stand until foamy, about 5 minutes.
- Using a wooden spoon, stir the flour, sugar and 1 tablespoon salt into the yeast solution and mix until a shaggy dough forms. Add 3 tablespoons olive oil and fit the mixer with the dough hook. Beat on medium speed to knead until smooth and elastic, 5 to 10 minutes.
- Lightly oil a large bowl. Transfer dough to the bowl and turn to coat lightly with oil. Cover bowl with a clean dish towel. Set in a warm place until dough has doubled in size, 1 to 2 hours.
- While dough is rising, combine the honey and herbs in a small pot. Gently warm over low for 8 minutes. Remove from heat and let herbs steep until ready to use.
- In a medium bowl, toss the plums with 2 tablespoons of the herbed honey. Sprinkle with 1 tablespoon olive oil and the remaining ½ teaspoon salt and mix.
- Spread remaining 2 tablespoons olive oil on a half-sheet pan. Transfer the dough to the pan and, using your hands, pat into an oval, about ½-inch thick, leaving about a 1-inch border between the dough and edges of the pan. Allow the dough to rise to about 3/4-inch thickness, uncovered, 20 to 30 minutes. Meanwhile, heat oven to 400 degrees.
- Use your fingers to make dimples all over the surface of the dough. Top the dough with the herb sprigs from the honey (reserve the honey) and the sliced fruit. Discard any liquid from the fruit. Drizzle the top all over with olive oil. Bake until the dough is light golden brown and the fruit is cooked through and soft, about 25 minutes.
- Dab the surface with the herbed honey while the focaccia is still hot. Allow to cool slightly before topping with the prosciutto. Move the bread to a board and cut into squares while warm to serve.
