Steps:
- Heat oil in a large skillet over medium-high heat. Add onion and sauté until lightly browned, stirring often, about 4 minutes. Add beef and cook until lightly browned, about 4 minutes.
- Add chili powder, cumin, pepper, chiles, tomatoes, corn, and beans and stir until heated through, about 3 minutes.
- Season to taste with salt, if needed. Transfer to a serving bowl and keep warm.
- To serve the original Family Fiesta Soft Tacos, plate up warm tortillas, dish up the cheese, lettuce, and avocado (if desired). Serve with taco meat filling. Assemble and enjoy.

CHICKEN SOFT TACOS
My family loves these tacos. The chicken filling cooks in the slow-cooker, so it's convenient to throw it together before I leave for work. At the end of the day, I just have to roll it up in a soft taco shell with the remaining ingredients and dinner's ready in minutes. - Place the chicken in a 4-qt. slow cooker. In a small bowl, combine the tomato sauce, chiles, onion, chili powder, Worcestershire sauce and garlic powder; pour over chicken. Cover and cook on low until chicken is tender and juices run clear, 5-6 hours., Remove the chicken. Shred meat with two forks and return to the slow cooker; heat through. Spoon 1/2 cup chicken mixture down the center of each tortilla. Top with cheese, salsa, lettuce, tomato and sour cream if desired; roll up.

- Heat oil in a skillet over medium heat. Add onion, green pepper and garlic; sauté until tender. Add chicken; cook until no longer pink, about 5 to 8 minutes. Stir in taco seasoning and salsa; simmer for 3 minutes. To serve, spoon mixture onto tortillas. Fold over once; garnish as desired. Tip: A speedy side for any south-of-the-border supper. Stir spicy salsa and shredded cheese into hot cooked rice. Cover and let stand a few minutes, until the cheese melts. Sure to please!
