- Preheat oven to 350°F. Lightly grease 9×5-inch loaf pan with non-stick cooking spray and set aside.
- Add all ingredients to a blender, in the order listed, and blend until smooth and well combined. Pour batter into prepared loaf pan. (Garnish the top of the batter with thinly sliced banana, if desired) Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let loaf cool completely in loaf pan. Store bread in an airtight container on the counter for 2-3 days or in the refrigerator for up to a week.
HEALTHY BANANA OATMEAL BREAD

- Preheat oven to 350°F. Line an 8 x 4 inch loaf pan with parchment paper.
- Add bananas, eggs, oats and baking soda into a blender (in that order). If using maple syrup, also add it in at this time. Blend on high speed until you have a smooth batter. It is okay if you can still see the oats, but they should be ground up enough to look like coarse flour. If adding mix-ins like chocolate chips or chopped nuts, stir them into the batter.
- Pour batter into prepared pan. Bake for about 35-45 minutes or until toothpick inserted comes out mostly clean and when you gently press on the surface of the bread, it bounces back. Let bread cool in pan before slicing. Bread can be eaten as is or toasted. Uneaten bread should be stored in an airtight container in the fridge or freezer.

Steps:
- Preheat the oven to 350 degrees F and line a 9" x 5" loaf pan with parchment paper.
- Place the rolled oats in a blender and blend on medium speed until a flour forms (this only takes about 20 to 30 seconds. Remember, it is fine if the flour is somewhat gritty). Transfer the oat flour to a mixing bowl.
- Add the coconut sugar, baking soda, sea salt and cinnamon and stir together until combined.
- Mash the bananas in a separate mixing bowl then whisk in the eggs and vanilla extract.
- Stir the dry ingredients into the bowl with the wet ingredients. Add in the lime juice and stir to incorporate.
- Transfer the batter to the parchment-lined loaf pan and smooth into an even layer. If desired, sprinkle some whole quick oats on top for looksies.
- Bake for 40 to 45 minutes, until banana bread has risen substantially and the top appears firm.
- Remove from the oven and allow bread to cool at least 30 minutes. Tug on the edges of the parchment paper to lift the loaf out of the pan and place it on a cutting board. Cut thick slices and enjoy!
