Ingredients

4 cups unsalted mixed nuts (such as almonds, walnuts, cashews, peanuts)
4 tablespoons (1/2 stick) unsalted butter
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cinnamon
3 tablespoons brown sugar

Steps:

Preheat the oven to 400 degrees F.
Spread the nuts out on a large baking sheet. Bake until the nuts are lightly toasted, about 8 to 10 minutes.
In the meantime, melt the butter in a small saucepan over low heat. Add the remaining ingredients and stir to combine. Transfer the nuts to a serving bowl. Pour in the butter and toss to coat evenly. Serve warm or room temperature.

Tear off an 18-inch-long piece of heavy-duty foil. Toss 2 cups unsalted roasted mixed nuts with 2 tablespoons olive oil, 1 rosemary sprig, 2 wide strips lemon zest, 2 crushed garlic cloves, 1 teaspoon kosher salt and a pinch of red pepper flakes on the foil. Bring the two short ends of the foil together and fold to seal, then fold in the sides. Grill over medium heat, flipping occasionally, until the nuts are hot and toasted, 8 to 10 minutes. Carefully open and sprinkle with flaky salt.

1 tbsp sunflower oil
1 tsp ground cinnamon
½ tsp mixed spice
400g mixed nut , try almonds, Brazil nuts and cashews
2 tbsp honey

Steps:

Heat oven to 140C/120C fan/gas 1. Mix the oil with the spices, then stir in the nuts and drizzle over half the honey. Spread over a baking sheet and cook for 10 mins.
Remove from the oven and drizzle over the remaining honey, then return to the oven and cook for a further 10 mins. Allow to cool completely.
