1 cup granulated sugar
1 cup light brown sugar
1 1/4 cup vegetable oil
4 eggs
1 tablespoon vanilla
1 tablespoon ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
2 cups flour
2 3/4 cups grated carrots, approximately 5
1 (8 ounce) can crushed pineapple, drained
3/4 cup chopped walnuts
1/2 cup raisins (regular or golden)
1 cup sweetened flaked coconut
1 (8 ounce) block cream cheese, room temperature
1/2 cup butter, room temperature
5 cups powdered sugar
optional - 1 teaspoon vanilla extract OR 1/2 teaspoon almond extract

Steps:

  • Preheat oven to 350°F. Coat a 9×13 pan with nonstick spray. Set aside.
  • In the bowl of your stand mixer fitted with the paddle attachment mix both sugars, vegetable oil, eggs and vanilla together on medium speed until smooth, 1 minute.
  • Add in the cinnamon, baking powder, baking soda, and salt and continue mixing for 30 seconds, scraping the sides of the bowl as necessary.
  • Mix in the flour until just combined.
  • Add in the carrots, pineapple, walnuts, coconut, and raisins and stir until evenly incorporated.
  • Pour batter into the prepared pan.
  • Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely.

1 1/4 cups all-purpose flour
1 1/4 cups whole wheat pastry flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon allspice
1/2 teaspoon ground ginger
Fine salt
2 large eggs
1 egg white
1 cup packed light brown sugar
3/4 cup granulated sugar
1/2 cup canned crushed pineapple in fruit juice
1/2 cup vegetable oil
5 medium carrots, peeled and grated (about 3 cups)
Light Cream Cheese Frosting, recipe follows
8 ounces reduced-fat cream cheese, at room temperature
3/4 cup powdered sugar
1 teaspoon fresh lemon zest

Steps:

  • Preheat the oven to 350 degrees F. Spray a 13-by-9-inch metal baking pan with nonstick spray. Line the bottom with parchment paper.
  • Whisk together the all-purpose flour, pastry flour, baking powder, cinnamon, baking soda, allspice, ginger and 1/2 teaspoon salt in a medium bowl.
  • In a large mixing bowl, add the eggs, egg white, brown sugar and granulated sugar and beat until light and creamy, about 3 minutes. Add the pineapple and vegetable oil and mix until thoroughly incorporated into the batter, about another minute.
  • Add the dry ingredients in thirds and mix until combined, 1 to 2 minutes. Add the carrots and mix until just combined.
  • Pour the batter into the prepared baking pan and bake for 35 minutes. Let the cake cool completely before flipping out of the pan and removing the parchment paper. Top with the cream cheese frosting.
  • Beat the cream cheese, powdered sugar and lemon zest together until light and fluffy. Frost the carrot cake.

1/4 cup melted unsalted butter, cooled, plus more for buttering pan
1 cup crushed pineapple, drained
3 large eggs
1/2 cup canola oil
2 teaspoons vanilla extract
1 pound carrots, peeled and grated on the small holes of the grater (about 3 cups, lightly packed)
2 teaspoons freshly grated ginger
2 cups all-purpose flour
1 1/2 cups organic cane sugar
1/2 cup lightly packed brown muscavado sugar
2 teaspoons baking soda
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/8 teaspoon freshly grated nutmeg
1 teaspoon salt
1/3 cup finely diced crystallized ginger
3/4 cup coarsely chopped toasted pecans
Cream Cheese Marshmallow Frosting, recipe follows
3 tablespoons water
1/2 cup plus 2 tablespoons light corn syrup
1/3 cup plus 2 tablespoon granulated sugar
1/2 vanilla bean, seeds scraped and reserved
2 large egg whites
Pinch salt
Pinch cream of tartar
8 ounces cream cheese, slightly softened
1 stick unsalted butter, slightly softened
1 pound organic powdered sugar, sifted twice
2 cups Fluff
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Butter and flour 2 (8-inch) round cake pans and line the bottoms with parchment paper. Butter the parchment well too.
  • Pulse the pineapple in a food processor fitted with a metal blade until it is finely chopped. Put the eggs in a bowl of a stand mixer fitted with the paddle attachment. Beat the eggs for 10 seconds. Add the oil, 1/4 cup melted butter, vanilla, carrots, chopped pineapple and grated fresh ginger and mix until combined.
  • Whisk together the flour, sugars, baking soda, cinnamon, ginger, nutmeg and salt in a bowl until combined. Add the wet ingredients and beat on low speed just until combined. Remove and fold in the crystallized ginger and pecans. Divide the batter between the 2 pans.
  • Bake until the tops are a very golden brown and a tester inserted in the center comes out with a few moist crumbs, 40 to 55 minutes. Let the cakes cool in the pans for 15 minutes, then invert them onto a wire rack and let them cool completely. Remove the parchment from the bottoms of each cake. Cool completely before frosting.
  • In a small saucepan fitted with a candy thermometer, bring the water, corn syrup, 1/3 cup plus 1 tablespoon sugar and vanilla bean to 246 degrees F. Before adding the syrup to the egg whites below, carefully remove the vanilla bean.
  • In the meantime, in a completely clean, dry mixing bowl of an electric mixer fitted with the whisk attachment, whip the egg whites, salt and cream of tartar until creamy and foamy, about 2 minutes. Still whisking, sprinkle in the remaining 1 tablespoon of sugar and continue to whisk until the whites hold very soft peaks, about 2 minutes. While mixing on slow speed, carefully drizzle in the hot syrup. Turn the mixer to high and whisk until thick, fluffy and just warm, about 7 minutes. Turn the mixer to low and whisk in the reserved vanilla seeds. Scrape the fluff into a bowl. Wash the bowl and whisk and return them to the machine.
  • Combine the cream cheese and butter in the bowl of the mixer and mix until light and fluffy. Add the powdered sugar and mix on low until combined. Increase the speed and whip until light and fluffy. Add about 2 cups of Fluff and the vanilla and whip until combined. Refrigerate for 15 minutes if too soft to use as frosting.

I tried this recipe from a site and changed only one thing (I added 2 teaspoons cinnamon instead of the recommended 1 teaspoon orange extract) and it turned out very fluffy and moist. It also doesn't use butter or oil so its light and delicious. The frosting also doesn't use any butter so its light and delicious.

1 tablespoon butter
5 eggs, whites and yolks separated
1 cup sugar
1 lemon, juice and rind of, grated
2 teaspoons cinnamon
1 pinch salt
12 ounces tender carrots, finely grated
3/4 cup cornstarch
4 ounces cream cheese
3/4 cup whipping cream
1/2 cup powdered sugar

Steps:

  • Preheat oven to 370 F (190c).
  • Grease a 9 inch pan.
  • Beat egg whites until stiff and then slowly pour in 1/2 cup of sugar, beating constantly.
  • In another bowl, beat the egg yolks and the remaining sugar then add lemon rind, lemon juice, salt and cinnamon, beating continuously.
  • Add in the carrots, corn starch and mix.
  • Add the egg whites to the mix slowly and small amounts at a time mixing continuously in a top to bottom rotating movement.
  • Pour the batter into the pan.
  • Level the surface with a spatula (do not pressure it though and move very lightly).
  • Bake for 35-40 minutes or until toothpick inserted comes out clean and cake is golden.
  • For frosting:.
  • Whip the whipping cream until it thickens.
  • In a separate bowl, mix the sugar and cheese until smooth.
  • Add in the whipped cream.
  • Frost cooled cake.

I got this from an article (and I can't remember where I read it). It was about a family who had family reunions every year and they put together their favourite recipes. This was one of them which was in their family for many years. After you taste it, you'll know why it's a favourite! If you want to add a cream cheese icing, do it when the cake has completely cooled. I have tried many recipes but haven't found one that I really like yet so I serve it plain and it still disappears quickly!

2 1/2 cups all-purpose flour
2 cups sugar
1 1/4 cups salad oil
1/3 cup milk
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
4 eggs
3 cups finely grated carrots, with juice squeezed out

Steps:

  • Preheat oven to 325F.
  • Grease a 13x10x2" baking pan.
  • To squeeze the juice out of the carrots, I put them in a clean tea towel, roll it up and twist, twist, twist, until the juice comes out.
  • Put all ingredients including the carrots in a big mixing bowl and mix it all up well.
  • Pour into baking dish.
  • Bake for 1 hour 10 minutes.
  • Cool cake in the pan.
  • DON'T INVERT!
  • Cut pieces while still in pan but after it has cooled.

  • Cream Cheese Frosting: Mix cream cheese and butter; beat until smooth.

  • Stir in vanilla.
  • Spread cream cheese frosting on top of cooled cake.
