CHEESY SEAFOOD BAKE
A creamy cheesy fish and shrimp casserole from Ireland.

Steps:
- Pour the milk into a large saucepan and add the onion, bay leaves and parsley stalks. Bring to a boil, then remove from the heat and let the milk stand to infuse with flavor.
- When cooled strain the milk through a sieve and discard the onion and herbs.
- Pre-heat the oven to 350° F. Grease a 2-quart casserole or a 13 X 9 baking dish with butter.
- Melt the butter in a large skillet. Add the flour and stir to blend forming a roux. Cook for 2 to 3 minutes stirring constantly.
- Gradually blend in the strained milk, stirring constantly to create a smooth sauce. Bring to simmering point then reduce the heat and cook gently for 1 minute stirring as the sauce thickens.
- Season with salt and pepper. Add the lemon juice and two-thirds of the grated cheese. Stir the sauce until the cheese melts and blends completely.
- Add the monkfish to the sauce and stir while cooking for 1 minute. Add the cod, green onions, and mushrooms and blend completely covering all of the ingredients in cheese sauce.
- Transfer the mixture to the buttered casserole dish. Bake in a 350° F oven.
- After 15 minutes add the shrimp evenly to the top of the casserole. Sprinkle with the remaining cheese.
- Bake for a further 20 minutes until the top is golden brown.
- Serve with a crispy side salad and Irish brown bread.

- Preheat oven to 350 degrees.
- In a bowl combine crushed crackers, Parmesan cheese, garlic salt, and Italian seasoning. Stir in melted butter.
- Arrange fish in a single layer in a baking dish. Sprinkle cracker mixture even over the fish fillets. Gently press down into the fish.
- Bake for 15-20 minute, until the fish is flaky and cooked through.

BAKED CHEESE CRACKERS

- Preheat the oven at 350F/175C
- In a food processor add flour, salt, butter and the grated cheese. I used sharp Cheddar cheese but you can also use Gouda or Edamer cheese
- Let the food processor work and slowly add the water, 1 tablespoon at the time
- In less than 5 minutes you will obtain a nice compact dough
- Wrap in plastic paper and refrigerate for 1 hour
- Place the dough in between two foils of parchment paper. You might want to cut the dough in 3/4 pieces if you do not have a big working station. Roll the dough with a rolling pin in order to obtain a thin 1/8 inch layer
- Using a small cookie cutter (I used the small ones for fondant) cut out the shapes that you like.
- Place the small crackers on a parchment paper or silky mat on a baking sheet, one next to the other, leaving some space in between.
- Using a toothpick poke some holes in each cracker. This is a very important phase not to get the crackers doughy but fluffy and light instead.
- Bake the crackers for 20 minutes until lightly golden and crispy
- Check at 15 minutes, every oven is different!!
- Let cool on baking sheet, they will keep crisping up while cooling down
RITZ FITZ (OVEN-FRIED FISH FILLETS)
Steps:
- Preheat oven to 350 degrees F.
- Melt the butter in a 9 by 13-inch pan in the oven. While it melts, combine everything else except the fish in a pie pan. Dip the fish around in the melted butter, dip each piece in the crumb mixture, and return it to the baking pan. Bake the fillets for 20 to 25 minutes, or until the fish flakes with a fork. Serve with lemon wedges, and good luck to you.

- Preheat oven to 400 degrees F.
- Stack the slices of American cheese and cut it into 16 small squares. Separate the pieces, and transfer them to a small bowl. Add the salt, chili powder, and garlic powder toss to combine. Arrange the 32 cheese pieces in 4 rows of 8, on a parchment paper-lined baking sheet, leaving as much space in between each as possible.
- Stack the Colby-Jack slices and cut them into about 24 small pieces. Arrange them on another parchment paper-lined baking sheet in 4 rows of 6¿without any seasonings.
- Bake both until well-browned and crispy, about 7 and 7 1/2 minutes. If undercooked, they'll be soggy, so don't be afraid to check them and put them back in for more time, if needed.
- Cool the crisps and crackers completely before serving¿as they cool, they'll crisp up. Store on the counter in an airtight container for a few days.
