NORSK FISKEGRATENG (FISH AU GRATIN)
This is a very good way to get your serving of that important fish. I use Cod for this recipe, but any white, firm fish will do. The recipe comes from a book entitled "Trolldom in the Kitchen".

Steps:
- Flake the poached fish into a well greased baking dish.
- In a small saucepan, melt margarine, and add 1/2 cup flour.
- Gradually add the milk, salt, pepper and the beaten eggs.
- Beat thoroughly until smooth and lump-free.
- Pour over fish and top with a layer of buttered bread-crumbs OR grated cheese.
- Bake at 175°C (350°F) for 45 minutes.

Delicious with a green mixed salad and a perfect way to use up any leftover fish. From the Minnesota Scandinavian chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.

Steps:
- Lightly beat egg yolks and beat egg whites until stiff.
- Preheat oven to 350F and lightly butter a casserole dish.
- Melt butter; blend in flour, salt, pepper and sugar.
- Add milk gradually, stirring constantly and cook until thickened.
- Cook over very low heat an additional five minutes.
- Remove from heat and add beaten egg yolks and fish.
- Fold in stiffly beaten egg whites.
- Pour into prepared casserole, sprinkle with bread crumbs.
- Set casserole in a pan of hot water and bake until firm to the touch, 45 to 60 minutes.

- Preheat grill for medium-high heat.
- In a medium bowl, mix together the chili powder, oregano, onion powder, cayenne pepper, garlic powder, salt, and pepper. Blend in the softened butter.
- Apply this mixture to each ear of corn, and place each ear onto a piece of aluminum foil big enough to wrap the corn. Wrap like a burrito, and twist the ends to close.
- Place wrapped corn on the preheated grill, and cook 20 to 30 minutes, until tender when poked with a fork.
- Turn corn occasionally during cooking.

- preheat oven to 350F degrees.
- boil turnip in water 10 minutes, drain and mash well.
- melt butter in pan over med heat.
- add flour, stir for 2 minutes, add cream and mashed turnips.
- add onions, salt& pepper, remove from heat.
- stir in egg yolks.
- whisk egg whites in large bowl, add turnip mixturespoon into souffle dish, bake 40 minutes until puffed and golden.
SCAMPI AU GRATIN
We love Scampi and this is an easy and delicious way to prepare them. Luckily we can purchase fresh scampi at the Sydney Fish Markets. You can substitute prawns/shrimp if you cannot get scampi but watch the cooking time as scampi are larger.

- Preheat oven to 250 Degrees Celsius.
- Blend in a bowl butter, garlic and parsley.
- Add lemon juice and mix till well combined.
