My mom came across this rustic-looking flatbread recipe many years ago and always made it on Christmas Eve. Now I make it for my own family, especially during the holidays. It's easy to double or cut in half depending on how many you're serving. -Diane Berger, Sequim, Washington

Number Of Ingredients 9

2 loaves (1 pound each) frozen bread dough, thawed
1/4 cup butter, melted
1/4 cup canola oil
1 tablespoon dried minced onion
1 tablespoon Dijon mustard
2 teaspoons caraway seeds
1 teaspoon Worcestershire sauce
1 tablespoon dry sherry, optional
2 cups shredded Swiss cheese

Steps:

  • On a lightly floured surface, roll each portion of dough into a 15x10-in. rectangle. Transfer to two greased 15x10x1-in. baking pans. Cover with kitchen towels; let rise in a warm place until doubled, about 45 minutes., Preheat oven to 425°. Using fingertips, press several dimples into dough. In a small bowl, whisk melted butter, oil, onion, mustard, caraway seeds, Worcestershire sauce and, if desired, sherry until blended; brush over dough. Sprinkle with cheese. Bake until golden brown, 10-15 minutes. Serve warm. Freeze option: Cut cooled flatbreads into pieces. Freeze in freezer containers. To use, reheat flatbreads on an ungreased baking sheet in a preheated 425° oven until heated through.

1 lb. pizza dough, at room temperature
Cornmeal, for baking sheet
1 1/2 tbsp. Dijon mustard
4 oz. thinly sliced provolone cheese
1 small yellow onion, thinly sliced
1 small red onion, thinly sliced
1 small bulb fennel, cored and thinly sliced
2 tsp. fresh thyme leaves
1 1/2 tbsp. olive oil
Kosher salt and pepper
2 oz. fontina cheese, coarsely grated
Finely chopped flat-leaf parsley, for sprinkling

Steps:

  • Heat oven to 500°F (if you can't heat the oven this high without broiling, heat to 475°F).
  • On lightly floured surface, shape pizza dough into 14-inch oval. Place on cornmeal-dusted or parchment-lined baking sheet. Spread with mustard, then top with provolone.
  • In large bowl, toss onions, fennel, thyme, oil and 1/2 teaspoon each salt and pepper; fold in fontina. Scatter over dough and bake until crust is golden brown and vegetables are just tender, 10 to 12 minutes. Sprinkle with parsley before serving.

8 slices bacon
4 garlic cloves, divided
1 tablespoon sherry or balsamic vinegar (15 milliliters)
4 large handfuls oyster mushrooms (about 225 grams/8 ounces)
Kosher salt
Freshly ground black pepper
One 540-milliliter/18.25-ounce can white kidney beans, drained and rinsed
1 cup loosely packed fresh basil
2 tablespoons chopped chives
1/4 cup finely grated Parmigiano-Reggiano cheese (50 grams)
1 lemon, zested and juiced
1/4 cup extra-virgin olive oil (60 milliliters), plus more for drizzling
2 to 4 tablespoons (30 to 60 milliliters) water
4 naan or Greek pitas
4 teaspoons Dijon mustard (20 milliliters)
4 small handfuls of arugula or basil

Steps:

  • Preheat your oven to 400 degrees F (200 degrees C).
  • Lay the bacon out onto a rimmed baking sheet. Bake for 14 to 16 minutes, or until crisp and golden brown. Transfer the bacon to a piece of paper towel and set aside to cool.
  • Meanwhile, mince 2 cloves of the garlic and add them along with the vinegar to the baking sheet and stir into the bacon fat. Add the mushrooms and toss to coat. Season with salt and pepper and bake for 15 to 20 minutes, or until golden brown.
  • In the bowl of a food processor, combine the beans, basil, chives, Parmigiano-Reggiano, lemon zest, lemon juice and olive oil. Roughly chop the remaining 2 cloves of garlic, add to the food processor and blitz well until smooth and spreadable, scraping down the sides of the bowl a few times throughout. Add in 2 tablespoons of water and blitz to combine. If the mixture is still a bit thick, add in the remaining 2 tablespoons of water then season to taste with salt and pepper.
  • Spread the flatbreads with Dijon mustard and top each with a good helping of the herby white bean spread. Scatter over some roasted mushrooms and crumble 2 slices of bacon over each flatbread. Finish with the arugula or basil and season with salt and pepper and a little extra virgin olive oil, if desired.

½ small red onion , sliced into thin wedges
2 tbsp olive oil , plus an extra drizzle, to serve
70g cherry tomatoes
200g canned chickpeas , drained
1 small garlic clove , crushed
½ tbsp tahini
½ lemon , zested and juiced
1 flatbread
30g mixed pitted olives
20g vegetarian feta , crumbled
small handful of basil , shredded

Steps:

  • Heat the grill to its highest setting. Spread the onion wedges out on a baking tray and drizzle with 1 tbsp of the oil. Grill for 3-5 mins turning halfway through, then add the tomatoes to the tray, season and grill for a further 5 mins or until juicy and popping.
  • Put the chickpeas in a pan with the garlic and remaining 1 tbsp oil, then heat for 5 mins before crushing the chickpeas using a potato masher. Stir through the tahini, the lemon zest and juice along with 2 tbsp water. Season.
  • Warm your flatbread under the grill for a couple of minutes. Top with the crushed chickpeas, then the tomato and onion mixture. Finish with the olives, feta and basil, and a drizzle of olive oil.

300g strong white bread flour, plus extra for dusting
7g sachet fast-action dried yeast
70ml olive oil, plus extra for proving
½ tbsp extra virgin olive oil
3 brown onions, cut into chunky wedges
5 thyme sprigs, plus extra leaves to serve
2 tbsp honey, plus extra to serve
100g feta
50g thick Greek yogurt
1-2 tbsp rose harissa

Steps:

  • Combine the flour, 1 tsp salt and the yeast in a large bowl. Make a well in the centre, and tip in 150ml warm water and the olive oil. Mix until combined, then knead on a lightly floured surface for 10 mins. Tip into a lightly oiled bowl, cover and leave to rise for at least 1 hr, or until doubled in size.
  • Heat the oven to 200C/180C fan/gas 6. Heat the extra virgin olive oil in a frying pan over a high heat, and fry the onions for about 5 mins until beginning to char, stirring every so often. Tip the onions into a roasting tin with the thyme and honey. Roast for 15 mins until softened.
  • Crumble the feta into a bowl with the yogurt, then whisk until smooth and creamy.
  • Heat a dry frying pan over a medium heat. Divide the dough into four to six balls and roll out each into a 1cm-thick circle on a lightly floured surface. Fry, one at a time, for 2 mins on each side until cooked through and lightly charred. Top with the feta yogurt, harissa, roasted onions, a bit of extra thyme and honey, and a pinch of sea salt.

7g sachet dried yeast
1 tsp caster sugar
400g strong white bread flour
200g wholemeal bread flour
oil , for greasing
1 tbsp kalonji seeds (also called black onion seeds or nigella seeds)
2 tbsp sesame seed

Steps:

  • Mix the yeast with 2 tbsp warm water and sugar, and leave for a few mins. Tip the flours into a large bowl with 1 tsp salt and make a well in the centre. Pour in the yeast mixture and 500ml warm water. Mix with a wooden spoon until it comes together as a dough, then tip onto a work surface and knead for 5-10 mins until smooth and elastic - add a little extra flour if the dough is too sticky. Put the dough in an oiled bowl, cover with a tea towel and leave in a warm place to rise for 1 hr until doubled in size.
  • Tip the dough onto your work surface and knock out all the air. Knead the seeds into the dough until well distributed. Divide the dough into 12 pieces, then roll out each as thinly as you can. Heat a large frying pan, cook the flatbreads for 2 mins or until bubbles appear on the surface, then flip over and cook for 2 mins more. Once all are cooked, wrap in foil and keep for up to a day. Pop in a warm oven to reheat.

Caramelized onions
2 tablespoons extra-virgin olive oil
1 pound onions (about 2 medium), cut into 1/3-inch-thick wedges through root ends
2 teaspoons chopped fresh thyme
1 teaspoon honey
1 tablespoon Sherry wine vinegar
1/2 cup crème fraîche
1 large egg
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Semolina flour (pasta flour)* or cornmeal
2 tablespoons chopped fresh chives

Steps:

  • For bread dough:
  • Whisk 1/4 cup plus 1 tablespoon warm water and yeast in small bowl; let stand until yeast is dissolved, about 10 minutes.
  • Mix flour, nigella seeds, and salt in medium bowl. Add yeast mixture and stir with wooden spoon until mixture clumps together. Add butter; mix until incorporated. Turn dough out onto lightly floured work surface and knead until smooth and elastic, about 5 minutes. Divide dough into 6 equal pieces; roll each into ball. Place on baking sheet; cover with plastic wrap. (Can be prepared 1 day ahead. Keep covered and refrigerate.)
  • For caramelized onions:
  • Heat oil in large nonstick skillet over medium-high heat. Add onion wedges to skillet and cook without turning until beginning to brown, about 7 minutes. Carefully turn onions over; reduce heat to medium and continue to cook until onions are tender and brown, occasionally stirring gently, about 10 minutes. Add thyme and honey; cook 1 minute. Stir in vinegar. Seasonto taste with salt and pepper. Remove skillet from heat. Cool. (Can be prepared 1 day ahead. Cover and refrigerate.)
  • Let dough rise in warm draft-free area until doubled, about 1 hour. Whisk crème fraîche and egg in small bowl to blend. Stir in 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Preheat oven to 450°F. Sprinkle 2 rimmed baking sheets lightly with semolina flour. Roll out each dough ball to 5-inch round. Transfer 3 rounds to each prepared baking sheet. Let rest 10 minutes. Pierce dough rounds all over with fork. Spread 1 generous tablespoon crème fraîche mixture over each dough round, leaving 1/4-inch plain border. Arrange onions evenly atop each; drizzle lightly with crème fraîche mixture (mixture may spill over edges of dough).
  • Bake flatbreads until crusts are puffed and golden, about 12 minutes. Transfer to plates; sprinkle with chives.

2 lbs Brussels sprouts
1 tablespoon mustard seeds
1 tablespoon extra virgin olive oil
1 onion, finely chopped
2 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/3 cup chicken stock
1 tablespoon Dijon mustard
1 teaspoon lemon juice

Steps:

  • Trim the outer leaves of the Brussels sprouts and cut an X in the bottom of each.
  • In a large pot of boiling salted water, cover and cook the Brussels sprouts until tender-crisp, about 6 minutes.
  • Drain and chill under cold water, then drain well.
  • In a large nonstick skillet, toast the mustard seeds over medium heat, stirring, until aromatic and the seeds begin to pop, about 3 minutes.
  • Add the oil, onion, garlic, salt and pepper.
  • Cook over medium-high heat until softened, about 2 minutes.
  • Add the Brussels sprouts, stock, mustard and lemon juice and cook, tossing occasionally, until heated through and the Brussels sprouts are coated, about 2 minutes.

1 pound frozen white bread dough (1/3 of 3-pound package), thawed
3 tablespoons olive oil
3 cups finely chopped onions
2 tablespoons minced garlic
2 1/2 tablespoons Dijon mustard
2 tablespoons yellow mustard seeds
1 1/2 teaspoons dried thyme

Steps:

  • Place dough in large bowl. Cover with towel and let rise in warm draft-free area until doubled, about 1 hour.
  • Preheat oven to 450°F. Heat 2 tablespoons oil in large nonstick skillet over medium heat. Add onions and garlic and sauté until brown and tender, about 10 minutes. Add mustard, mustard seeds and thyme and stir 1 minute. Cool.
  • Oil large baking sheet. Using rolling pin, roll out dough on floured surface to 14x5-inch rectangle. Spread 1/3 cup onion mixture evenly over dough. Starting at 1 short end, roll up dough jelly roll style. Using rolling pin, roll out dough to 12x8-inch rectangle. Transfer to prepared baking sheet. Brush with remaining 1 tablespoon oil. Sprinkle remaining onion mixture atop dough.
  • Bake bread until golden brown, about 20 minutes. Serve warm or at room temperature.
