Sinful Chocolate Biscotti image

A brownie-like biscotti that tastes great with a cup of coffee. Drizzle with more chocolate if desired. Especially popular in the winter time when coffee and chocolate taste so much better. Enjoy!

1 tablespoon vanilla extract
1 tablespoon instant espresso powder
2 ½ cups all-purpose flour
¾ cup unsweetened cocoa powder
1 tablespoon baking powder
½ teaspoon salt
1 cup mini chocolate chips
1 cup white sugar
3 eggs
½ cup vegetable oil

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line 2 baking sheets with parchment paper.
  • Combine vanilla extract and espresso powder in a small bowl; mix until espresso powder is dissolved.
  • Sift flour, cocoa powder, baking powder, and salt into a bowl; mix in chocolate chips.
  • Whisk vanilla mixture, sugar, eggs, and oil together in a large bowl. Add flour mixture; stir, by hand if needed, until dough comes together and is thick and stiff.
  • Divide dough into 2 equal pieces and place onto the baking sheets. Shape each piece into a log as long as the baking sheet; press down with wet hands to about 1/2 inch thickness.
  • Bake in the preheated oven until firm, about 25 minutes. Remove from oven and cool until easily handled, about 5 minutes.
  • Move cooled logs to a cutting board and slice into 1/2-inch long slices with a serrated knife. Return the slices to the baking sheets, placing them on their sides.
  • Bake until dry, about 6 minutes per side. Remove from oven and let cool until hardened on wire racks.

Healthy Double Chocolate Biscotti image

These biscotti are perfect for any chocolate lover! They're crisp, crunchy, and completely packed with decadent dark chocolate flavor (similar to 72% dark chocolate!). These cookies taste incredible on their own, but they're also fun to dip in coffee, tea, or even hot chocolate for an extra chocolaty treat! Leftovers should keep for at least two weeks if stored in an airtight container, and they also freeze (and ship!) really well. This recipe is easily doubled to make more, too!

¾ cup (90g) white whole wheat flour or gluten-free* flour
½ cup (40g) unsweetened cocoa powder
½ tsp baking powder
1 large egg, room temperature
1 tsp vanilla extract
½ cup (96g) coconut sugar
2 tbsp (28g) finely diced dark chocolate ((see Notes!))

Steps:

  • Preheat the oven to 350°F, and line a baking sheet with a silicone baking mat or parchment paper.
  • In a medium bowl, whisk together the flour, cocoa powder, baking powder. In a separate bowl, whisk together the egg and vanilla extract. Stir in the coconut sugar. Add in the flour mixture, stirring until fully incorporated. Fold in the diced dark chocolate.
  • Transfer the cookie dough to the prepared baking sheet, and shape into a long and skinny rectangle that's 2 ¼" wide and ¾" tall using your hands or a spatula. (If the cookie dough sticks to your hands, rub them with a little neutral-tasting oil first!)
  • Bake at 350°F for 33-35 minutes. (The outside should be very dry and crusty!) Let the rectangle of baked cookie dough cool on the baking sheet for 10 minutes (no more and no less!).
  • Transfer the rectangle of baked cookie dough to a cutting board. Using a sharp serrated knife, cut the rectangle into ½"-thick strips (no wider!), working from one short end of the rectangle to the other. (Both diagonal strips and horizontal strips will work!) You should end up with cookies that are ½" thick, ¾" tall, and 2 ¼"+ wide.
  • Place the cookies onto the original baking sheet with one cut side facing down and the other cut side facing up. Bake at 350°F, flipping the cookies halfway through, for 6-8 minutes (for centers with just a bit of "give") or 12-16 minutes (for centers that are completely hard and dry). Cool completely to room temperature on the baking sheet.

3 large eggs at room temperature
1 cup sugar
¼ cup light brown sugar
3 Tbsp vegetable oil
1 ¾ cup brown rice flour
1 cup regular cocoa powder, packed
¼ tsp fine salt
¼ tsp ground black pepper
⅒ tsp ground cloves
¾ cup shelled pistachios
½ cup dark chocolate chips or chunks

Steps:

  • Preheat oven to 350 ?F. Line a baking tray with parchment paper.
  • With electric beaters or a standing mixer fitted with the whip attachment, whip eggs, sugars and vegetable oil until frothy and pale, about 4 minutes. Sift rice flour, cocoa powder, salt, pepper and cloves and stir into egg mixture by hand. Fold in pistachios and chocolate chips or chunks.
  • On a work surface dusted with rice flour, turn out dough and shape into 2 logs, each about 12 inches long. Place onto prepared baking tray and press flat, so each log is about 2 1/2 inches wide. Bake for 30 minutes, until surface of biscotti logs crack a bit. Let cool for 20 minutes. Reduce oven temperature to 325 ?F.
  • Remove biscotti logs from tray and slice on an angle into 3/4 inch biscotti. Return to baking tray and bake for 12 minutes. Remove pan, flip biscotti over and bake another 12 minutes. Let cool completely before packing in an airtight container.

VANILLA ALMOND BISCOTTI - NO SUGAR ADDED

1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup butter, softened
1/2 cup Splenda granular
2 eggs, large
1 teaspoon vanilla extract
1/2 cup almonds, sliced, roughly chopped (not too small)
2 tablespoons milk

Steps:

  • Preheat oven to 350.
  • Combine dry ingredients and set aside.
  • Use mixer to beat butter and splenda till light.
  • Add eggs one at a time, beating well after each.
  • Add vanilla, stir.
  • Remove bowl from mixer and stir in 1/2 of the flour mixture.
  • Stir in milk.
  • Add remaining flour mixture and combine well.
  • Add chopped almonds and mix inches.
  • Make into biscotti loaf or use the Pipe-N-Bake Biscotti pan like we do.
  • Bake for 25-30 minutes.
  • We like our biscotti soft, but if you don't you can put biscotti on a cookie sheet and return to the oven for 10 more minutes to crisp them.
  • Enjoy!

½ cup water
¼ teaspoon salt
¾ cup white sugar
18 (1 ounce) squares bittersweet chocolate
1 cup unsalted butter
6 eggs

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease one 10 inch round cake pan and set aside.
  • In a small saucepan over medium heat combine the water, salt and sugar. Stir until completely dissolved and set aside.
  • Either in the top half of a double boiler or in a microwave oven melt the bittersweet chocolate. Pour the chocolate into the bowl of an electric mixer.
  • Cut the butter into pieces and beat the butter into the chocolate, 1 piece at a time. Beat in the hot sugar-water. Slowly beat in the eggs, one at a time.
  • Pour the batter into the prepared pan. Have a pan larger than the cake pan ready, put the cake pan in the larger pan and fill the pan with boiling water halfway up the sides of the cake pan.
  • Bake cake in the water bath at 300 degrees F (150 degrees C) for 45 minutes. The center will still look wet. Chill cake overnight in the pan. To unmold, dip the bottom of the cake pan in hot water for 10 seconds and invert onto a serving plate.

  • In a large bowl, combine flour, unsweetened cocoa powder, salt, and erythritol or cane sugar. Add in eggs, vanilla extract, and applesauce and stir until completely combined and the batter is thick and uniform. This may take a few minutes, so be patient and gentle, as you do not want to over-stir the batter. If the batter is too dry, add in more applesauce one tablespoon at a time.
  • Scrape the batter onto prepared baking sheet and, after wetting your hands slightly, form it into a long log, approximately 22 inches long, 4 ½ inches wide, and ¾ inch tall. (See post body for picture.) Bake in the oven at 375°F for about 25-30 minutes, or until it’s slightly browned around the edges and firm to the touch.
  • Let cool for about 10 minutes, and use a sharp knife to gently cut the loaf into ½ inch slices. I made 22 biscotti from this recipe. Lay the biscotti evenly on the baking sheet. Bake in the oven once more at 375°F for approximately 3-4 minutes on each side. Let cool completely until firm. Brew up some coffee and devour.
