2 cups dry breadcrumbs, preferably made from homemade brioche bread
8 tablespoons unsalted butter, melted
1 (10 ounce) package frozen chopped spinach
3 (8 ounce) packages cream cheese, softened
1/4 cup whipping cream
1/2 teaspoon salt
1/2 teaspoon prepared Dijon mustard
4 eggs
1 1/4 cups freshly grated gruyere cheese, about 4 ounces
1/4 cup freshly grated parmesan cheese
1/4 teaspoon paprika
1/8 teaspoon cayenne
1/4 cup chopped scallion

Steps:

  • Preheat oven to 350°F
  • Combine the bread crumbs and melted butter and press on the bottom and sides of a buttered 9-inch spring-form pan. Bake for 8 to 12 minutes, or until very lightly browned. Set aside to cool.
  • Cook the spinach according to package directions, place in a strainer, and press out all the liquid. In a large bowl, beat together the cream cheese, cream, salt, and mustard until smooth. Add the eggs, one at a time, and beat well after each addition. Add the spinach, grated cheeses, paprika, cayenne, and scallions. Beat on low speed until well combined.
  • Pour the mixture into the prepared crust and bake for approximately 1 hour and 5 minutes, or until the filling is set and browned. Cool for 15 minutes on a wire rack. Serve with sliced fresh fruit and a green salad with vinaigrette dressing.

I have been making this recipe for my husband's birthday dinner for the last 15 years. This recipe truly stands on it's own merit and I don't recommend any changes. I originally got this recipe from a cookbook but have modified it over the years to make it simpler.

10 ounces frozen spinach
5 tablespoons butter (divided)
1 (15 ounce) can tomato sauce
2 garlic cloves, minced
1/4 cup dry white wine
1/4 cup water
1 tablespoon tomato paste
1/2 teaspoon sugar
3/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup all-purpose flour
4 -6 veal cutlets
1 tablespoon olive oil
4 -6 slices mozzarella cheese

Steps:

  • Cook spinach according to package directions.
  • Drain well and toss with 1 tablespoon of butter; set aside.
  • Heat 2 tablespoons butter in medium sauce pan over medium heat.
  • Add minced garlic and cook for 30 seconds.
  • Add tomato sauce, wine, water, tomato paste, sugar, 1/2 tsp of the salt and 1/8 tsp of the pepper.
  • Bring to a boil then reduce heat to medium-low.
  • Simmer uncovered for 10 minutes, stirring occasionally.
  • Remove from heat and set aside.
  • Mix flour and remaining salt and pepper in a large zip-top bag.
  • Pound veal until 1/4 inch thick.
  • Shake one piece of veal at a time in seasoned flour in bag to coat evenly.
  • Heat oil and 2 tablespoons of butter in large skillet over medium heat.
  • Add veal to skillet; cook turning over once until light brown, 2 to 3 minutes per side.
  • Remove from heat.
  • Top veal with evenly with reserved spinach, (a couple of tablespoons on each -- you won't use it all).
  • Top each with a slice of cheese.
  • Add sauce to skillet; do not let sauce cover cheese.
  • Lift edges of veal to allow sauce to flow under.
  • Heat at medium high heat, until sauce is bubbly.
  • Reduce heat to medium low.
  • Simmer covered 8 minutes.
  • Serve immediately.
  • (I serve this over cooked angel hair pasta).

Easy dinner that my husband even enjoys (and he DOESN'T like fish!) Maybe the cheese covers the fish taste a bit.

3 tablespoons butter
3 tablespoons flour
hot sauce (to taste)
salt and pepper (to taste)
1 cup milk
1/2 cup grated sharp cheddar cheese (I love cheese, so I usually add a little more!)
1 (10 ounce) package frozen chopped spinach, cooked and drained
1 (16 ounce) package frozen sole or 1 (16 ounce) package flounder fillets, thawed and cut in half

Steps:

  • Cook butter, flour, hot sauce and spices in large bowl in microwave for 2 minutes, stirring once.
  • Add milk slowly, stir, then cook on high 2 minutes, stirring after 1 minute.
  • When sauce is thick& smooth add cheese and stir till melted.
  • Place spinach in 9" pie plate and stir in 1/2 C sauce.
  • spread evenly on bottom.
  • Arrange fish over this, cover with wax paper and microwave on high 2 minutes.
  • Spoon remaining sauce over fish, sprinkle with paprika, and cook 2 more minutes or till fish is cooked through.

50g salted butter
50g light muscovado sugar
50g golden syrup
50g plain flour
50g glacé cherries, chopped
75g flaked almonds
50g pistachios, chopped
2 oranges, zested
175g dark chocolate

Steps:

  • Heat oven to 180C/160C/gas 4. Line two baking sheets with baking parchment.Melt the butter, sugar and golden syrup in a small saucepan over a low heat, stirring frequently. Remove from the heat and whisk in the flour then add the cherries, flaked almonds, pistachios and orange zest.
  • Scoop 10 flat tbsp of the mixture onto the baking sheets, leaving room for them to spread. You will need to do these in batches. Bake for 10 mins until golden. Leave to cool for 2 mins until firm enough to lift onto a wire rack. Cool completely. Repeat with the remaining mixture.
  • Melt the chocolate in a bowl over a simmering saucepan of water or in the microwave in 30 second bursts. Turn the florentines over on the wire rack. Spoon chocolate onto the base of each florentine and gently spread to the edges. When the chocolate is firm enough to hold its shape, use a fork to draw wavy lines across the chocolate. Leave to set and then store in an airtight container.

1 cup plain white flour (sifted)
4 tablespoons extra virgin olive oil
1 cup milk
1 orange, rind of
1/2 teaspoon powdered saffron
1/2 cup sugar (or to taste)
2 eggs
2 teaspoons baking powder
1/4 cup icing sugar
1/4 teaspoon salt

Steps:

  • Preheat oven to 150°C.
  • Put the sifted flour, baking powder, oil, milk, grated orange rind, saffron, sugar, eggs, and a pinch of salt into a mixing bowl and beat together thoroughly until all the lumps are gone and the batter is smooth and thick.
  • Grease a shallow rectangular baking pan and pour in the mixture.
  • Bake for half an hour.
  • Sprinkle plenty of icing sugar on top.
  • If you prefer it sweeter, you can slice the cake in two (horizontally!) and fill it with whatever you like (whipped cream, chocolate icing, etc).
