If you have not tried fire roasted tomatoes, you are really missing out. In my opinion, the roasting brings out the sweetness of the tomatoes and it is much less acidic. This recipe makes enough for about 3/4 to 1 pound of pasta. A wonderful tasty meal in 30 minutes.

2 garlic cloves, minced
1 small onion, chopped
2 tablespoons olive oil
1 (14 ounce) can fire roasted diced tomatoes
1 lb Italian sausage, removed from casings
1 (8 ounce) can tomato sauce
1 (8 ounce) can water
salt and pepper
2 tablespoons fresh basil, chopped

Steps:

  • Saute garlic and onion lightly in olive oil.
  • Remove from pan and place in blender with tomatoes; blend and set aside.
  • In same pan as onion mixture was cooked, crumble and saute Italian sausage til browned.
  • Add tomato mixture and 8oz can of sauce and water to pan.
  • Salt and pepper to taste and add chopped basil.
  • Simmer for 30 minutes; add to pasta and enjoy!
  • Note: Be careful how much salt you add - the sausage is salty also.

In a search for fire roasted tomatoes for my recipe for Recipe #390602, I found this homemade version. Fire roasted tomatoes add a smoky flavor to a variety of foods. They cook quickly on a gas range or charcoal grill. Much more economical than store bought; freezable, too. p.s. Using any other tomato probably will not work for they turn out mushy.

roma tomato, any amount needed (work best because they have dense, meaty flesh and few seeds that hold up well on the grill)
olive oil

Steps:

  • Slice the tomatoes in half lengthwise (from stem to tip) and brush the cut sides with olive oil. Place the tomatoes cut side down over a medium flame on a gas grill. If using a charcoal grill, place the tomatoes in the middle of the grill over briquettes that are medium-hot.
  • When the tomatoes develop dark char marks (about 5 to 8 minutes depending on size and heat of grill). Continue cooking until the skins begin to blacken in spots. Then, remove the tomatoes from the grill, pile them in a bowl, tightly cover with plastic wrap and set aside.
  • When the tomatoes are cool enough to handle, peel off the blackened skins and dice the flesh, making sure to reserve the juices.
  • Use immediately or pack tomatoes in a freezer proof container with juices.

1 tablespoon olive oil
1 large onion, chopped
3 cloves garlic, minced
2 cups vegetable broth (such as Penzy's®)
2 (14.5 ounce) cans fire-roasted diced tomatoes
2 tablespoons chopped fresh cilantro, divided
1 teaspoon white sugar
¼ teaspoon red pepper flakes
½ cup heavy whipping cream

Steps:

  • Heat olive oil in a large saucepan over medium heat. Cook and stir onion and garlic in hot oil until fragrant, 2 to 3 minutes.
  • Pour vegetable broth over the onion mixture; add tomatoes, 1 tablespoon cilantro, sugar, and red pepper flakes. Bring the mixture to a boil, reduce heat to medium-low, place a cover on the saucepan, and simmer until the tomatoes are really soft, about 15 minutes.
  • Pour tomato mixture into a blender no more than half full. Cover and hold lid in place; pulse a few times before leaving on to blend. Puree in batches until smooth and return to the saucepan.
  • Put pureed soup over medium heat and cook until hot, about 5 minutes. Stir remaining tablespoon cilantro and the heavy cream into the soup.

Los Cucos is my favorite TexMex restaurant in Houston, and I used to eat there every 2 weeks, just so I would order a pint of red salsa to go to take home with me. I was addicted to the stuff, it's the best salsa in the world. I finally mastered my own version, which tastes nearly identical to Los Cucos's red salsa.

5 large Roma tomatoes, halved lengthwise
¼ large white onion
1 jalapeno pepper, stem removed
⅓ cup chopped fresh cilantro
1 lime, juiced
1 ½ teaspoons garlic salt, or to taste

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler to high.
  • Spray a 9x13-inch glass casserole dish with cooking spray. Arrange tomatoes in the prepared dish with cut sides down. Add onion and jalapeno.
  • Broil until tomato skins are blackened and blistered, 10 to 15 minutes. Remove onion and jalapeno halfway through cooking time, once skins are slightly softened.

2 pounds tomatoes (about 6 medium)
1 jalapeno pepper
1/2 cup fresh cilantro leaves
2 green onions, cut into 2-inch pieces
4 garlic cloves, peeled
1 chipotle pepper in adobo sauce
1 can (4 ounces) chopped green chilies
2 tablespoons lime juice
1 tablespoon olive oil
1/4 teaspoon salt
Tortilla chips

Steps:

  • Grill tomatoes and jalapeno, covered, over medium-hot heat for 8-12 minutes or until skins are blistered and blackened, turning occasionally. Immediately place in a large bowl; cover and let stand for 20 minutes., Peel off and discard charred skins. Discard stem and seeds from jalapeno; cut tomatoes into fourths. Set jalapeno and tomatoes aside. , Place the cilantro, onions and garlic in a food processor; cover and process until blended. Add the chipotle pepper, tomatoes and jalapeno; cover and pulse until blended., Transfer to a large bowl; stir in the chilies, lime juice, oil and salt. Cover and refrigerate for at least 1 hour.   • In the same pot, over medium-low heat, “sweat” onions, carrots and celery with juice from sausage, or 1 Tbs. olive oil, until vegetables are very soft, translucent, and onions begin to caramelize. Stir frequently. (about 30 minutes.) Add a healthy pinch of salt and pepper. Stir in minced garlic and cook an additional 2 minutes. Set vegetable mixture aside.
  • While vegetables are sweating, gently squeeze the seeds out of the whole tomatoes. (Reserve the liquid.) Place tomatoes on a foil lined 15 x 9 x 2 inch jelly roll pan. Broil until the tomatoes begin to blacken in spots, and then stir to turn them over. Repeat this step again until the tomatoes have a bit of black on all sides. (about 15 minutes total.)
  • Place vegetables, fire roasted tomatoes, crushed tomatoes, and tomato puree in the empty stock pot. Then add dried oregano and basil, along with another healthy pinch of salt and pepper. Sprinkle in a few red pepper flakes, if using. Puree with a hand (“stick”) blender (or in batches in a food processor or blender,) until smooth. The sauce will be very thick. Add some of the reserved tomato juice if you like your sauce a bit thinner.
