1 small red onion, thinly sliced
1 skinned salmon fillet (about 2 pounds)
1/2 teaspoon salt
1 medium navel orange, thinly sliced
1 cup pomegranate seeds
2 tablespoons extra virgin olive oil
1 tablespoon minced fresh dill

Steps:

  • Preheat oven to 375°. Place a 28x18-in. piece of heavy-duty foil in a 15x10x1-in. baking pan. Place onion slices in a single layer on foil. Top with salmon; sprinkle with salt. Arrange orange slices over top. Sprinkle with pomegranate seeds; drizzle with oil. Top with a second piece of foil. Bring edges of foil together on all sides and crimp to seal, forming a large packet., Bake until fish just begins to flake easily with a fork, 25-30 minutes. Be careful of escaping steam when opening packet. Remove to a serving platter; sprinkle with dill.

Easy Baked Fish with Garlic and Basil image

Easy, tender baked fish infused with garlic and basil. The secret to this juicy fish is in the quick fish marinade with a few spices, garlic, fresh basil, a little citrus and extra virgin olive oil. Serve it with lemon rice and my big white bean salad or any bright salad you love!

2 lb fish fillet like halibut
Salt and pepper
1 1/2 tsp dry oregano
1 tsp ground coriander
1 tsp sweet paprika
10 garlic cloves, minced
15 basil leaves, sliced into ribbons
6 tbsp extra virgin olive oil (I used Private Reserve Greek EVOO)
Juice of 1 lemon
2 bell peppers any color, sliced (I used 1 red and 1 green bell pepper)
2 shallots, peeled and sliced

Steps:

  • Pat fish fillet dry and season with salt and pepper on both sides.
  • Place the fish in a large zip-top bag. Add the oregano, coriander, paprika, minced garlic, basil, extra virgin olive oil and lemon juice. Zip the bag shut and massage to be sure the fish is evenly coated in the marinade. Marinated for 30 minutes or up to 1 hour in the fridge (see notes).
  • Heat oven to 425 degrees F.
  • Arrange bell peppers and shallots in the bottom of a 9 x 13 baking dish. Place the fish on top and pour the marinade over it.
  • Bake in heated oven for 15 minutes or until fish is done and flakes easily.

A low-fat traybake supper that's full of flavour. Combine lean white fish with cherry tomatoes, a pesto crumb, green beans and broccoli

2 x 400g cans cherry tomatoes
1 tbsp balsamic vinegar
3 tbsp basil pesto
2 tbsp breadcrumbs
4 skinless firm white fish fillets (about 140g each)
320g pack green bean
320g pack thin-stemmed broccoli

Steps:

  • Heat oven to 200C/180C fan/gas 6. Tip the tomatoes into a roasting tin, and stir in the vinegar and 1 tbsp of the pesto. Season, mix, then bake in the oven for 10 mins.
  • Mix together the remaining pesto and the breadcrumbs, then press onto each fish fillet. Add to the roasting tin and return to the oven for 12-15 mins until the fish flakes easily and the topping is slightly crisp.
  • Meanwhile, boil the green beans and broccoli, then drain. Serve the bake scattered with the vegetables.

Fish Stuffed With Herbs, Walnuts and Pomegranate image

During Nowruz, the Persian New Year, it's traditional to eat fish, a symbol of life. This version, adapted from the chef Hanif Sadr, is stuffed with bij, a mixture of chopped herbs, walnuts and pomegranate molasses that forms the base of many northern Iranian dishes. After a short turn in a hot oven, the fish emerges with crisp, brown skin. The sweet and sour herb filling contrasts with the delicate, flaky fish without overwhelming it. You can use a food processor to chop the herbs if you'd like. It's key to do the herbs in batches (don't overfill the bowl of the processor), to pulse rather than run and to stop and scrape a few times for even chopping. Work until the pieces are nice and small, about an eighth of an inch or the size of a small sunflower seed, but not so far that they begin to break down and form a paste.

4 tablespoons olive oil, more as needed
2 large shallots, minced
Salt
1/2 cup very finely chopped parsley leaves and tender stems (about 1 small bunch)
1/2 cup very finely chopped cilantro leaves and tender stems (about 1 bunch)
1/4 cup very finely chopped dill leaves and tender stems (about 1 small bunch)
1/3 cup very finely chopped chives (about 1 bunch)
2 sprigs tarragon, leaves stripped and very finely chopped
1/4 cup very finely chopped scallions (about 3 scallions)
4 cloves garlic, minced
1/2 cup walnuts, finely ground in a food processor
1/2 teaspoon finely grated orange zest
1/2 cup freshly squeezed orange juice (about 1 orange)
1/4 cup freshly squeezed lime juice (about 2 limes)
2 tablespoons pomegranate molasses
2 tablespoons tobiko (flying fish roe), optional
4 whole branzino or rainbow trout, 1 pound each, butterflied

Steps:

  • Heat oven to 475 degrees. Set a large frying pan over medium heat and add 2 tablespoons olive oil. When oil shimmers, add shallots and a pinch of salt. Cook, stirring occasionally, for 10 to 12 minutes until the shallots are tender and golden brown.
  • Meanwhile, place herbs, scallions, garlic and walnuts in a large bowl. Stir well with a wooden spoon to combine.
  • Add remaining 2 tablespoons oil to the pan, then add the herb mixture. Add a generous pinch of salt and continue to cook, stirring occasionally, until herbs begin to soften, about 4 minutes.
  • Combine zest, orange juice and lime juice in a small bowl or glass. Add 6 tablespoons of the juice mixture to the herbs and cook another 4 minutes, until the taste of raw garlic subsides and the liquid simmers away. Add pomegranate molasses and tobiko, if using. Cook, stirring, for another 2 minutes, until molasses is absorbed. Remove from heat and let cool.
  • Season the fish with salt, inside and out. Lay the fish open on a cutting board and drizzle 1 tablespoon juice mixture onto the flesh of each fish. Spoon about 1/4 cup stuffing inside each fish and tie closed with kitchen twine spaced 2 inches apart.
  • Lightly drizzle a baking sheet with olive oil and lay fish on the sheet. Drizzle remaining juice over fish. Roast until flesh is opaque, flaky and firm to the touch, 18 to 20 minutes. Serve hot or at room temperature.

120g quinoa, rinsed
320g fine green beans, trimmed and cut into thirds
15g pack coriander
15g fresh ginger, peeled and chopped
1 lemon, juiced
½ tsp ground cumin
1 green or red chilli, seeds removed and chopped
1 tsp ground coriander
4 wild skinless salmon steaks (460g)
1 tbsp extra virgin olive oil
2-3 courgettes (320g), halved and sliced
2 red onions, finely chopped
2 tsp garam masala
2 tsp vegetable bouillon powder
400g can chickpeas, drained
150g pomegranate seeds

Steps:

  • Heat the oven to 200C/180C fan/gas 6 and line a baking sheet with baking parchment. Boil a saucepan of water, add the quinoa and cook for 5 mins. Add the beans, bring back to the boil, then simmer for 10 mins. Remove from the heat and leave to stand for 5 mins, then drain, rinse and drain again.
  • Meanwhile, blitz the fresh coriander, ginger, lemon juice, cumin, chilli and ground coriander in a small bowl using a hand blender. Arrange the salmon steaks on the baking sheet, then spread a teaspoon of the coriander mix on each one, saving the rest for later. Bake for 8-10 mins, depending on the thickness of the salmon.
  • Heat the oil in a non-stick pan and stir-fry the courgettes and onions for 8-10 mins over a medium heat until softened and starting to colour. Stir in the garam masala, bouillon powder and remaining coriander mixture, then add the chickpeas and cook for a minute. Tip into a serving bowl and stir through the cooled quinoa, green beans and pomegranate seeds. Spoon half onto two plates and flake over 2 of the salmon fillets.
  • Reserve the remaining two portions of quinoa salad and salmon to eat cold for lunch the next day, if you like. Will keep chilled for up to two days.

3 large red chilies
6 garlic cloves
2 inches gingerroot
2 tablespoons lime juice or 2 tablespoons lemon juice
1 teaspoon turmeric powder
4 -6 white fish fillets
flour, for coating
4 tablespoons vegetable oil
1 1/2 inches gingerroot, grated
2 teaspoons garlic, finely chopped
2 teaspoons cumin seeds, dry-roasted
3 tablespoons pomegranate seeds
3 large tomatoes, chopped
2 tablespoons basil leaves, finely chopped
2 tablespoons coriander leaves, finely chopped
salt

Steps:

  • Mix the garlic chili, ginger, and lemon or lime juice into a paste.
  • Then mix in the turmeric powder.
  • Coat fish fillets with paste and let sit for 30 minutes.
  • In a heavy-bottomed frying pan, heat the oil.
  • Sieve the flour lightly over the fillets and fry on both sides until golden (2 - 3 minutes).
  • Place on a serving dish and cover with foil to keep warm.
  • Reserve cooking oil.
  • If needed, add one tablespoon oil to the reserved oil and heat.
  • Add ginger, garlic, cumin and pomegranate seeds.
  • Stir-fry 1 minute then add the tomatoes, basil, coriander leaves and salt.
  • Simmer gently for 2 minutes and pour over the fillets.
