CREAMY NORWEGIAN FISH SOUP



Creamy Norwegian Fish Soup image

When we lived in Norway we used to eat lots of fish...this recipe reminds me of a fish soup which was very common there. You can use other fish and shellfish. The potatoes and tomatoes are ingredients I have been adding over the years and listed them as optional.

2 1/2 tablespoons butter
2 1/2 tablespoons plain flour
4 -5 cups fish stock or 4 cups vegetable stock
1 medium carrot, finely chopped in strips
1 -2 cup leek, finely chopped in strips
1 -2 potato, peeled and cut into small cubes (optional)
1 (14 ounce) can chopped tomatoes (optional)
12 peeled raw shrimp (approx)
12 mussels (approx) or 12 small scallops (approx)
4 -6 ounces catfish (or fish of your own choice)
1/2 cup heavy cream
1/4 cup chopped fresh parsley
salt and pepper
2 tablespoons sour cream (optional)
2 teaspoons lumpfish caviar (optional)

Steps:

  • Melt 2 tablespoons of the butter, add the flour, stir for about 2 minutes without browning the flour.
  • Add the fish stock at intervals, stirring all the time, let it boil gently for 5-10 minutes.
  • Melt the rest of the butter and saute the carrots and leek and potatoes, if using, for approx 10 minutes.
  • Add the tomatoes (if using) and simmer for another 5 minutes, then add the shrimps, mussels, fish and the cream.
  • Simmer for another 5 minutes, or until the fish and shellfish are tender.
  • Add the parsley and salt and pepper to taste.
  • Serve garnished with sour cream and the lumpfish caviar.

2 tablespoons butter
6 scallions, coarsely chopped
2 celery ribs, coarsely chopped
2 garlic cloves, minced
3 tablespoons all-purpose flour
16 fluid ounces clam juice
1 1/2 lbs new potatoes, peeled, scrubbed, and cut into 1/2-inch cubes
1/2 teaspoon dried thyme
1 bay leaf
1 lb cod fish fillet, cut into 2 inch chunks
1 cup milk
salt
pepper

Steps:

  • In a large saucepan, melt butter over medium-high heat.
  • Add scallions, celery, and garlic. Cook until tender (2-3 minutes).
  • Add flour; stir to coat.
  • Add clam juice and 2 cups water, whisking until smooth.
  • Add potatoes, thyme and bay leaf. Bring to a boil; reduce heat.
  • Simmer until potatoes are cooked (about 10 minutes).
  • Add fish; cover and cook until it flakes easily (about 8 minutes).
  • Pour in milk; cook until heated through.
  • Remove and discard bay leaf.
  • Season with salt and pepper, and serve immediately.

1 tablespoon butter
1 onion, chopped
1 carrot, chopped
2 potatoes, peeled and cubed
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon ground black pepper
3 tablespoons all-purpose flour
4 cups chicken stock
1 cup milk
1 cup frozen corn kernels
400 g haddock fillets, cubed (You may use whatever type of white fish you like)
2 tablespoons fresh parsley, minced

Steps:

  • In a large saucepan, melt the butter over medium heat.
  • Fry the onion, carrot, potatoes, garlic, salt and pepper, stirring occasionally, until the onion is softened, about 5 minutes.
  • Sprinkle with the flour and cook, stirring, for 1 minute.
  • Add the chicken stock and bring to a boil.
  • Reduce the heat, cover, and simmer until the potatoes are tender, about 10 minutes.
  • Add the milk, corn and fish.
  • Heat until steaming and the fish flakes easily when tested, about 5 minutes.
  • Add the parsley.

2 lbs haddock
2 cups water
2 ounces diced salt pork (or bacon)
2 onions, sliced
4 large potatoes, peeled and diced
1 cup celery, chopped
1 bay leaf, crumbled
1 teaspoon salt
fresh ground pepper
boiling water, as needed
3 cups milk
1 (13 ounce) can evaporated milk
2 tablespoons butter

Steps:

  • Simmer haddock in a fish-poaching pan for 15 minutes. Drain. Reserve fish, broth and bones.
  • In a 10-inch skillet, saute diced pork until crisp. Remove pork with a slotted spoon and reserve.
  • Saute onion in the pork fat until golden brown.
  • Add fish (flaked), bones, potatoes, celery, bay leaf, salt and pepper.
  • Pour in fish broth plus enough boiling water to make 3 cups of liquid and simmer for 30 minutes.
  • Add milk and evaporated milk and simmer for 5 minutes. Correct seasonings and remove bay leaf and ALL the bones.
  • Add butter. Serve in a heated soup tureen and sprinkle top with salt pork.

1 small onion, chopped
1 green bell pepper, seeded chopped

1 large parsnip, peeled chopped
1 small celeriac, peeled chopped

1 1/2 tablespoons Worcestershire sauce
2 lbs boneless skinless fish fillets, cut into 2 inch pieces (halibut, cod or haddock)

1/4 cup fresh parsley leaves, chopped
1 lemon, juice of
crusty bread, for serving

Steps:

  • Heat butter in a 6 qt saucepan over medium-high heat. Add garlic, celery, onions, peppers, and leeks, and season with salt and pepper.
  • Cook, stirring, until soft, 8-10 minutes. Add carrots, parsnips, celeriac, potatoes, stock, milk, cream, and Worcestershire; bring to a boil.
  • Reduce heat to medium, and cook, stirring occasionally, until vegetables are tender, about 25 minutes.
  • Add fish, and continue to cook, stirring gently, until fish is cooked through, 6-8 minutes. Stir in dill, parsley, lemon juice, and salt and pepper.
  • Serve with bread.

  • Heat a large pot over medium heat. Add oil and cook onion and leek for about 3-4 minutes. Then add garlic and cook for about 1 minute, stirring every now and then. Do not let brown! Transfer about half of the veggies to a blender cup; reserve.
  • Add broth and cauliflower to the pot and let cook over high heat for about 8-10 minutes or until tender. Transfer all the cauliflower and about 1 cup of the broth to the blender with salt, pepper, cayenne, and heavy cream. Blend with half of the reserved cooked veggies until smooth. Pour back into the pot.
  • Add the fish and carrots. Let cook over medium-high heat for about 5-6 minutes. Remove pot from the heat and stir in lemon juice. Garnish top of soup with fresh dill or chives. Serve fish soup by itself or with a hard-crusted bread.
