FLUFFY WHITE BREAD (BREAD MACHINE)
My husband loves Wonderbread, but we were looking for something a little healthier. After trial and error, I came up with this recipe, which is a variation of a recipe that I found on a flour bag. It's soft, fluffy, light and most importantly, much healthier than store-bought bread! Don't omit the gluten flour - that's what gives it its fluffiness! This can be done in either the bread machine or by hand. I do a combination of both - knead the dough and let rise in the bread machine, and then take it out, put it into a greased loaf pan and let rise the second time, then into the oven.

Steps:
- Proof yeast in water.
- For bread machine - place all ingredients in order directed by your bread machine and process.
- By hand - combine all and knead until elastic, about 10 minutes. Place in a greased bowl, cover and let rise for an hour. Punch down. Place in a greased loaf pan, cover and let rise another 20 minutes. Bake at 350 for 20 minutes or so.

Steps:
- Place ingredients in bread machine pan as suggested by manufacturer.
- Choose dough cycle and start machine.
- Upon completion of the dough cycle, remove dough.
- Form rolls, place on a greased baking sheet.
- Cover with a towel and let rise in a warm, draft-free location for 30 to 40 minutes.
- Bake in a preheated 400 degree oven for 12-15 minutes.

Steps:
- In bread machine pan, put all ingredients in order suggested by manufacturer.
- Select dough setting.
- When cycle is completed, turn dough onto a lightly floured surface.
- Divide dough into 24 portions.
- Shape dough into balls.
- Place in a greased 13 inch by 9 inch baking pan.
- Cover and let rise in a warm place for 30-45 minutes.
- Bake at 350 degrees for 13-16 minutes or until golden brown.
FLUFFY BREAD MACHINE ROLLS
Easy to make fluffy rolls made in the bread machine. These dinner rolls taste like Hawaiian sweet rolls and are delicious with a little butter on top! Made with pantry staples for simple bread making!

- Place all the ingredients into the pan of your bread machine in the order that your machine manufacturer recommends. Mine recommends them in order that I listed in ingredients. Set on DOUGH cycle and press START.
- When machine is finished remove dough from machine pan and place on floured surface, lightly deflating it with your hands. Divide the dough into 16 equal size pieces and and roll into round balls.
- Spray a 13x9 pan with nonstick spray and place the dough balls onto the pan, placing them directly next to each other. Cover pan with cloth towel and let rise for 60 minutes. During this time the rolls will almost double in size.
- Preheat oven to 350 degrees. Bake rolls for 16-18 minutes or until golden brown on top. Remove from oven and allow to cool down to touch.
- When serving the rolls, brush a little bit of butter on top of each one to give them a glossy finish.

- Put ingredients in order as listed in ingredients.
- Select dough cycle press start.
- Put 1Tbl Olive Oil in bowl and cover bottom and sides of bowl.
- Put dough into Olive Oil bowl when dough cycle is complete.

- Add water, 3 eggs, butter, salt, flour, 2 Tablespoons sugar and yeast to bread machine pan in the order suggested by manufacturer.

SOFTEST EVER BREAD MACHINE BREAD
My sister gave me this recipe soon after I brought home my bread machine. It's a staple in our house. Soft and fluffy and great for sandwiches or just to eat fresh out of the oven! UPDATE 3/25/2005 - I made this using the dough cycle of my bread maker today but baked it in the oven and it turned out perfectly! I baked it at 350°F for 25-30 minutes.
