FIREHOUSE STUFFED BURGERS
I work at FHFD Station 5. These hamburgers are a favorite! The guys like them because they are filling and they bring a little heat.

Steps:
- Cut bacon into small bite-size pieces. place into frying pan, cook over medium-high heat. Once bacon is about halfway done, add diced onion, garlic and diced jalapeno peppers. (I fire roast my peppers before dicing) While this is cooking, prepare hamburgers into patties. Make double patties for each hamburger. Once onions have caramelized, add a generous spoonful of the mixture between two patties, add cheddar slices. (Monterrey Jack Cheese is also delicious)Pinch the edges of patties to seal in the flavor. Grill to desired taste.
- Cut Kaiser Rolls in half. Prepare condiments. I usually make fresh guacamole while I'm slicing vegetables.
BRONX FIREHOUSE STUFFED CHICKEN BREASTS
Easy Feta and spinach stuffed breasts baked in the oven create their own gravy. Got this recipe from Bam off the old Top Secret Recipe board many years ago. Made it last night and thought I'd share.

Steps:
- Pound chicken breasts flat. Saute spinach in olive oil and garlic powder for 4 minute (I use fresh chopped garlic) Spread spinach equally over chicken breasts. Sprinkle 1/4 cup feta cheese over each. Roll chicken breasts closed and seal firmly with toothpicks. Slightly brown chicken breasts on all sides in butter. Place breasts in ungreased baking dish with tight lid and bake covered for 1 hour at 350 degrees. (do not add liquid; will make its own).
- Gravy.
- Saute mushrooms in butter. Add flour, stirring until well coated. Add chicken broth from baking dish and simmer until thickens. Pour over chicken breasts to serve.
- Great served with rice to soak up the gravy.

STUFFED HAMBURGERS

Steps:
- Mix seasoned salt into ground beef.
- Separate beef into four parts.
- Take one fourth of the beef mixture and split in half.
- Flatten each one out into a small hamburger patty.
- Mix together cream cheese, mustard and horseradish until smooth.
- Add a spoonful to one of the patties.
- Place the other patty on top of the mixture and pinch sides together to seal.
- Repeat steps 3-5 until you have four stuffed burgers.
- Cook on grill.
- Extra cream cheese mixture can be served on side with onions, tomatoes, lettuce and any other toppings you may desire.

- Preheat oven to 350F degrees.
- In a large bowl, combine egg, bread crumbs, the 1/2 cup pasta sauce, garlic and rosemary.
- Remove casing from sausage.
- Add ground beef and sausage, mix well.
- Press 2/3 of the mixture evenly in the bottom of an 8x4x2-inch loaf pan.
- Add cheese cubes.
- Add the 1/3 mix left.
- Mix the remaining ingredients and spread on top.
- Bake 55 minutes.
FIREHOUSE STUFFED PEPPERS
A sausage stuffed pepper recipe shared by the firemen that my husband works with. We like this recipe with anaheim peppers, but have also used bell peppers. This is excellent with a pan of skillet corn bread.

Steps:
- Cook and drain sausage, return to hot frying pan.
- Add cream cheese and stir into sausage until melted.
- Add black pepper to sausage mixture.
- Fill peppers with the sausage mixture and bake at 350 degrees for 15 to 20 minutes. ( you want the peppers to be crisp-tender).
- Add tobasco sauce to each pepper to taste.
- This is excellent served with cornbread and butter.
