This recipe yields 2 loaves or as my mom used to make it - one bundt cake. I find that it's not easy to remove the cake from the bundt pan because it's a very moist cake unless you butter and flour the pan well, so I prefer using a loaf pan and I think it looks beautiful. If you only want to make one loaf, you can halve the recipe.

Number Of Ingredients 8

2 1/2 cups (350g) all-purpose flour, sifted
2 1/2 teaspoons baking powder
4 large eggs
1 1/2 cups (300g) granulated sugar
1 cup (240 ml) canola or vegetable oil
1 1/4 cups (300 ml) freshly squeezed orange juice
Orange zest from 3-4 oranges ((I use the same amount of oranges I use for the juice))
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350°F/180°C. Grease a 12-cup (10-inch) Bundt pan or two standard loaf pans (either 9 x 13 inch pans or 8½ x 4½ inch pans for taller cakes) and set aside.
  • In a medium bowl whisk together flour and baking powder. Set aside.
  • In a mixer bowl fitted with whisk attachment, whisk together eggs and sugar on high speed until pale and fluffy, about 5 minutes. On low speed and with the mixer running, add oil slowly until combined. Add orange juice, zest, and vanilla extract and keep whisking slowly until combined. Add flour mixture and whisk just until combined. Don't overmix.
  • Pour batter into prepared pan/pans. Bake for 50-60 minutes for the bundt pan or 40-50 minutes for the loaves or until a toothpick inserted into the center of the cake comes out clean. If the top is browning quickly while baking, cover loosely with aluminum foil. Allow cake/cakes to cool completely on a wire rack.
  • Store cake in an airtight container in the refrigerator for up to 5 days. For the best moist texture, the cake is best served at room temperature. This cake freezes well so if you make two loaves, cover well, and freeze one of them in the freezer for up to 2 months, then thaw overnight in the fridge

Super moist and bursting with fresh orange flavor, this whole orange cake will become a new favorite. Rich, sweet and citrusy. Eat it unadorned or drizzle on an orange buttercream glaze to take it over the top.

2 large seedless oranges (about 184g each)
3/4 cups (170g) butter, cut in chunks (1 1/2 sticks)
1 1/4 cups (250g) granulated sugar ((use an extra 1/4 cup/50g if oranges aren't too sweet))
3 large eggs
2 cups (256g) all purpose flour Note 2
2 teaspoon baking powder
1/4 teaspoon salt (skip if using salted butter)
1 cup icing sugar (also called confectioners or powdered sugar)
2 tablespoon butter, softened
1 orange (use half an orange for fresh orange juice and zest) (other half for decoration )
1/4 teaspoon vanilla extract

Steps:

  • HEAT OVEN TO 350F/177C. Spray 9 inch (23cm) springform pan with oil. Note 1 for other pan options.
  • PREPARE ORANGES: Using a sharp knife, place orange on cutting board and slice off the thin top orange layer all around the orange. Try to get as little of the white pith layer as possible (leaving on some is fine - no need to obsess!). Then slice off the white pith layer and discard. Repeat with second orange. Cut oranges into quarters. Shortcut: If your oranges only have a very thin layer of pith, you can use the whole orange.
  • CREAM BUTTER, SUGAR, EGGS: Place butter, sugar and eggs in food processor bowl. Process for 2 minutes at high speed until fluffy and creamy. Scrape down sides of bowl once or twice. Scoop mixture into medium-large bowl.
  • GRIND ORANGES: Place oranges and orange peels in food processor. No need to clean out processor first. Process until finely blended, about 1 minute. Scrape orange mixture into bowl with butter mixture.
  • FINISH BATTER: Add flour mixture of flour and baking powder. Gently fold into wet mixture just until incorporated. Do NOT over mix or the cake will be dense. Pour batter into prepared pan. Tap pan on counter to level the batter evenly.
  • BAKE: for 45-50 minutes or until cake no longer jiggles when shaken and when cake tester or toothpick is inserted in center and comes out clean. Two 8" round pans will take less time, about 25-35 minutes. Timing depends on size of oranges (amount of liquid in cake) and your oven (all ovens are different and not perfectly accurate on temperatures). Remove from oven and let cool for 10 minutes before removing on pan. Cool completely on cooling rack before frosting.
  • MAKE FROSTING/GLAZE (OPTIONAL): While cake is baking, whisk icing/confectioner sugar, 1/2 of orange juice and orange zest with a fork in a small bowl. Add more orange juice until you get the consistency you like. Note 3 for traditional orange buttercream frosting.
  • DECORATE: Sprinkle orange cake with powdered icing sugar (through a sieve) if not using frosting. If using frosting/glaze, spread it on top of cake letting it slip down the sides if desired. Decorate cake with orange zest strips, orange slices, drained mandarin oranges, a little bit of zest or crushed nuts if you like.

1 cup sifted cake flour
1 1/4 cups sifted powdered sugar
5 egg yolks
1 tablespoon finely shredded orange rind
5 egg whites
1 teaspoon vanilla
1/2 teaspoon cream of tartar
1 cup orange juice
1 tablespoon honey
1/2 teaspoon almond extract

Steps:

  • Combine cake flour and 1/2 cup of the sifted powdered sugar, set aside.
  • In small mixer bowl beat egg yolks with electric mixer on high speed about 6 minutes or till thick and lemon coloured.
  • Gradually add remaining powdered sugar, beating constantly about 4 minutes.
  • Stir in orange peel.
  • Wash beaters thoroughly.
  • In large mixer bowl beat egg whites, vanilla, and cream of tartar till soft peaks form.
  • Gently fold yolk mixture into whites.
  • Sift flour mixture over egg mixture, 1/3 at a time and fold in gently.
  • Turn into ungreased 9 inch tube pan.
  • Bake in 325 degree oven about 55 minutes or till cake springs baack when lightly touched.
  • Invert cake in pan, cool thoroughly.
  • Remove from pan.
  • With a long tined fork, poke holes in top of cake at 1 inch intervals.
  • For syrup, in a saucepan combine orange juice and honey.
  • Simmer 5 minutes.
  • Remove from heat, stir in almond extract.
  • Spoon syrup evenly over cake, a small amount at a time, allowing cake to absorb syrup.
  • Chill, if desired.

1 pkg. (2-layer size) yellow cake mix
1 cup orange juice
3/4 cup MIRACLE WHIP Dressing
3 eggs
1/4 cup poppy seed
2 Tbsp. powdered sugar

Steps:

  • Heat oven to 350°F.
  • Beat all ingredients except sugar with mixer until blended.
  • Pour into greased and floured 10-inch tube pan or 12-cup fluted tube pan.
  • Bake 35 to 40 min. or until toothpick inserted near center comes out clean. Cool cake in pan 10 min. Loosen cake from sides of pan with knife. Invert onto wire rack; gently remove pan. Cool cake completely.
  • Sprinkle with powdered sugar just before serving.

10 eggs, separated
2 cups sugar
1 3/4 cups flour
1/4 cup cornflour
1/2 teaspoon salt
2 teaspoons baking powder
3 tablespoons oil
4 teaspoons orange juice
4 teaspoons orange zest

Steps:

  • Preheat the oven to 350°C.
  • Grease a large pan or two smaller ones and line with waxed paper. Grease the paper and coat with a corn flour and sugar mixture.
  • Whisk egg yolks, adding half the sugar gradually until light coloured and creamy.
  • Add oil, orange juice and orange zest and beat again.
  • Whisk egg whites until very light and forms soft peaks.
  • Add the other half of sugar gradually beating on medium to high speed.
  • Add corn flour, flour, salt and baking powder gradually to the egg yolks, beating all the while.
  • Gently fold in the egg whites with a rubber spatula until well mixed.
  • Spoon the mixture into the pan and bake for 35- 45 minutes until brown.
  • A toothpick inserted into the center should be clean and the midlle should spring back when touched.

225g baking spread
225g self-raising flour
1 level tsp baking powder
100g golden caster sugar
100g brown sugar
4 large eggs
finely grated zest of 2 oranges
150g butter, softened
300g icing sugar, sifted
finely grated zest of 2 oranges
25g caster sugar
juice of 2 oranges

Steps:

  • Heat oven to 180C/160C fan/gas 4. You will need 2 x 20cm loose-bottomed sandwich tins, greased and bases lined with baking parchment. Measure all the cake ingredients into a large bowl (reserve a little orange zest for decoration) and beat with a wooden spoon or electric hand mixer until combined and smooth.
  • Divide evenly between the 2 tins. Bake for 20-25 mins or until well risen, lightly golden and shrinking away from the sides of the tins. After 5 mins, remove from the tins and leave to cool on a wire rack.
  • To make the icing, put the butter and icing sugar into a bowl and mix with an electric hand mixer until light and fluffy. Stir in the orange zest.
  • Remove the paper from the cakes. Sit 1 cake upside down on a plate. Make the glaze by putting the caster sugar and orange juice into a saucepan, stirring over a low heat until the sugar has dissolved. Boil until reduced by half, then brush half on the upside-down cake, using a pastry brush. Spread half the butter icing over the glazed cake. Sit the other cake on top, brush with the remaining glaze, then spread with the remaining butter icing. Scatter with the reserved orange zest. The cake is best eaten on the day, but will keep for up to 3 days in a cool place. It freezes well un-iced or filled.
