FLUFFY EGGLESS PANCAKES
I poached this recipe from cooks.com (it was submitted by Dawn Linke, so props to her). I'm mainly posting it here since this is the recipe site I use the most and I want to add it to my cookbook, and I was most happy with this recipe vs. other eggless pancake recipes I've tried, so I figured it was worth sharing. :)

Steps:
- Combine dry ingredients and mix slightly.
- Add milk, oil, water, and vanilla. Whisk together until just combined. Be careful not to over mix - it should still be slightly lumpy. Set aside to rest for a few minutes.
- Melt the butter. When fully melted, add the butter to the batter.
- Take pan to stove and stir butter into batter.
- When pan is hot, with a measuring cup or ladle, pour 1/4 cup of batter into the skillet for each pancake.
- Cook until bubbles form on the surface. Carefully flip pancakes with turner/spatula and cook until golden brown.
- Note: This recipe also works well with whole wheat flour. Chopped fruit, nuts or chocolate chips can be added to batter before cooking for a unique treat.

EGGLESS CHOCOLATE COOKIES
A chewy, moist, chocolate cookie. Easily vegan with vegan margarine. Prep time includes chilling. If you make drop cookies, chilling is not necessary but recommended.

Steps:
- Cream margarine, oil, sugar and 1 T water until light and fluffy.
- Mix in remaining 2-3 T of water and beat well.
- Mix dry ingredients.
- Add to margarine mixture and mix until combined.
- Refrigerate for 30 minutes to an hour.
- Preheat oven 400°F (200°C) and grease a cookie sheet well.
- Make 24 balls (can also do drop cookies).
- Bake for 10 minutes, should be very puffy.
- Allow to cool for 5 minutes on baking sheet, they will fall considerably due to the lack of egg.

SUGAR COOKIES - NO BREAK, FAIL-SAFE AND FOOLPROOF
Are you tired of sugar cookie dough that will not roll out properly? Dough's too sticky? That won't cut-out properly? Are you tired of sugar cookies that are too fragile to decorate? If so, then this is the recipe for you. I have the world's worst luck with sugar cookies. 3 years in a row I had great intentions of making cutout sugar cookies for my Christmas baskets. Inevitably, I failed. One year, the dough was way too sticky. Another, the cookies just feel apart. Then I found this recipe. These cookies roll out and cut beautifully, they bake evenly, and they are sturdy enough to frost and decorate yet still taste heavenly. Even my 3yo could not mess these up! And yes, I checked this against all the other sugar cookie recipes on this site -- it's different. And delicious!

Steps:
- In a bowl, cream the butter and sugar.
- Beat in the eggs and vanilla.
- In a second bowl, combine the flour, baking powder and salt.
- Sift flour mixture into butter mixture 1 cup at a time and blend well.
- Roll dough into ball and chill 3-4 hours or overnight.
- When ready to prepare cookies, preheat oven to 350°.
- Roll out dough and cut into shapes.
- Brush with milk and sprinkle with colored sugar or candies if desired (or frost cookie once baked and cooled).
- Bake at 350° for 10-15 minutes.
- Remove cookies to a rack to cool completely.

BEST EVER FLUFFY SUGAR COOKIES
My friend would absolutely kill me if she knew I was putting this online. It took me 3 years to get this from her. They are so moist and almost cake like, I think this has to do with the amount of sugar. I dont even like sugar cookies but these are my second favorite cookie (my first is always the pumpkin chip cookies that my grandmother made).

Steps:
- Cream butter and sugar in a large mixing bowl. Add eggs and extracts; mix well. In a separate bowl combine flour, tartar, salt, baking soda and nutmeg. Gradually add flour mixture to wet ingredients blending thoroughly. Place dough in greased bowl and refrigerate overnight. Preheat oven to 350 degrees. Roll out dough on floured surface, cut with cookie cutters and bake on greased cookie sheet for 10-15 minutes or until golden brown on bottom.

These are a classic of my Gram B's. I'm pretty sure I'm the only one in the family that has the recipe & makes them. It would be a shame to let it end with me!

Steps:
- Cream together butter, sugars, egg yolk and sour milk (I add 1 tbsp of sour cream to milk and whisk).
- Mix dry ingredients.
- Mix dry ingredients into creamed butter mixture.
- Fold stiffened egg white into batter.
- Drop batter onto cookie sheets 1 inch apart. sprinkle with additional sugar or cinnamon-sugar mixture, if desired.
- Bake at 375°F for 8-10 minutes.

Food.com wasn't letting me import this recipe. This is my spin on the original. *** REMINDER the best mug cookies are recipes that have eggs in it! So don't expect heaven in a mug. BUT if you ever find yourself craving this but are out of eggs then this is your recipe! Place butter and milk in a coffee cup or mug. Microwave for 30 seconds to melt the butter and warm the milk. Stir in brown sugar and vanilla extract then mix in flour, chocolate chips and pinch of salt. Microwave for about 1 minute on HIGH. Allow to cool for 5 minutes before serving. This is the BEST thing ever. I'm always craving something sweet and baking a full sheet of cookies and/or a cake is too much. This is my favorite recipe because it has no egg! It's also pretty moist which I personally like but if it is too gooey try adding a few seconds until you find what works best for you! I use large oversized mugs so I can add a scoop of Buttercrunch Blue Bell Ice Cream.. Yummmm!
