FIVE MINUTE WHITE CHOCOLATE FUDGE WITH PISTACHIO AND CRANBERRIES
Saw Rachael Ray and Oprah make this on an Oprah holiday party show. It took me 7 minutes, but who's counting! Try other variations such as the original Recipe #146361 and Recipe #146387.

- Pour the chips, condensed milk and vanilla into a medium saucepan. Put the pan on the stove and turn the heat to low. (Stir occasionally while you prepare pan).
- Butter an 8-inch round cake pan with softened butter. (I found it easier to remove from the pan if you lined bottom with parchment paper and buttered the sides).
- Cover the empty condensed milk can with plastic wrap and put it in the center of the round cake pan.
- Stir the chips and milk until they melt together, about 3 minutes. Stir in pistachios and dried cranberries. Scoop the fudge into the cake pan all around the plastic-covered can in the center to form a wreath or ring shape. Let it be all bumpy on top. If the fudge moves the can off center, move it back in place.
- Cut the red cherries in half with scissors and the green cherries into quarters. Use the green pieces to make leaves and the red to make holly berries. Decorate the fudge with several groups of holly berry sprigs made from the cherries and garnish with pistachios between the sprigs.
- Put the fudge in the refrigerator and chill until firm (about a half hour). Remove the can from the center, then loosen the sides and bottom of the fudge with a spatula (you won't need to do this if you took my advice about the parchment paper!). Cut the fudge into thin slices to serve.

- MIX TOGETHER 1/2 CUP BUTTER OR MARGARINE 1 CUP BROWN SUGAR AND 4 TBSP MILK BRING TO A BOIL OVER MED HEAT IN POT ON STOVE.
- REMOVE POT FROM STOVE ADD 2 1/4 CUPS ICING SUGAR THEN DEPENDING ON FLAVOUR ADD FLAVOURING FROM LIST OF INGREDIENTS.
- STIR WELL POUR INTO A GREASED 8X8 PAN REFRIGERATE.

- Place chips in the bowl of your mixer. Have your whisk attachment ready to go. In a large (I used medium but it was close) saucepan, heat sugar, butter, salt and whipping cream till butter is melted, stirring occasionally over medium heat. Once butter is melted continue heating until you bring to a rolling boil. Continue boiling for 4 minutes (set a timer) stirring continuously. Watch that you don't let it boil over. If using a candy thermometer, the temperature should reach 230 degrees.
- Pour hot sugar mixture into your mixing bowl and whisk on med speed for about 2 minutes, until all chocolate is melted. Add vanilla, cranberries and pistachios and stir, just till combined. Pour into a parchment lined 8 x 8 pan.
- Let set until cooled then refrigerate for 2 hours until cooled. Remove fudge from pan using parchment paper to lift. Slice and enjoy. Store in airtight container.

- Place into an 8 x 8 inch square baking dish in a 'cross' shape. This is to help remove the fudge easily from the pan. If you increased the ingredients for more servings, you will need to use a larger pan.
- To a saucepan add the condensed milk over medium low heat and bring to a very low simmer, cook for 5 minutes.
- Add the white chocolate and stir until the chocolate has melted. Turn off the heat and stir in the vanilla extract, cranberries and pistachios. Pour the mix into the prepared pan and smooth the top.
