EASY FLAXSEED BREAD (GLUTEN-FREE, DAIRY-FREE)
This easy flaxseed bread is soft and tender with a deliciously moist crumb. Just slightly sweet with the perfect hint of cinnamon, this quick bread is perfect for an easy breakfast or snack whenever you're hungry. Totally gluten-free, dairy-free and yeast-free too, but no one would care! Bake a loaf or two and enjoy homemade bread anytime!

Steps:
- Preheat the oven to 350F and grease an 8″ x 4″ metal loaf pan.
- In a large bowl, beat the oil and sugar until combined.
- Add the eggs and milk and whisk to get a pale yellow liquid mixture.
- In a medium bowl, whisk the gluten-free all-purpose flour, flaxseed meal, baking powder, salt, and cinnamon to combine.
- Sift the dry ingredients into the bowl with the wet ingredients and mix well to get a homogeneous batter (the batter will be rather liquid).
- Pour the batter into the prepared loaf pan.
- Bake for 50 to 55 minutes until the loaf is golden brown on top and a toothpick inserted in the middle comes out clean.
- Allow the loaf to cool for at least 5 minutes in the pan before removing it and then cooling it completely on a wire rack before slicing.

FLAX BREAD WITHOUT YEAST, GLUTEN, SUGAR OR DAIRY
I have arrived at this recipe after starting with a flax muffin recipe for people on a candida diet and adapting it to suit my husband's desire to have bread without yeast, gluten, sugar or dairy. This makes a little loaf that rises a bit and can be cut into slices. It would be a tiny sandwich, but it makes nice bits of toast. He enjoys it with butter and sugar-free jam.

Steps:
- Preheat oven to 180°C or 350°F Grease a small loaf pan (about 4" x 7" or 10cm x 18cm).
- Mix together the flax meal, buckwheat flour, rice flour, baking powder, baking soda and xanthan gum. The xanthan gum gives it a bit better texture, but could be eliminated.
- In a separate bowl, beat the eggs and add the oil, soy milk and lemon juice.
- Once the oven is to temperature, mix the wet and dry ingredients together, put in the pan, smoothing the top with a spatula. (The lemon juice acts with the baking powder, and it's best to mix it, then go right into the oven.).
- Bake for 35-40 minutes.

Steps:
- Set aside 1 cup flour.
- Mix remaining flour, flax seed, sugar, salt, and yeast in a large bowl.
- Heat water, milk, and oil until hot to the touch (about 125-130°F) but DO NOT BOIL.
- Stir milk mixture into dry mixture. Mix in enough reserved flour to make a soft dough that does not stick to the bowl.
- Turn out onto floured board and knead until smooth and elastic, about 8 minutes.
- Cover dough and let rest 10 minutes.
- Divide dough in 1/2 and shape into loaves.
- Place into 2 greased (8 ½ inch x 4 ½ inch) loaf pans.
- Cover and let rise in a warm place until dough has doubled in volume (about 40-50 minutes).
- Bake in a preheated oven at 400°F for 30-35 minutes.
- Remove from pans and cool on wire racks.

- If not using my bread mix, whisk these dry ingredients together in a large bowl: GF flours, milk powder, 1/2 teaspoon baking soda, 2 teaspoons baking powder and 1 teaspoon salt.
- In the large mixing bowl of a stand mixer, stir together the wet ingredients: honey (if using), club soda, apple cider vinegar (not necessary if using my bread mix), oil and egg. Gradually add the dry ingredient mix or bread mix packet (do not add the yeast packet that comes with the bread mix) in by pouring slowly into the wet bowl.
- Begin mixing with a wooden spoon or paddle attachment on a stand mixer. Before fully integrated, add the final addition of lemon juice and extra baking soda to the bowl. The mixture should bubble up when added together; if not, your baking soda is not fresh enough. Once incorporated, beat well for 1 - 2 more minutes.
