PEANUT BUTTER OATMEAL COOKIES
These peanut butter oatmeal cookies are soft, chewy and filled with peanut butter goodness. The oatmeal adds tons of texture, and it's a quick and easy recipe that all peanut butter fans are sure to love.

Steps:
- Preheat the oven to 350F (180C or 170C fan forced). Line baking sheets with parchment paper or silicone baking mats.
- In a large bowl beat together the butter, sugars, and peanut butter until creamy and no lumps remain.
- Mix in the egg and vanilla.
- Add in the flour, baking soda and salt. Do a few stirs by hand first, then turn the mixer to a low speed and beat together until combined.
- Turn off the mixer and stir in the quick oats and old-fashioned oats.
- Form the dough into balls about with about 1 - 1.5 tablespoons each. They'll be about the size of a ping pong ball. Place 2 inches apart on a lined cookie sheet. Do not flatten.
- Bake 1 sheet at a time for 9-12 minutes in the middle of the oven, or until the tops are just set.
- Remove from the oven. Cool cookies on the cookie tray for 5-10 minutes, then transfer to a cooling rack and continue cooling.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, cream together shortening, margarine, brown sugar, white sugar, and peanut butter until smooth. Beat in the eggs one at a time until well blended. Combine the flour, baking soda, and salt; stir into the creamed mixture. Mix in the oats until just combined. Drop by teaspoonfuls onto ungreased cookie sheets.
- Bake for 10 to 15 minutes in the preheated oven, or until just light brown. Don't over-bake. Cool and store in an airtight container.

- Preheat oven to 350 degrees Fahrenheit.
- Toast oats until golden, about 10 minutes in the oven on a baking sheet or in a skillet over medium heat for about 7 minutes.
- In medium bowl sift together flour and baking soda.
- In large bowl cream together peanut butter, melted butter, brown sugar, and honey. Mix in egg and vanilla.
- Gradually mix dry ingredients with the wet in the large bowl. Add toasted oats and bran nuggets to dough.
- In a small bowl mix granulated sugar and cinnamon with a fresh grating of nutmeg.
- Form dough into 1 tbsp balls on cookie sheet, about 2 inches apart.
- Flatten cookies with the bottom of a small juice glass dipped in cold water and then the sugar and spice mixture.
- Bake cookies in oven for 8 minutes.
- Enjoy fresh with vanilla almond or rice milk. Yum!

Found under a lid from a Quaker Oatmeal container back in the 70's! I am going through my family favorite clippings and was delighted to find this oldie but goodie to share with Zaar chefs. Be sure to plan for the 2 hour chilling time.

- Beat first three ingredients until creamy.
- Beat in water, egg and vanilla.
- Add combined dry ingredients; mix well.
- Cover; chill about 2 hours.
- Heat oven to 350°F
- Shape into 1-inch balls; placing them on an ungreased cookie sheet.
- Flatten with tines of fork dipped in granulated sugar to form crisscross pattern.
- Bake 9 to 11 minutes or until edges are golden brown.
- Cool 1 minute on cookie sheet: remove to wire rack.
- Cool completely.
- Store tightly covered.

- Heat oven to 375°F. Place cereal in resealable food-storage plastic bag; seal bag and finely crush with rolling pin or meat mallet (or finely crush in food processor).
- In large bowl, beat butter, 1/2 cup granulated sugar and the brown sugar and with electric mixer on medium speed until creamy. On low speed, beat in peanut butter and eggs until smooth. Beat in flour, baking soda, baking powder and salt until well blended.
- Stir in cereal until well blended.
- Shape dough into 1 1/4-inch balls. On ungreased cookie sheet, place balls about 3 inches apart. Flatten in crisscross pattern with fork dipped in 1 tablespoon granulated sugar.

PEANUT BUTTER OAT BRAN COOKIES
This recipe was on a box of "Hodgson Mill Oat Bran Cereal". What wonderful cookies! Chewy, filling, high fiber...and oat to boot. Lower cholesterol here we come. I also used 1/4 cup applesauce for 1/4 cup margarine to lower fat. They were super easy to mix and are sturdy enough to travel well (I mailed some to an avid fan!). Hope you enjoy.
