CEVICHE - THE ESSENTIAL PERUVIAN FISH DISH

Ceviche - The Essential Peruvian Fish Dish image

Delicious sea fish marinated in lime juice and chilli, with red onion, hot peppers, thinly sliced plantain, and wedges of sweet potato.

Provided by Eat Peru

Categories     Lunch     Main Course     Main Dish     Starter

Number Of Ingredients 11

1 kg white fish fillet (Mahi-Mahi)
1/2 kg lemon
1/2 kg lime
1 small purple onion
3 medium peppers (habanero red peppers)
1/2 cup fresh coriander
1 teaspoon ginger (grated)
Salt to taste
2 medium sweet potatoes
1 cup yellow corn
plantain chips

Steps:

  • Wash and dry the fish. Cut the fish into cubes of approximately 2 cm. Remove any remaining skin, scales or spines. It is important that you only have cubes of lean meat similar in size. Put the fish to the side.
  • Wash the lemons and limes. Squeeze them into a large bowl. Strain the fresh lime juice and lemon juice to remove any seeds.
  • This lime juice will serve to cook the fish by the marination process. Put the fish cubes into the juice marinade. Make sure that all the flesh is covered by the juice. Cover the container and store in the fridge for about 20 to 30 minutes. Use some ice cubes to cool the fish faster. From time to time check that the fish is "cooking" and turn gently so that each piece gets plenty of contact with the lime juice.
  • While the fish cooks, prepare the garnish. Wash the sweet potatoes with a brush and place in a steamer for about 30 minutes, until they are tender. When the potatoes are soft, remove from the steamer, remove the skin and cut into large pieces.
  • Peel the plantain and cut in half, crosswise. With the help of a potato peeler cut the plantain into very thin slices. Place the slices or chips in a pan with enough oil to deep fry them. Make sure they don't touch. With a wooden pallet, stir from time to time. Carefully remove the plantain from the oil and place them on a plate covered with absorbent paper.
  • Wash the red peppers and onion. Open the peppers, remove the seeds and veins and cut into small squares. Peel the onion and cut it into thin strips. Finely cut the coriander.
  • Remove the ceviche from the refrigerator - the meat should already look cooked (the flesh should be opaque and about to fall apart). Add onion, chili and coriander, ginger, a pinch of salt and stir. Cover the ceviche again and leave it in the fridge for about 10 more minutes.
  • Remove the ceviche from the refrigerator and place in cups or small plates. Serve with the plantain chips, and sweet potatoes. Sprinkle with some coriander and ají limo chili pepper.

COCONUT CEVICHE RECIPE BY TASTY

Coconut Ceviche Recipe by Tasty image

Nothing says summer like a refreshing coconut ceviche. Cracking open a coconut may seem intimidating, but if you follow our easy steps, you'll be impressing your friends in no time. Serve this ceviche as fun first course or light main meal.

Provided by Betsy Carter

Categories     Snacks

Time 1h50m

Yield 2 servings

Number Of Ingredients 11

3 young coconuts
1 cup mango, diced
¼ cup red onion, thinly sliced
2 tablespoons jalapeño, minced
1 tablespoon lime, zested
6 tablespoons lime juice
3 tablespoons coconut milk, shaken, full-fat
3 tablespoons fresh mint leaf, finely chopped
3 tablespoons fresh cilantro, finely chopped
1 teaspoon kosher salt
tortilla chip, or tostada shells, for serving

Steps:

  • Working 1 at a time, set a coconut on its side on a cutting board. First, remove the white husk from one end of the coconut to expose the brown shell underneath. Holding the coconut in place with one hand on the rounded end, carefully use the back end, or heel, of the knife to puncture the exposed coconut shell. Do not use any force other than the weight of the knife. Do this a few times, working in a circle until you can wedge your knife into the coconut shell and pop off the top. Drain the coconut water into a bowl and reserve for another use.
  • With the cut side of the coconut up, place the knife over the opening and cover the spine (dull side) of the knife with a folded kitchen towel. Using a meat mallet or other heavy kitchen utensil, like a rolling pin, whack the knife where the towel covers it. Repeat a few times until the coconut is cracked in half.
  • With a large spoon, scoop out the coconut meat. If necessary, clean the coconut meat by trimming off any hard or woody pieces of the shell. With a sharp knife, cut the cleaned coconut meat into 1 x ½-inch (2 ½ cm x 1 ¼ cm) strips.
  • In a medium bowl, toss together the coconut meat, mango, red onion, jalapeño, lime zest and juice, coconut milk, mint, and cilantro. Season with the salt, then stir again.
  • Cover the bowl and let marinate in the refrigerator for at least 1 hour, up to 3 hours.
  • Serve the ceviche chilled with tortilla chips or in a tostada shell.
  • Enjoy!

CEVICHE WITH COCONUT AND GINGER

Ceviche with Coconut and Ginger image

The best, most interesting ceviches in the world come from Peru, specifically Lima. Peru is blessed with three completely different geographies-coastal, Amazonian, and highland, with a different ecosystem-and cuisine-for each. Peruvian chefs create ceviches using exotic fish from the coast, potatoes and corn from the highlands, and wonderful tropical flavors and ingredients like hearts of palm from the Amazon region. Typical of a ceviche, the snapper in this taco filling is cooked not with heat, but by chemical action of the acid in the citrus juices. True red snapper, one of the great fishes of the world, is very expensive and rare, distinguished by its large head and red flesh. Most fish that is sold as snapper is actually rock cod or some other rockfish and does not have the subtlety of the genuine article. If you can't get true snapper (you can tell only by seeing the whole fish, with its bright red and pale yellow markings), striped sea bass or halibut will work well. Candied ginger makes a nice garnish.

Yield makes 8 tacos

Number Of Ingredients 11

1 1/2 pounds boneless, skinless red snapper fillet, cut into 1/4-inch dice
1/2 cup fresh lime juice
1/2 cup fresh lemon juice
1 teaspoon fine sea salt
1 tablespoon vegetable oil
1/2 small white onion, cut into 1/4-inch dice
3/4 cup coconut milk
5 dried ají chiles, seeded and rehydrated (page 152)
2 tablespoons julienned fresh basil
8 (5 1/2-inch) crispy yellow corn tortilla shells (page 17), for serving
Garnish: Finely shredded iceberg lettuce tossed with lime juice and a pinch of salt and diced candied ginger

Steps:

  • In a large bowl, toss the snapper with the lemon and lime juices and the salt and let marinate for 1 hour in the refrigerator.
  • Meanwhile, to make the coconut-chile sauce, in a skillet, heat the oil over medium-high heat and sauté the onion just until translucent, 2 to 3 minutes. In the jar of a blender, add the sautéed onion, coconut milk, and chiles and puree until smooth; strain through a fine-mesh sieve into a bowl.
  • Drain off the marinade from the fish. In a large bowl, toss the snapper with the basil.
  • Drizzle half of the coconut-chile sauce over the fish and use the remaining sauce as a dip for the tacos. Serve immediately.
  • To serve, place some iceberg slaw in each crispy shell, divide the filling equally between them, top with garnish, and arrange in a taco holder. Or, lean the filled shells in a row, propped upright, on a platter. Eat right away. To build your own, place some slaw, then filling, in a crispy shell, and eat right away.
