Chicken and rice paired with a creamy mushroom sauce bake together for a delicious one-dish meal that's easy to clean up.

1 (10.75 ounce) can Campbell's® Condensed Cream of Mushroom Soup (Regular, 98% Fat Free or 25% Less Sodium)
1 cup water*
¾ cup uncooked regular long-grain white rice
¼ teaspoon paprika
¼ teaspoon ground black pepper
4 each skinless, boneless chicken breasts

Steps:

  • Mix soup, water, rice, paprika and black pepper in 2-quart shallow baking dish. Top with chicken. Season with additional paprika and pepper. Cover.
  • Bake at 375 degrees F 45 minutes or until done.

This takes no time to prepare, I have tryed this using different flavor soups, I find that cream of chicken and celery are the best, or use 2 cans cream of chicken, I also like to add the garlic powder and also a pinch of cayenne pepper to the soup mixture :)

Number Of Ingredients 9

1 cup water
1 (16 ounce) can condensed cream of chicken soup, undiluted
1 (16 ounce) can condensed cream of celery soup, undiluted
1 teaspoon garlic powder (optional)
salt & freshly ground black pepper (to taste)
3 tablespoons red wine
3/4 cup long-grain rice, uncooked
2 lbs chicken breasts or 2 lbs chicken pieces
1 (1 1/4 ounce) package Lipton Onion Soup Mix

Steps:

  • Set oven to 350 degrees F.
  • Grease a medium-size casserole dish.
  • Mix the first 6 ingredients in a bowl.
  • Add the uncooked rice to the soup mixture; mix until combined.
  • Transfer the soup/rice mixture to the casserole then spread out in the dish.
  • Place the chicken on top of the mixture.
  • Sprinkle with the dry onion soup.
  • Cover with foil and bake for 1 hour 30 minutes or until rice is cooked and the chicken is done.
  • Allow to stand for 10 mins before serving.
  • Delicious!

My favorite chicken and rice casserole by far. I always make two batches at once, cooking in separate baking dishes. (The reason being the one time I doubled the recipe and baked it all in a larger dish, it did not come out). If you really like bell peppers (like me) feel free to double the amount. Adapted from a TOH recipe.

1 tablespoon butter
1/2 lb boneless skinless chicken breast, cut into cubes
1/2 cup onion
1/2 cup chopped green bell pepper
3/4 cup uncooked white rice
1 (10 3/4 ounce) can condensed cream of mushroom soup
1 cup water
1/2 teaspoon salt
1/2 teaspoon chili powder
1/4 teaspoon pepper
1/4 teaspoon paprika

Steps:

  • In a large skillet heat butter.
  • Add chicken, onion, and green pepper; cook and stir until the chicken is cooked through.
  • In a 1-1/2 qt baking dish mix mushroom soup, water, and spices.
  • Add rice and chicken veggie mixture and stir.
  • Cover and bake at 375 F for 55 minutes. Stir well before serving.

1 cup uncooked long-grain rice
1 tablespoon chicken bouillon granules
1 tablespoon dried parsley flakes
1 teaspoon dried celery flakes
1 teaspoon dried minced onion
1 teaspoon sugar or sugar substitute equivalent to1 teaspoon sugar
1/2 teaspoon salt
ADDITIONAL INGREDIENTS:
2 cups water
2 tablespoons butter

Steps:

  • Combine all ingredients. Store in small plastic bag or container. For gift-giving, package in a pretty container and decorate with colorful ribbons or bows. Be sure to attach preparation instructions. Yield: 3 cups., To prepare: In a saucepan, combine rice mix with 2 cups water and 2 tablespoons butter. Cover and bring to a boil, reduce heat and simmer 15 minutes or until rice is tender.

  • In a small dish, whisk together the paprika powder, dried rosemary, garlic, onion, salt and pepper. Season the skinless chicken breasts with the mixture, rubbing on both sides and reserve on a plate.
  • Pour the chicken broth and lemon juice into a saucepan and bring to a boil, reduce the heat to low and simmer while preparing the rice.
  • Heat a heavy-bottomed pan or skillet, set over medium heat, add the butter and shallots. Sauté until the onions are just soft and translucent; then stir in the garlic and rice, stirring constantly for about 1 minute to coat the rice with the melted butter.
  • Add the wine to the rice and cook for 30 seconds to burn off the alcohol; then pour in the hot broth/lemon juice. Bring to a boil and remove from the heat. Stir in the rosemary, salt and pepper.
