BASIC FLAXSEED BREAD (FLAX SEED BREAD)

Basic Flaxseed Bread (Flax Seed Bread) image

From Fleischmann's Yeast "Bake for the Cure" recipes. What I like about this recipe is that it can be made into a French Bread-like loaf. Should you want to use regular active dry yeast, proof first and adjust rise times. (Note: I found with the fast rising yeast it took an exhorbitant amount of time to achieve the correct amount of rise. I prefer using regular active dry yeast with the proofing method in warm water and a normal rise time.)

Categories     Yeast Breads

Time 1h30m

Yield 2 loaves

Number Of Ingredients 8

1 1/2 cups whole wheat flour
1/2 cup all-purpose flour
1 cup flax seed meal
1 (1/4 ounce) package fast rising yeast (or active dry but see note in description)
3 tablespoons honey
1 teaspoon salt
1 tablespoon olive oil
1 1/4 cups warm water

Steps:

  • In a large bowl, mix dry ingredients. Stir in the warm water, honey and olive oil until it forms soft dough. Turn out dough onto a floured surface, add more flour if dough is too sticky and knead dough for 5 minutes until smooth and elastic. Cover and let rise for 20 minutes in a warm place.
  • On a floured surface cut dough in half. Roll dough to form a French bread like loaf. Place on a baking sheet lined with nonstick liner. Lightly flour the bottom of loaf and place on liner. Cover again with clean towel and let rise for about 30 minutes. I found this took much longer for me.
  • Preheat oven to 375 degrees F. Bake loaves for 30 minutes or until sounds hollow when tapped on bottom.

FLAXSEED BREAD

Flaxseed Bread image

Provided by PetraScott

Number Of Ingredients 6

2 1/3 cups + 1 Tbsp. golden flaxseed meal*
1 cup warm or hot water
1 Tbsp. baking powder
1 tsp. baking soda**
1 tsp. apple cider vinegar**
1/2 tsp. salt

Steps:

  • Preheat the oven to 360°F/180°C.
  • Grind the flaxseeds into very fine flour. Ideally, sift the flaxseed flour to make sure there are no actual "seeds".
  • In a large mixing bowl, mix together the flaxseed meal, baking powder, baking soda, and salt. Add the apple cider vinegar and water, and stir until the flaxseed meal becomes sticky and holds together in a lump, for about 30 seconds. Then use your hands to roughly form the dough into a loaf shape. (Don't over-knead the dough. Handle it as little as possible). The loaf should have a nice smooth surface.
  • Place the loaf into a greased (or parchment paper-lined) loaf pan. The bread fits perfectly into a 1-pound loaf pan (8.5" x 4.5"). However, if you only have 1.5-pound loaf pan (10" x 5") - like I do - it will work just fine. (If you're working with the larger size loaf pan, form the loaf, place it into the loaf pan, but don't press it into the corners). You can also use a baking sheet lined with a piece of parchment paper. The bread holds its shape during baking really well, so the loaf pan is not necessary.
  • Mist with water and sprinkle some seeds on top (I use a mix of flaxseeds, sesame seeds, and sunflower seeds). Gently press down on the seeds with your palm to make them stick better.
  • Note: if you watched the video that goes with this recipe, I said that I let the bread rest, covered, for a few minutes. Well, if you're using the baking soda, you want to do the opposite. When you mix baking soda (base) with apple cider vinegar (acid), you get a chemical reaction. A product of this reaction is carbon dioxide, producing a lift in your baked goods. The reaction starts as soon as the base and the acid are mixed. So, get the bread in the oven immediately after you mix the two, before the reaction tapers off.
  • Bake the bread for 60 minutes. The crust should be golden brown (if using golden flaxseeds).
  • Remove the bread from the oven and let it cool inside the loaf pan for 10 minutes. Transfer the bread on a cooling rack, and let it cool completely before slicing.
  • Store the flaxseed bread in an airtight container in the refrigerator for 7 days. For longer term storage, freeze in an airtight container for up to 3 months. I like to slice the bread prior to freezing, but you can freeze the whole loaf as well.

FLAX SEED BREAD (BREAD MACHINE)

Flax Seed Bread (Bread Machine) image

I saw flax seed at the grocery and bought it without any idea of what to do with it. I found out that flax seed contributes fiber and omega-3s to the diet. Even better, it made this delightful, speckled loaf with a nutty flavor. Wonderful as is or toasted.

Provided by duonyte

Categories     Yeast Breads

Time 3h15m

Yield 1 1 1/2 lb. loaf, 18-22 serving(s)

Number Of Ingredients 9

1/4 ounce active dry yeast (1 envelope)
1 1/4 cups warm water
3 tablespoons honey
1 tablespoon olive oil
1/2 teaspoon salt
1 cup flax seed meal (ground flax seed)
1 1/2 cups whole wheat flour
1 1/2 cups bread flour
cornmeal

Steps:

  • Place ingredients in your bread machine as directed by your manufacturer.
  • Set to dough cycle. Check the consistency after about 10 minutes - if it looks dry, add a little more water.
  • After initial rise, remove, shape in a large round loaf (or whatever you like), let rise again on a cornmeal dusted baking pan.
  • Preheat oven to 400 deg. If desired, brush loaf with an egg wash (one egg beaten with 1 tbl. cold water). Slash loaf with sharp knife. Place in oven. After 15 min., reduce temperature to 350 deg.
  • Bake for an additional 25 minutes or until loaf is done - an instant thermometer should read 205 deg.
  • Turn onto cooling rack and let cool.
  • Note: If using flax seed, 2/3 cups seed will grind into 1 cup flax meal.
  • Note2: If using egg wash, you may also sprinkle loaf with whole flax or poppy seeds.

SOURDOUGH FLAX SEED BREAD

Sourdough Flax Seed Bread image

This is a hearty, and heart smart bread because Flax seeds contain omega-3 fatty acids, which help elevate your good cholesterol. This is a modified recipe from Dr. Ed Wood's second book, "Classic Sourdoughs : A Home Baker's Handbook". Dr. Wood is also the author of the treasured "World Sourdoughs from Antiquity". Even thought I'd love it, I've made the seeds optional as my DH doesn't care for 'seedy' breads.

Provided by Galley Wench

Categories     Breads

Time 4h20m

Yield 2 Loaves, 16 serving(s)

Number Of Ingredients 10

2 cups active sourdough starter
2 tablespoons sunflower seeds (optional)
1/4 cup flax seed (optional)
1 tablespoon poppy seed (optional)
4 1/2-5 cups unbleached white flour
1/2 cup flax seed meal
1 1/4 cups cold bottled water
1 1/2 teaspoons salt
3 tablespoons olive oil
3 tablespoons honey

Steps:

  • (Optional) Put the sunflower seeds, flax seeds, and poppy seeds in a hot, clean, dry skillet and stir them. Let them roast, with frequent stirrings, until they become fragrant. Be careful to make sure they don't scorch! Toasting the seeds makes them - and the bread - much more tasty. You may also roast the seeds in a 375F oven for 5 to 10 minutes.
  • Mix the active starter, water, oil and honey together. (I use my Kitchen Aid with the dough hook for this process.).
  • Add the (optional) seeds.
  • Stir in the flax meal.
  • Add the salt and then stir in the flour one cup at a time until the dough is too thick to stir.
  • Pour the dough onto a floured work surface (or turn up the speed on your Kitchen Aid) and knead until the dough is resilient. The dough is a rather sticky dough; it's important not to over-flour the dough.
  • Once the dough is well kneaded, turn it out into an oiled bowl, turn and cover.
  • Let it rise until doubled.
  • Deflate the dough, knead briefly, cut and shape into rough loaves.
  • Let the dough sit, covered, for 30 minutes, then shape into final loaves.
  • Let rise, covered, until doubled.
  • Preheat the oven to 375°F.
  • Bake 30 to 45 minutes.
  • Note:.
  • Flax seeds are easily found in health food stores. The oils in them can become rancid, so either buy just what you need, or store the seeds in the refrigerator or freezer.

FLAX BREAD

Flax Bread image

Flaxseeds are a healthy addition to almost any diet. Research shows that this food is a real cancer-fighter. This is a really good bread. Rustic and nutty flavored but not overpowering. My DH enjoyed this bread toasted. I made a second batch and made 6 rolls and a mini loaf (freehand) of bread which I then added butter and garlic to after it was cooked, then toasted for a spaghetti dinner. DH LOVED it this way. This recipe adopted from the Caring4Cancer newsletter. ABM directions- below Time includes resting and rising time. These times will vary depending on method, altitude and temperature in your neck of the woods. NOTE: (3/8/12) Most everyone has had to add in the additional flour. I used an additional 1/2 cup as well. I still follow the directions keeping 1 c aside to add in afterwards because I tried it adding it in in the beginning and it did not seem to come together as well, too dry to start. I also have made this using 2 c whole wheat flour +3 1/2 c AP flour to start and then used less than 1/2 c of additional flour. Please use your own experiance and jusdgement.

The result was a sweet, fragrant, chewy and healthy bread that is fabulous with honey butter spread on top! I recommend Karen From Colorado's Recipe #17086. Enjoy!

Estimated Reading Time 9 mins
  • High in Fiber but Low in Carbs. One of the most extraordinary attributes of flaxseed is that flax contains high levels of mucilage gum content, a gel-forming fiber that is water-soluble and therefore moves through the gastrointestinal tract undigested.
  • High in Omega-3 Fatty Acids. We hear a lot about the health benefits of fish oil and omega-3 fats, which is one reason why flaxseeds, walnuts and chia seeds have become known for their anti-inflammatory effects.
  • Helps Make Skin and Hair Healthy. Why is flaxseed good for your hair? Flaxseeds benefits for hair include making it shinier, stronger and more resistant to damage.
  • Helps Lower Cholesterol and Treat Hyperlipidemia. Flax promotes health of the heart and arteries due to its anti-inflammatory action, anti-hypertensive properties, cholesterol-lowering effects, anti-oxidative capacity and lipid-modulating properties.
  • Gluten-Free. Using flax is a great way to naturally replace gluten-containing grains in recipes. Grains, especially those containing gluten, can be hard to digest for many people, but flax is usually easily metabolized and also anti-inflammatory.
  • May Help Manage Diabetes. Flaxseed is well-known for its positive effects on blood sugar levels, making it a potentially useful tool for those prone to diabetes.
  • High in Antioxidants (Lignans) One of the greatest perks of flaxseed is that it’s packed with antioxidants, specifically the type called lignans. Lignans are unique fiber-related polyphenols.
  • May Help Regulate Blood Pressure. Flaxseed is thought to be a potent cholesterol-lowering and antihypertensive food — plus it’s even been shown to help inhibit heart arrhythmias (abnormal heart beats rhythms).
  • Supports Digestive Health. One of the most well-researched benefits of flaxseed is its ability to promote digestive health. The ALA in flax can help reduce inflammation and protect the lining of the gastrointestinal tract.
  • May Help Lower Cancer Risk. As part of a healthy diet, flaxseeds may be able to help prevent certain types of cancer, including breast, prostate, ovarian and colon cancer.

FLAXSEED: 9 HEALTH BENEFITS AND HOW TO EAT

From healthline.com
  • Flax Seeds Are Loaded With Nutrients. Grown since the beginning of civilization, flax seeds are one of the oldest crops. There are two types, brown and golden, which are equally nutritious.
  • Flax Seeds Are High in Omega-3 Fats. If you are a vegetarian or don’t eat fish, flax seeds can be your best source of omega-3 fats. They are a rich source of alpha-linolenic acid (ALA), a mostly plant-based omega-3 fatty acid (2).
  • Flax Seeds Are a Rich Source of Lignans, Which May Reduce Cancer Risk. Lignans are plant compounds that have antioxidant and estrogen properties, both of which can help lower the risk of cancer and improve health (12).
  • Flax Seeds Are Rich in Dietary Fiber. Just one tablespoon of whole flax seeds contains 3 grams of fiber, which is 8–12% of the daily recommended intake for men and women, respectively (17).
  • Flax Seeds May Improve Cholesterol. Another health benefit of flax seeds is their ability to lower cholesterol levels. In one study in people with high cholesterol, consuming 3 tablespoons (30 grams) of flaxseed powder daily for three months lowered total cholesterol by 17% and “bad” LDL cholesterol by almost 20% (19).
  • Flax Seeds May Lower Blood Pressure. Studies on flax seeds have also focused on its natural ability to lower blood pressure (22). A Canadian study found eating 30 grams of flax seeds daily for six months lowered systolic and diastolic blood pressure by 10 mmHg and 7 mmHg, respectively (23).
  • They Contain High-Quality Protein. Flax seeds are a great source of plant-based protein, and there’s growing interest in flaxseed protein and its health benefits.
  • Flax Seeds May Help Control Blood Sugar. Type 2 diabetes is a major health problem worldwide. It’s characterized by high blood sugar levels as a result of either the body’s inability to secrete insulin or resistance to it.
  • Flax Seeds Keep Hunger at Bay, Which May Aid Weight Control. If you have the tendency to snack between meals, you might want to consider adding flax seeds to your beverage to stave off hunger pangs.
  • Flax Seeds Can Be a Versatile Ingredient. Flax seeds or flaxseed oil can be added to many common foods. Try the following: Adding them to water and drinking it as part of your daily fluid intake.
