TEQUILA LIME SAUCE



Tequila Lime Sauce image

1/2 cup white tequila
2 tablespoons freshly squeezed lime juice
2 tablespoons minced shallots
1 teaspoon minced garlic
1 tablespoon chopped fresh cilantro
1/2 teaspoon salt
3 turns freshly ground black pepper
1/4 cup heavy cream
8 tablespoons unsalted butter, cut up, at room temperature (1 stick)
Essence, recipe follows
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Combine the tequila, lime juice, shallots, garlic, cilantro, salt and pepper in a saute pan over high heat and bring to a boil. Reduce by half. Stir in the cream and simmer for 3 minutes. Whisk in the butter and remove from the heat. Continue whisking until all of the butter is incorporated. Serve immediately.
  • Remove the rellenos from the oven. Spoon 1/4 cup of the sauce on each plate and place the rellenos directly on top. Garnish with the tortilla strips and the cilantro sprigs. Sprinkle Essence on the rim.
  • Combine all ingredients thoroughly.

FLAMING HOT CHEESE CURDS



Flaming Hot Cheese Curds image

3 cups all-purpose flour
1 can Pilsner-style beer
1 tablespoon red food dye
1 teaspoon crushed red pepper flakes
1/4 teaspoon dried ground ghost pepper
Canola oil, for frying
1 pound Buffalo-infused white cheddar cheese curds
2 ounces hot spice-infused honey

Steps:

  • Place 1 cup of the flour in a shallow bowl and set aside. In another bowl, whisk together the remaining 2 cups flour, the beer, food dye, red pepper flakes and ghost pepper. Let the batter sit for 5 minutes.
  • Meanwhile, pour enough oil into a 3- to 4-quart saucepan to reach a depth of 3 inches. Heat the oil over medium-high heat until a deep frying/candy thermometer clipped to the side of the pan without touching the bottom registers 350 degrees F.
  • Dredge the cheese curds in the flour, shaking off any excess. Dip the curds into the batter and coat completely, then transfer to the oil. Fry, turning with spiral wire skimmer, until golden brown on all sides, 3 to 4 minutes total. Drain on paper towels and serve with the honey for dipping.

GRILLED PINEAPPLE RINGLETTE WITH TEQUILA LIME SAUCE

1 cup cubed pineapple
1 cup brown sugar
1 tablespoon lime juice
1 1/3 cups nonfat yogurt
1 teaspoon coconut, shredded and toasted
4 pineapple rings, in juice

Steps:

  • Place all of the ingredients, except coconut and pineapple rings, in blender and blend until smooth.
  • Freeze the bowl of an ice cream maker according to instructions. Or pour into a covered freezer proof container and place in the freezer. Stir to break-up ice with a fork after the first 30 minutes in the freezer.
  • Grill the pineapple rings until golden. Refrigerate until cold. Place a scoop of the sorbet centered on the ring and sprinkle with toasted coconut and put in the freezer for 15 minutes. Serve with Tequila Lime Sauce.

  • Tequila Lime Sauce:
  • 1 ounce tequila
  • 2 tablespoons lime juice
  • 2 tablespoons orange juice
  • 1 cup nonfat yogurt
  • 1 teaspoon lime zest
  • 1 teaspoon orange zest
  • 1 teaspoon brown sugar
  • Place all of the ingredients into a bowl and mix well. Place in a sealable container in the refrigerator until needed.

STEAMED SEA BASS IN HOT BEER AND GINGER LIME SAUCE



Steamed Sea Bass in Hot Beer and Ginger Lime sauce image

Historically, Beijing relied upon the neighbouring provinces of Hebei, Tianjin and Shandong for its seafood and other fresh produce, which because of the transportation involved were preserved using various drying methods. However, today with modern transportation, produce from Shandong can arrive in the markets in Beijing within a day and fresh catches such as sea bass are a prized restaurant dish. A particularly popular dish is steamed fish served in a soy and spring onion hot oil, which originated from southern China where steaming is a common cooking technique. I have made my version of steamed sea bass cooked with a beer sauce. Try it with rice and my garlic oyster mushrooms.

Number Of Ingredients 12

1 (1-inch) piece fresh ginger, peeled and thinly sliced into long strips
1 spring onion (green), sliced into long strips
1 (1 1/4-pound) whole wild sea bass, scaled, gutted, cleaned and skin scored
2 tablespoons Shaohsing rice wine or dry sherry
Serving suggestion: Steamed wild and basmati rice, for service
2 tablespoons groundnut oil (peanut)
1 tablespoon freshly grated ginger
Zest of 1 lime
1 (12-ounce) bottle Chinese beer or any light beer
2 tablespoons light soy sauce
1 spring onion (green), sliced into long strips
Handful fresh cilantro leaves and stalks, coarsely chopped

Steps:

  • To make the bass: Either drape some of the ginger and spring onion strips across the fish or tuck them within the scores in the skin. Then, stuff the rest inside the cavity of the fish. Set the bass on a heatproof plate or dish and pour over the rice wine or sherry. Place the plate inside a large bamboo steamer and cover. Then, secure the steamer on top of a pan of boiling water, making sure the water does not touch the base of the steamer. Steam the fish for 8 to 10 minutes, depending on the size of the fish, until its flesh flakes when poked with chopsticks. Turn off the heat and leave the fish in the steamer.
  • To make the sauce: Heat the groundnut oil in a large pan or wok. Add in the ginger, and stir-fry for a few seconds, then add the lime zest, followed by the beer, and soy sauce. Stir and, as the liquid comes to the boil, add the spring onions and cilantro. At this point, switch off the heat immediately.
  • Remove the plate and fish from the bamboo steamer, pour the sauce over the fish, and serve immediately with some steamed rice.
  • If you don't have a large enough steamer, place the fish on a heatproof plate, and put on a roasting rack in a pan. Put the pan in the oven, and carefully pour boiling water into the pan. Cover with foil, and cook for 8 to 10 minutes at 400 degrees F, or until the flesh flakes when poked and has turned opaque.

3 ounces anejo tequila
1 1/2 ounces lime juice
1 1/2 ounces triple sec, such as Cointreau
1 teaspoon agave syrup
2 tablespoons granulated sugar
1/4 teaspoon salt
4 lime round slices
4 sugar cubes
1/2 ounce rum, such as Bacardi 151

Steps:

  • In a cocktail shaker with ice, add the tequila, lime juice, triple sec and agave syrup. Shake vigorously to combine. Strain into 4 tall shot glasses.
  • Mix the sugar and salt together onto a small plate. Dip each lime slice into the sugar mixture, shaking off any excess. Place a slice of lime on top of each of the shot glasses, then place a sugar cube on top of each lime. Pour a dash of the rum over each sugar cube. Using a long match or fire starter, ignite the sugar cubes, and when the sugar begins to caramelize, blow out the flame. Fold the lime slice and drop it into the shot with the sugar cube, and serve immediately.

1/2 pound jalapeno peppers (about 6 large)
1 small onion
6 garlic cloves
2 cups apple cider vinegar
1/2 bunch cilantro
1 teaspoon salt
1 lime, juiced

Steps:

  • Remove the tops from the peppers and cut them in half lengthwise. Clean out the seeds and ribs, give them a rough chop, and put them into a small saucepan. Roughly chop the onion and garlic and add it to the pan. Pour in the vinegar and bring it to a boil. Reduce the heat and simmer for 10 minutes. In the meantime, roughly chop the cilantro and put it into a blender along with the salt and lime juice. When the jalapeno mixture is cooked, add it to the blender. *Cover the blender, put a towel over the lid, and turn it on low. Once it is going, crank it up to the highest setting and puree for 3 minutes. Strain through a medium holed strainer and let cool. Pour into sterilized bottles and refrigerate. The hot sauce will keep for up to a month under refrigeration.
  • *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.
