FILIPINO CORNED BEEF HASH OVER RICE
A dish that combines American canned corned beef and Spanish influenced "sofrito" (basic sauce) of garlic, onions, and tomatoes. This is a Filipino dish that is traditionally eaten any time of the day (breakfast, lunch, or dinner). It's very simple and comforting!

Steps:
- Place corned beef in a bowl, pull it apart with a fork, and set aside.
- In a pan, on medium-low heat, sauté potatoes in oil for about 2 minutes, and season with salt and pepper.
- Add garlic, sauté for about 30 seconds.
- Add onion rings and sauté for a minute.
- Add the tomatoes and sauté for a minute.
- Throw in the corned beef and sauté with the other ingredients for 2 minutes.
- Season with salt and pepper to taste.
- Set heat on low, pour in water, and let the mixture simmer for 2-3 minutes just until the potatoes are perfectly cooked, most of the water is absorbed, and the mixture is slightly moist.
- Serve over white rice.
- Enjoy!

- Heat oil in a large skillet over medium-high heat. Add onion and garlic, and cook until fragrant. Stir in the tomatoes and potatoes, and cook for 7 to 10 minutes until potatoes are softened. Add the corned beef, and flake into pieces. Cook for another 10 minutes, stirring frequently. Season with salt and pepper, and serve.

CORNED BEEF AND RICE
Canned corned beef used to be inexpensive and something to have in the pantry to fall back on. This is an easy 30 minute meal to feed a family. I hope you enjoy it as much as my family does!

Steps:
- 1. Cook desired amount of rice in a rice cooker or saucepan. For 4 svngs I use 2 cups rice and 4 cups water. Bring water to a rapid boil. Add rice and stir. Bring back to a boil. Cover with a tight lid and turn heat to low. Cook for 20 minutes. Do not lift lid during cooking time. Turn out into a serving bowl and fluff the grains.
- 2. Slice the onion thinly. Mince the garlic or use a microplane. Roughly chop the tomatoes. Remove the corned beef from the can and slice it into 4 pieces.
- 3. Heat a medium saucepan over medium high, add oil. Add onions and stir cooking for 3-4 minutes. (A little browning is not a bad thing) Add garlic and tomato and continue cooking for 2 minutes.
- 4. Add Corned beef, potatoe, salt and pepper and stir around to mix, cooking another 2-3 minutes. Add water and bring to a boil. Cover and turn heat down to medium, cooking for 20 minutes. Uncover and test for seasoning. Serve over white rice.
CORNED BEEF HASH
My mom used to make this quick and easy dish for us all the time when we were growing up. I love to cook my mothers recipes as it brings back wonderful childhood memories. I love this dish on top of cooked, plain white rice.

- Add in the onions and tomatoes and continue cooking and mixing well.

- Cook the potatoes in boiling, salted water for about 10 minutes until tender. Drain.
- Heat the oil and saute the onion for a few minutes until transparent. Lift out with a slotted spoon and put in a bowl.
- Add the corned beef, tomatoes (with their juice), salt and pepper to the onion and mix well. Turn the mixture into an ovenproof dish.
- Pre-heat oven to 200°C (400°F) or Gas No 6.
- Mash the potatoes, then beat in the milk and beaten egg to make a soft fluffy consistency.
- Spoon the potato on top of the corned beef mixture and level off with a fork.
- Cook for about 25 minutes until the potato is brown and crispy.

- Peel potatoes and cut into 1" cubes.
- Chop onion.
- Heat iron skillet over high heat until hot to prevent sticking.
- Crumble the corned beef and place in the skillet, add potatoes and onion.
- Cover with water and bring to a boil.
- Turn heat down to barely boiling and cook until the potatoes and onions are done.
- Stir occasionally to prevent sticking and add more water if needed.
