Time 1h45m

Yield 12

Number Of Ingredients 4

7 ounces bittersweet chocolate, chopped
⅞ cup margarine
⅞ cup white sugar, separated
6 eggs, separated

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Melt chocolate and margarine together in a saucepan over low heat. Remove from heat and cool to room temperature.
  • Beat half of the sugar and egg yolks together in a large bowl with an electric mixer until light and fluffy. Stir in chocolate mixture until just combined.
  • Beat egg whites in a separate bowl with an electric mixer until foamy. Gradually add remaining sugar, continuing to beat until stiff peaks form.
  • Spoon 1/3 of the chocolate mixture onto beaten egg whites using a rubber spatula. Gently run spatula around the edges of the mixture lifting the bottom up and over the center, repeating until well incorporated. Add remaining chocolate mixture, folding just until batter is smooth. Pour 3/4 of the batter into a 9-inch square pan.
  • Bake in the preheated oven until edges are puffed and surface is firm, about 25 minutes. Set pan on a wire rack and allow cake to cool to room temperature, about 30 minutes. Spread remaining batter over cake. Refrigerate until completely chilled, at least 30 minutes more.

PASSOVER CHOCOLATE MOUSSE CAKE

Passover Chocolate Mousse Cake image

This flourless chocolate cake for Passover has just four ingredients-dark chocolate, sugar, eggs, and butter-and is incredibly easy to whip up.

Provided by Benedetta Jasmine Guetta

Yield Makes one 9-inch cake

Number Of Ingredients 5

10.5 oz. (300 g) dark chocolate, preferably 60 to 70% cacao
6 Tbsp. (90 g) unsalted butter, margarine, or dairy-free butter substitute
6 large (300 g) eggs, separated
¼ cup plus 3 Tbsp. (90 g) sugar
Chocolate shavings, for decoration (optional)

Steps:

  • Preheat the oven to 350°F (180°C). Line the bottom of a 9-inch (23-cm) springform pan with parchment paper.
  • Break up or chop the chocolate and place it in a heatproof bowl with the butter or margarine. Set the bowl over a saucepan of barely simmering water and allow the chocolate and butter to melt, stirring occasionally. When everything has melted, remove from the heat and let cool to room temperature.
  • In the meantime, put the egg yolks in a large bowl. In the bowl of a stand mixer fitted with the whisk attachment, or in a large bowl, using a handheld mixer, whip the egg whites to very firm peaks, about 5 minutes.
  • When the melted chocolate mixture has cooled, add it to the egg yolks, along with the sugar, and whisk well.
  • Using a rubber spatula, stir about one-third or less of the egg whites into the chocolate mixture to lighten it. Carefully spoon another third of the egg whites on top of the chocolate mixture and gently fold them in. Add the remaining whites and fold them in just until incorporated.
  • Transfer half of the batter to another bowl and set aside in the refrigerator.
  • Pour the remaining batter into the prepared pan and bake for 20 minutes: it will turn into a soft, moist cake. Remove from the oven and let cool completely in the pan.
  • When the cake has reached room temperature, pour the reserved chocolate mousse on top of it. Refrigerate the mousse cake, uncovered, for at least 2 hours, or overnight, until set.
  • When you're ready to serve, run a sharp thin-bladed knife around the cake's edges and then remove the sides of the springform pan. Peel the paper from the bottom, and place the cake on a serving platter. Serve cold, decorated with chocolate shavings, if desired.
  • Leftover cake will keep in the refrigerator, wrapped in aluminum foil, for a couple of days.

  • In a medium sized (at least a quart) microwave safe bowl, melt the butter and chocolate together in the microwave in 30 second increments, stirring with a fork after each until it is melted. (To make sure not to burn the chocolate, I like to stop when the chocolate still isn't 100% melted because the residual heat will melt it). Stir in the espresso powder. It's okay if it doesn't dissolve totally.
  • Separate the eggs. (I separate the eggs in a small bowl first and then transfer then the whites to big bowl one at a time, and the yolks to another to ensure that all of my whites are yolk-free. The smallest amount of yolk mixed into the whites will keep the whites from whipping up.)

  • Begin by making the chocolate sponge in a cake tin (preferably a springform one, 15cm diameter). Cut a circle of greaseproof paper to cover the tin's base, and lightly butter the paper on both sides.
  • Separate the eggs – yolks in one bowl, whites in another. In a food mixer on full power, whisk the egg whites to firm peaks, adding the sugar little by little.
  • Take a third of the whisked egg whites and whisk them into the egg yolks. Once incorporated, gently fold in the remaining whisked whites. Now sift and fold in the cocoa powder.
  • Pour the mixture into the prepared cake tin and spread it evenly with a spatula or palette knife. Bake for 18–20 minutes, or until a skewer inserted into the middle comes out clean.
  • Allow the sponge to cool before removing it from the tin. Leave it to cool on a wire rack.
  • Clean the cake tin. Carefully remove the paper from the base of the sponge. Now put the cooled sponge back in the ring, ready to have the chocolate mousse mixture poured over it.
  • Chop the chocolate into bite-sized pieces and melt them in a large heatproof bowl in a saucepan of gently simmering water. The melted chocolate should be hot to the touch to ensure it is well incorporated in the next stage.
  • Sift the cocoa powder into a separate bowl and whisk it with the egg yolk and hot water. Pour this onto the melted chocolate but do not mix.
  • Next, whisk the egg whites and sugar to medium peaks. Briskly whisk about a third of the whisked egg whites into the melted chocolate, and then fold in the remaining egg whites.
