- Preheat the oven to 350 degrees F.
- In a casserole dish, mix together the potatoes, oil, garlic, parsley, salt, and pepper. Roast for 20 minutes or until the potatoes are tender.
FINGERLING POTATOES WITH PARMESAN BUTTER
Lately I've been getting a lot of these marvelous fingerling potatoes from my organic delivery company. In looking for different ways to prepare them, I came up with this simple and delicious recipe.

Steps:
- 1. Scrub potatoes but do not peel; dry off and set aside.
- 2. In a small saucepan, melt butter. Add salt and pepper; stir.
- 3. Roll potatoes in butter and place on a baking pan that has been sprayed with cooking spray.
- 4. Using a pair of tongs, turn the potatoes as you sprinkle them with the cheeses and then the rosemary.
- 5. Bake in a preheated 350-degree oven for about 40 minutes or until fork-tender. Serve with more butter or sour cream.
- 6. May also bake in a hotter oven (450) for 20 minutes.

- For the grilling method: Preheat grill to 400 degrees Wash your potatoes, then pat them dry. Place potatoes in a large bowl, then drizzle them with olive oil, garlic powder and salt and pepper. Place potatoes onto a large piece of foil, then add another large piece of foil on top. Seal the edges by folding a piece of foil together. Use a fork or knife to poke a hole at the top of the foil to allow some steam to escape. Place over direct heat on the preheated grill and grill for approximately 20-25 minutes or until potatoes are fork tender. This will vary depending on how large your fingerling potatoes are. Serve immediately.
- To roast potatoes in the oven: Preheat oven to 425 degrees Generously grease a large baking sheet with olive oil.Wash your potatoes, then pat them dry. Place potatoes in a large bowl, then drizzle them with olive oil, garlic powder and salt and pepper. Add them to prepared baking sheet. Roast potatoes in the oven for 20-25 minutes, stirring potatoes halfway through. Potatoes are done when they are fork tender.

- Place potatoes in a large bowl or a ziplock bag and drizzle them in 3 tablespoons of avocado oil. Toss the potatoes until evenly coated, then add the garlic powder, onion powder, Italian Seasoning, Parmesan cheese, salt and pepper. Toss again until the potatoes are evenly coated.
- Grease a large baking sheet with another 3 tablespoons of avocado oil, spreading it evenly. Remove potatoes from the bowl or ziplock bag onto the prepared baking sheet, squeezing out as much of the seasoning from the inside of the bag as possible. Spread out the potatoes in a single layer on the baking sheet.
- Bake at 425 degrees for about 20 minutes, or until the edges of the potatoes begin to brown. Using a spatula, turn the potatoes and cook for another 15-20 minutes so the other side can brown.

- Rinse and dry the potatoes. Trim off any bad parts (do not peel). Cut the potatoes in half lengthwise.
- Transfer the potatoes to a large bowl. Add the oil, garlic, ½ teaspoon salt, thyme, and pepper. With your fingers (easiest) or a large spoon, toss to combine.
- Transfer the potatoes to a large rimmed baking sheet or roasting pan. For best results, flip the potatoes so the cut sides are flat against the pan. Make sure the pieces do not touch.
