MEXICAN FIESTA RICE

Make this tasty Mexican rice to serve a crowd. Our recipe is vegan but if everyone you're cooking for eats meat, some chopped bacon in with the onions works well

Number Of Ingredients 10

2 tbsp olive oil
1 onion , finely chopped
2 peppers (choose your favourite colours), finely chopped
4 garlic cloves , very finely chopped or crushed
1 tsp cumin seeds or ½ tsp ground cumin
1 tbsp tomato purée
small pinch of sweet smoked paprika
250g basmati rice
450ml hot vegetable stock (make sure it's vegan-friendly)
finely chopped coriander and sliced spring onions, to serve

Steps:

  • Heat the oil in a large saucepan with a lid, then add the onion, pepper, garlic and cumin and sizzle gently for 8-10 mins until the vegetables are soft and golden. Stir in the tomato purée and smoked paprika and cook for 1 min, then stir in the rice.
  • Pour over the stock, then cover and bring to the boil. Stir quickly, then cover again and place on the lowest heat possible. Simmer for 10 mins. Turn off the heat and leave, covered, for a further 10 mins. If serving straightaway, stir through the coriander and spring onions; alternatively, leave the rice to cool, chill, then re-fry before serving and stir the coriander and spring onions through at the end.

3/4 cup canned black beans, rinsed and heated
3/4 cup cooked corn, heated
1 large tomatoes, diced
1 large green onion, diced fine
2 -4 tablespoons chopped cilantro
1 tablespoon fresh squeezed lime juice
salt

Steps:

  • In a large bowl, combine hot rice, heated corn, heated beans, tomato, scallion, cilantro, lime juice and salt if needed. Toss and serve.
  • Garnish with sour cream, shredded cheese and green onions, if desired.

1 lb boneless skinless chicken breast
1/4 cup real mayonnaise, low fat okay
1/4 cup sour cream, low fat okay
2 tablespoons chunky salsa, spicy
1 tablespoon milk, low fat okay
1 teaspoon Cajun blackened spice mix
1/4 teaspoon dried parsley
1/4 teaspoon hot sauce
1/8 teaspoon dried dill weed
1/8 teaspoon cumin
1 cup shredded colby-monterey jack cheese
2 cups corn chips, crumbled

Steps:

  • Directions:.
  • Whisk together the first 8 ingredients, coat chicken in mixture, and marinade for at least 2 hours.
  • Whisk together the next 9 ingredients, cover, and chill until needed.
  • Grill the marinated chicken breasts for 3-5 minutes per side, or until cooked through. Discard marinade.
  • Brush grilled chicken with reserved dressing, sprinkle with cheese, and broil until cheese has melted.
  • Serve the chicken over a bed of crumbled chips.

1 (10 ounce) package frozen corn, thawed
1 tablespoon butter
1 cup green onion, chopped
1 1/2 cups brown rice, uncooked
1 teaspoon ground cumin
1 teaspoon garlic, minced
2 cups low sodium chicken broth
1/8 teaspoon pepper
1/4 teaspoon salt
1 (14 1/2 ounce) can diced tomatoes with green chilies, undrained
1 (15 ounce) can black beans, rinsed and drained
1/2 cup cilantro, chopped
1 tablespoon fresh lime juice

Steps:

  • Heat oil in med saucepan over med-high heat. Add corn to pan; cook 10 min or til it starts to brown, stirring occasionally. Remove from pan. Set aside.
  • Melt butter in pan. Add onions; saute 5 min or til tender. Stir in rice, cumin, and garlic; cook 1 minute Add broth, pepper, salt and diced tomatoes to pan; bring to a boil.   • Cook the rice according to package directions. When the rice is done cooking, toss in the chopped cilantro and lime juice. Set aside and keep warm.
  • In a medium size bowl combine the chipotle chili powder, cumin, brown sugar, paprika, onion powder, garlic powder, chili powder, salt and pepper. Add the olive oil and lime juice and whisk together with a fork. Toss with the chicken strips. Set aside while you make the crema.
  • In a food processor or blender combine the greek yogurt, avocado, garlic, lime juice, adobo sauce, honey, crushed red pepper and salt. Puree until smooth. Add a tablespoon or two of water if it is a a little thick. Taste and add more salt if desired. Set a side.
  • Heat a large pan or wok until fairly hot. Arrange the chicken (marinade and all) in the pan and cook on high heat until the chicken are golden brown and the chicken begins to caramelize. Turn the chicken on the other side and let them cooked until the other side is just cooked through. Then add the sliced peppers and saute on high heat for about 3 minutes or until slighty soft.
