SPINACH STUFFED FLANK STEAK ROLLS

Pan Grilled butterflied Flank Steak stuffed with spinach, garlic, and cheese. These delicious steak pinwheel rolls are tender and cheesy and make a delicious low-carb dinner!

1 lb. flank steak (butterflied)
2 tablespoons oil
½ cup onion (chopped)
3-4 cloves garlic (minced or crushed)
4 ounces cream cheese
8 ounces sliced Provolone cheese (or mozzarella or your favorite melting cheese)
2 cups baby spinach
Salt and pepper (to taste)

Steps:

  • Preheat oven to 375F degrees. Butterfly Steak by slicing horizontally across and pounding. Season with salt and pepper. Set aside.
  • Heat 2 tablespoons oil to a small saucepan over medium-high heat. Add onion and cook for 2-3 minutes or until tender and almost golden. Add the garlic and sautee for another minute. Remove from and stir in cream cheese until fully combined. Season with salt and pepper.
  • Spread the cream cheese mixture on the steak, then layer the spinach and cheese. Roll up steak and tie with kitchen twine or pierce with toothpicks or short kabob skewers to keep the roll intact. Using a sharp knife, slice roll between pieces of toothpicks or twine. Season pinwheels lightly with salt and black pepper.
  • Heat a large heavy-duty pan to medium-high heat. Add the steak pinwheels and sear for 2-3 minutes per side. Transfer to a baking dish or place the entire pan in the oven if it is oven safe, and bake for 10 minutes. Remove from oven, tent with aluminum foil and let rest for 5 minutes before serving.

I'm always looking for great recipes and experiment alot. Every once in awhile, I discover one that just cries out to be shared. The following is just such a recipe. It really is very easy, but the flavor and presentation is quite "gourmet". My wife and I had it for dinner last night with nothing more than a side dish of herbed and garlic scalloped potatoes and a nice bottle of Pinot Noir. It was YUMMY!!

10 ounces bag frozen chopped spinach, thawed
1/3 cup pine nuts
4 ounces blue cheese
2 tablespoons minced roasted garlic
1 1/4-1 1/2 lbs flank steaks
3 tablespoons olive oil, divided
1/2 teaspoon seasoning salt
1/4 teaspoon pepper
6 -8 drops liquid smoke

Steps:

  • Preheat oven to 400°F.
  • Place the thawed spinach in the center of a kitchen towel. Holding the towel over the sink, twist it to squeeze excess water out of the spinach.
  • Open the towel and place the spinach in a food processor, along with the pine nuts, blue cheese, and garlic. Pulse until the ingredients form a thick paste.
  • Place the flank steak flat on a work surface and using your fingers and/or a silicone spatula, spread the spinach and cheese mixture evenly over the entire steak.
  • Roll the steak into a cylinder and, using kitchen twine, tie the roll securely about every two inches.
  • Mix one tablespoons olive oil with seasoning salt, pepper and liquid smoke. Brush mixture over the whole outer surface of the steak roll.
  • In a large, deep skillet over medium-high, heat the remaining oil. Add the steak roll and sear one side for about 1 1/2 minutes. Use tongs to rotate the roll 1/4 turn, searing for another 1 1/2 minutes. Continue until all sides are seared.
  • Transfer the roll to a rack, place on a baking sheet or pan and place in oven to roast for 15 to 20 minutes, or until an instant-read thermometer inserted into the center of the roll reads 140 degrees F.
  • Remove from oven, let stand for 5 minutes. Slice, serve, and enjoy!

For the fall there is nothing like a crock-pot cooking a hearty dish. This recipe is a classic when combined with buttered steamed spinach, oven roasted potatoes, and a full flavored red wine such as Barola, a Rhone, or a California Merlot.

16 large basil leaves
1 1/2 lbs flank steaks
4 slices swiss cheese (thin slices)
2 sweet Italian sausage links
salt & freshly ground black pepper
string, to tie flank steak
3 tablespoons olive oil
1 large onion, thinly sliced
8 garlic cloves
1 cup dry red wine (Burgundy)
1/2 cup beef stock
1/4 cup red wine vinegar
2 bay leaves
2 fresh basil leaves, chopped

Steps:

  • Arrange basil leaves to cover flank steak, leaving a 1/2-inch border.
  • Place Swiss cheese slices on top of basil leaves.
  • Place sausages end to end lengthwise down the center of the steak.
  • Starting on one end of steak, roll the steak over the sausage. Tie with string to secure. Season with salt and pepper.
  • Heat oil in large skillet. Add steak roll and brown on all sides, about five minutes.
  • Transfer steak roll to crock pot, seam side up. Scrape all browned bits & oil into crock.
  • Add onions, garlic, wine, beef broth, red wine vinegar, bay leaves, and chopped basil.
  • Medium setting for 6-8 hours.
  • Drain juices into sauce pan, boil gently for five minutes to reduce. Place in gravy server.
  • Slice steak roll into serving portions. Serve with gravy.

1 (1 lb) package bacon, cooked until done, but not crisp
1 1/2-2 lbs flank steaks
1 (10 ounce) package frozen spinach, thawed and drained
1/2 cup thinly sliced mushroom
1/2 cup parmesan cheese
salt
pepper

Steps:

  • Lightly score steak with a knife in a diamond pattern.
  • Make sure that you do not cut through the meat.
  • With a meat mallet, pound steak into a rectangle, as large as possible.
  • Sprinkle with salt and pepper.
  • Arrange bacon lengthwise on steak.
  • Spread spinach over bacon.
  • Top spinach with mushrooms and parmesan cheese.
  • Roll up steak from short side.
  • This will give you a long stuffed flank steak.
  • Secure with toothpicks in 1-inch sections, starting 1/2 inch from one side.
  • Cut between picks into 8 or more slices.
  • Place steaks on a broiler pan.
  • Broil 3 inches from the heat for 6 to 8 minutes.
  • Turn.
  • Broil other side, until medium doneness.
  • Serve with Hollandaise Sauce or Bearnaise Sauce (I buy the envelope kind from the grocery store.).

Stuffed Flank Steak with Mushrooms, Spinach and Blue Cheese image

A delicious stuffed flank steak filled with mushrooms, spinach and blue cheese.

2 cups cremini mushrooms
1 cup spinach (raw)
1 cup crumbled blue cheese (I buy mine at Trader Joes)
1 flank steak (Around 1.5 lbs)
2 tbsp olive oil
1 tbsp each salt and pepper
1 tsp garlic powder
Kabob skewers or long toothpicks

Steps:

  • Line a cutting board with Saran Wrap. Lay flank steak over Saran Wrap, and cover top of flank steak with Saran Wrap. Pound flat and tenderize, so the steak expands in area, about an inch. Sprinkle both sides with salt and pepper.
  • In a shallow pan, heat 1 tbsp olive oil on medium heat, and add mushrooms with garlic powder, and a pinch of salt and pepper. Cook and stir continuously for 5 minutes. Add spinach, and cook for 3 more minutes. Remove from heat and let cool for 10 minutes. Wipe pan clean and set aside.
  • Remove top layer of Saran Wrap. Top pounded steak with mushroom and spinach mixture, spreading to 1 even layer over entirety of steak, and top entirety with crumbled blue cheese.
  • Begin to roll your steak, using the lower Saran Wrap to 'pinch' the roll for tightness. Go slow and pinch tight!
  • Slice into 1 1/2 to 2 inch sections using sharp kitchen knife. Pierce through 2 skewers diagonally to hold sliced roll in place (see picture in post for example). Tip- If your skewers are too long, cut them in half!
  • Heat 1 tbsp remaining olive oil in pan (seasoned cast iron works great!). Sear steak rolls on each side for 7 minutes or until steaks reach desired level of doneness. Steak will leak sauce from the bleu cheese- spoon on top for added flavor.*Medium done steak is between 135-145 degrees. Well done steak is cooked at 160 degrees.
  • Garnish if desired- Reduced balsamic and basil optional. Enjoy!

1/2 cup chopped shallot
1/4-1/2 teaspoon minced garlic
1/4-1/2 teaspoon minced fresh thyme
1 1/2 cups small croutons
3 -4 ounces blue cheese, crumbled
2 tablespoons dry breadcrumbs
1 lb flank steak
kosher salt
fresh ground black pepper

Steps:

  • Preheat oven to 350°F; heat a skillet over medium-high heat.
  • Add the oil and shallots and cook until soften, add the garlic and thyme. Continue cooking until the shallots are lightly browned.
  • Transfer to a medium-size bowl and let cool slightly.
  • Mix in the croutons, cheese and bread crumbs.
  • Pound the steak to a even thickness. A larger surface area is perfect so as to hold the stuffing.
  • Put the steak on a work surface and mound the blue cheese stuffing lengthwise down the center.
  • Roll the steak and tie off with string securely in several places. Salt and pepper the meat.
  • Heat an over-proof skillet with a thin layer of oil and sear the steak on all sides.
  • Put the skillet in the oven for ten minutes. Turn steak over and leave in for another ten minutes.
  • Take steak out and cover with loose foil for 5-10 minutes and then begin carving. Enjoy.

1/4 cup olive oil
2 tablespoons balsamic vinegar
2 teaspoons brown sugar
1 teaspoon Worcestershire sauce
2 garlic cloves, minced
1 1/2 lbs flank steaks

2 garlic cloves, roasted
1/4 cup red onion, diced
1 scallion, chopped
2 tablespoons panko breadcrumbs

Steps:

  • Mix together the marinade ingredients. Place in a resealable plastic bag with the steak. Marinate for 1-2 hours in refrigerator.
  • In a large skillet, cook bacon. Season with pepper for added flavor. Once crisp remove bacon but leave bacon fat in skillet.
  • Heat to medium and add onion and garlic. Cook for about 2 minutes. Add the beer and the spinach. Season with salt to taste and cook for 1-2 more minutes.
  • Add blue cheese, panko crumbs, and bacon to the mixture. Remove from heat and mix well.
  • Spread warm mixture into the middle of the flank steak, drained from the marinade. Roll and tie using kitchen twine. Place the steak roll in a roasting pan and season the outside again with salt and pepper to your liking.
  • Roast in a 350 degree oven until cooked to your liking.
  • Serve with a basic vegetable or mashed potatoes.
  • This is also great as a leftover in sandwiches with a fresh sourdough bread.

  • Place bacon strips on a microwave-safe plate lined with paper towels. Cover with another paper towel; microwave on high for 2-3 minutes or until partially cooked. , Meanwhile, cut steak horizontally from a long side to within 1/2 in. of opposite side. 2 pound flank steak (butterflied. Have your butcher do it)
6 strips of bacon
2 handfuls of baby spinach
½ cup grated fontina cheese
2 sweet onions (peeled and cut in ½ thick rounds)
Olive oil
Kosher Salt
Freshly cracked pepper
Butchers twine
3 tablespoons Tabasco Chipotle Sauce
1.5 teaspoons dried basil
2 teaspoons olive oil
3-4 cups cooked Israeli couscous (about 2 cups measured before cooked)
1 peach (halved and pit removed)
¼ cup fresh basil leaves (finely sliced)
Leftover cooked bacon from above
Leftover cooked onions from above
3 tablespoon extra virgin olive oil
Juice of half a orange (grilled if desired)
1 teaspoon kosher salt
Couple cracks fresh pepper

Steps:

  • Prep before coking begins:
  • Cook bacon in an oven or grill, roughly chop it and set aside. Pre-heat a cast iron grill pan or BBQ grill over medium heat. Season the onion slices with a shot of oil and a little pinch of salt and pepper on each side. Grill for 5-6 minutes each side, or until slightly charred and soft. Roughly chop the onions and set aside. Grill the peach, cut side down, for about 3-4 minutes so it has nice grill marks, set aside. Cut an orange in half, and grill flesh side down for 5 minutes until slightly charred, set aisde.
  • For the marinade, add all the ingredients to a small bowl and mix well. Set aside.
  • Pre-heat oven to 400 degrees F. Season the outside part of the butterflied flank steak with a generous pinch of salt, about ½ a teaspoon. Flip the steak, you should be looking at the "inside" of the butterflied steak. Season with another ½ teaspoon of salt and just over half of the marinade, rub the marinade evenly over the inside of the meat. Evenly add ¾ of the cooked and chopped bacon, grated cheese, spinach, and ¾ of the cooked and chopped onions. Roll the flank steak up making sure you roll WITH the grain of the meat, the long way not the shirt and fat way. Once you securely roll it, use some butchers twine to tie it up and make sure it stays together, about 5-6 knots will do. Rub the remaining marinade all over the outside of the steak.
  • Pre-heat a cast iron grill pan or BBQ grill over medium-heat for 5 minutes(10 minute if you are using a BBQ grill). Sear one side of the steak for 4-5 minutes, or until nice char marks appear, flip the steak and sear for another 4 minutes. If using a grill pan, transfer the roast to a sheet tray and bake for 30 minutes for medium doneness, just a little pink inside. If using a BBQ grill, move the meat to the opposite side of the grill that should be set over low heat. Turn the hot burners down to medium heat and close the grill lid, cook for about 25-30 minutes for medium doneness. Use a probe thermometer to know exactly the internal temperature, that way you can cook the steak to your desired doneness.
  • While the steak is cooking, make the salad by putting the Israeli couscous in a large bowl. Chop the grilled peach in small chunks and add it to the couscous along with the next 7 ingredients. Mix well and check for seasoning, it may need more salt or orange juice. Ideally you want to add a big squeeze of lemon juice, but I did not have that ingredient in the Tabasco 10 challenge.
  • When the meat is ready, let it rest on a clean platter for 10 minutes so the juices can re-distribute. Cut the butchers twine off and slice the meat in 1/2 inch thick pinwheels. Serve on a platter along with the salad and enjoy!

  • Flatten steak to 1/4-in. thickness. In a bowl, combine the pineapple juice, Worcestershire sauce, onion, thyme, rosemary, salt and pepper. Pour half of the marinade into a resealable plastic bag; add meat. Seal bag and turn to coat; refrigerate for 4-8 hours. Cover and refrigerate remaining pineapple juice mixture., Drain and discard marinade from meat. For stuffing, in a bowl, combine the bread crumbs, cheese, pecans, onion, parsley and garlic. Sprinkle stuffing over meat. Roll up jelly-roll style, starting with a short side. Tie with kitchen string., In a small skillet, brown meat in oil until browned on all sides. Pour reserved marinade into skillet. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until tender. Thicken pan juices if desired.

2 lb (1 kg) Ontario flank steak
½ tsp (2 mL) each salt and freshly ground pepper
6 slices Ontario bacon, chopped
2 cloves garlic, minced
2 shallots, minced
2 cups (500 mL) arugula
2 tbsp (30 mL) chopped fresh parsley
¾ cup (175 mL) crumbled blue cheese
¼ cup (60 mL) seasoned croutons, crushed
1 tbsp (15 mL) extra virgin olive oil

Steps:

  • Preheat oven to 350°F (180°C). Set the flank steak on a large cutting board. Butterfly the steak lengthwise, so it opens like a book. Pound with a meat mallet so the steak is even, about 1/4-inch (5 mm) thick. Season both sides with salt and pepper.
  • In skillet over medium heat fry bacon, garlic and shallots for 7 to 8 minutes, until bacon is rendered and vegetables are tender. Remove from pan. Add arugula to pan and cook for about 2 minutes. Remove from pan and press to release an excess liquid. Combine with bacon mixture.
  • Spread bacon mixture over steak, leaving a 1-inch (2.5 cm) border. Top with parsley and crumbled blue cheese and crushed croutons. Tightly roll steak lengthwise into a log, tucking in the edges as you roll to enclose the filling. Secure with butcher's twine. Brush the outside with oil.

1 1/4 pounds beef flank steak
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon brown sugar
2 cloves garlic, minced
2 tablespoons crumbled blue cheese
2 tablespoons lowfat buttermilk
Dash Worcestershire sauce
1 medium red onion
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
12 radicchio leaves
2 tablespoons fresh chopped parsley leaves

Steps:

  • Place the steak pieces between 2 pieces of plastic wrap or parchment and pound to 1/4- inch thickness. Cut into 4 equal pieces, diagonally, against the grain.
  • In a small bowl, whisk together 1 tablespoon of the olive oil, balsamic vinegar, sugar and garlic. Put the steak into a sealable plastic bag with the marinade and let sit for 30 minutes at room temperature, or 1 hour in the refrigerator.
  • In the meantime, in a small bowl combine the blue cheese and buttermilk with a fork, mashing until creamy. Stir in the Worcestershire and set aside.
  • Spray a large grill pan with cooking spray and preheat over medium-high heat. Cut the onion into 1/4-inch rounds brush both sides with the remaining tablespoon of oil and grill 6 minutes per side. Separate into rings and set aside.
