2 (4 ounce) fillets flounder
2 tablespoons lemon juice
2 tablespoons chopped garlic
2 teaspoons ground cumin
1 teaspoon paprika
½ cup all-purpose flour
1 teaspoon dried dill weed
¼ teaspoon cayenne pepper, or to taste
1 egg, beaten
1 tablespoon water
1 cup vegetable oil for frying

Steps:

  • Place flounder fillets in a small glass dish. Mix lemon juice, garlic, cumin, and paprika in a small bowl; pour over flounder fillets. Cover dish with plastic wrap and marinate flounder in refrigerator for 2 hours.
  • Mix flour, dill weed, and cayenne pepper together on a piece of waxed paper.
  • Beat egg and water together in a wide bowl.
  • Heat oil in a large skillet over medium heat.
  • Gently press the flounder fillets into the flour mixture to coat; shake to remove excess flour. Dip into the beaten egg to coat and immediately return to the flour mixture to coat.
  • Fry flounder in hot oil until the fish flakes easily with a fork, about 5 minutes per side.

⅓ cup vegetable oil
⅓ cup bourbon whiskey
4 (4 ounce) fillets halibut

Steps:

  • In a shallow dish, mix the soy sauce, vegetable oil, and bourbon whiskey. Place the halibut fillets in the dish, and marinate 30 minutes in the refrigerator.
  • Preheat the grill for high heat.
  • Lightly oil the grill grate. Place halibut on the grill, and discard marinade. Cook 5 minutes on each side, until easily flaked with a fork.

Fish Marinade for People Who Hate Fish image

My husband and I love fish and buy it frequently. Sometimes, we end up getting a more fishy fish than we like and hate to throw it away. So, this is something we've come up with to marinate the fish with to make it totally yummy, despite the funky-fish-flavor factor. :D My step-daughter hates fish and has always refused to eat it. She tried a piece of Tilapia marinated in this and said it was honestly good. That's saying a lot if she ate it! Hope you find this as useful as we do. It's great on a nice piece of fish OR for use on that older fish you found in the freezer that you thought you'd have to throw out because it's so, shall we say, reminiscent of the sea? ;) We always bake the fish in a glass dish with the marinade poured over it. Let me know what you think.

1 tablespoon lemon juice (you can leave this out and give each person a lemon wedge instead if you like)
3 large garlic cloves, minced
1 shallot, minced
2 teaspoons basil

6 tablespoons annato seeds, soaked in water overnight
1 tablespoon whole black peppercorns
6 whole allspice berries
1 teaspoon cumin seeds, toasted
10 garlic cloves, peeled, minced
1 tablespoon Mexican oregano
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
2 bay leaves
1 cup orange juice
1/2 cup white wine vinegar
1 cup vegetable oil
6 whole red snapper or grouper, cleaned, scaled, split lengthwise
Thinly sliced lime (garnish)
Thinly sliced red onion (garnish)

Steps:

  • Grind annatto seeds, peppercorns, allspice berries and cumin with mortar and pestle. Transfer to large bowl. Mix in oregano, cinnamon, cloves and bay leaves. Add orange juice, vinegar and vegetable oil and whisk until well blended. Open fish (as for book) and arrange in large glass baking dish. Pour marinade over. Cover and refrigerate 2 to 4 hours.
  • Preheat oven to 375 degrees F. Remove fish from marinade; reserve marinade. Season fish with salt and pepper. Bake fish until cooked through, basting occasionally with marinade, about 45 minutes. Transfer fish to plates. Garnish with lime and red onion.

10 large red Thai chilies, seeded and chopped
6 cloves garlic, peeled and chopped
15 shallots, peeled and chopped
1 4-inch piece fresh turmeric, peeled and chopped, or 1 1/2 teaspoons ground turmeric
1 medium tomato, skinned and seeded
1 4-inch piece ginger, peeled and chopped
1 tablespoon coriander seeds
10 candlenuts
1 teaspoon dried shrimp paste
1/4 cup vegetable oil
2 stalks lemongrass, peeled and bruised
1 teaspoon palm sugar
2 tablespoons tamarind paste
1 1/2 teaspoons salt

Steps:

  • In a food processor, combine the chilies, garlic, shallots, turmeric, tomato, ginger, coriander, candlenuts and shrimp paste. Process until the ingredients are well ground but not pureed.
  • In a medium-size saute pan, heat the oil over medium heat and add the chili mixture, lemongrass and palm sugar. Cook, stirring occasionally, for 10 minutes. Remove from the heat and cool to room temperature. Remove the lemongrass stalks and stir in the tamarind paste and salt. Use as a marinade for seafood and as a condiment. Store, covered, in the refrigerator for up to three weeks.

Steps:

  • Combine all ingredients and whisk well.
  • Add item to be marinated and turn to cover each side.
  • Refrigerate, covered, for several hours, turning item to be marinated several times.

This Mediterranean marinade couldn't get any easier. I created it for the Zaar World Tour 6, in honor of our team, Zee Zany Zesty Cookz. (Cute, huh?) I personally think this marinade works best on a firm, white fish, ie. swordfish, etc... The capers and lemon, added while cooking the fish, complement each other so very well. I hope you enjoy! *Note - the amounts work well for about 6 fish filets. I haven't included the fish in the recipe, but did include instructions for how to cook your fish.*

fresh ground black pepper, to taste
1 cup dry white wine (don't use a sweet wine)
1 fresh rosemary sprig, leaves finely chopped
4 garlic cloves, finely chopped
1/4 cup extra-virgin olive oil
2 tablespoons fine dry breadcrumbs
3 tablespoons drained capers, chopped
1 lemon, juice of

Steps:

  • Sprinkle your fish with salt and pepper, to taste.
  • Place your fish in a bowl, or large ziplock bag, along with the wine, rosemary leaves and garlic. Marinate the fish for at least 1 hour.
  • Drain the fish, reserving the marinade.
  • Brush the skillet with some olive oil and heat it to med. to med. high.
  • Sprinkle and rub the fish with a dusting of breadcrumbs before cooking the fish on the stovetop.
  • Cook fish on both sides, while basting with reserved marinade. Cook until the fish flakes easily with a fork (about 10-15 minute depending on your heat).
  • Whisk the rest of the oil with the lemon juice and capers, then pour over the fish and cook for a few more minutes.
