Fiber One™ Lemon Bars with Lemon Cream Cheese and Berries image

Fiber One™ has a number of products we can use to create filling snacks to satisfy afternoon cravings for something sweet. Pair with a steamy cup of coffee or tasty cup of tea for the perfect afternoon snack. For kids, I recommend serving these lemon bars with a glass of cold milk or fruit juice. This is a simple recipe that can be prepared in a few minutes with delicious results. It's a perfect summer snack, bringing into harmony the flavors of fresh fruit with the acidity of fresh-squeezed lemon juice. To serve at the beach or park, pack all ingredients into a cooler, be sure to prepare the cream and cut the fruit ahead of time, and around lunchtime assemble these delicious snacks immediately before serving.

Steps:

  • Mix the cream cheese with the condensed milk and squeeze the lemon, mixing the fresh juice into the creamy blend.
  • Put the Fiber One™ 90 Calorie Lemon Bar on a plate and spread with a tablespoon of the lemon cream cheese.
  • Garnish with strawberries and blueberries. Serve immediately.

This is a recipe that my mom gave me. She got it from a friend of the families. They are so great, perfect for any lemon lover.

4 eggs
1 (18 ounce) box lemon cake mix
1 (21 ounce) can lemon pie filling
8 ounces cream cheese, softened
1/2 cup butter, softened
2 1/2 cups powdered sugar
1 teaspoon vanilla

Steps:

  • Mix first 3 ingredients together. Pour into a greased jellyroll pan. Bake at 350 for 18-20 minutes.
  • While bars are baking make the cream cheese frosting. Mix the frosting ingredients together. Frost the bars once they are completely cooled.

2 eggs
1/3 cup oil
1 (8 ounce) package cream cheese, softened
1/3 cup sugar
1 teaspoon lemon juice

Steps:

  • Mix dry cake mix, 1 egg, and 1/3 cup vegetable oil until crumbly.
  • Reserve 1 cup of the mixture.
  • Pat remaining mixture in a lightly sprayed 9 by 13 in pan.
  • Bake 15 minutes at 350 degrees, and let cool.
  • In a bowl, beat cheese, sugar, lemon juice, and 1 egg until smooth.
  • Spread over baked layer.
  • Sprinkle with reserved crumb mixture.
  • Bake 15-25 minutes at 350 degrees.
  • Let cool and cut into bars.

1 cup butter, softened
2 cups sugar
4 large eggs, room temperature
2 teaspoons lemon extract
1-3/4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon grated lemon zest
4 ounces cream cheese, softened
2 tablespoons butter, softened
2 cups confectioners' sugar
2 teaspoons lemon juice
1-1/2 teaspoons grated lemon zest

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and extract. Combine flour and salt; gradually add to creamed mixture and mix well. Stir in lemon zest., Spread into a greased 13x9-in. baking pan. Bake at 350° for 18-22 minutes or until center is set and edges are golden brown. Cool completely., For frosting, in a large bowl, beat cream cheese and butter until fluffy. Beat in confectioners' sugar, lemon juice and zest. Frost top and cut into bars. Store in the refrigerator.

1 pkg. (2-layer size) yellow cake mix
2 eggs, divided
2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1/2 cup sugar
1 Tbsp. zest and 3 Tbsp. juice from 1 lemon
2-1/2 cups fresh blueberries

Steps:

  • Heat oven to 350ºF.
  • Line 13x9-inch pan with Reynolds Wrap® Aluminum Foil, with ends of foil extending over sides. Microwave butter in large microwaveable bowl on HIGH 1 to 1-1/2 min. or until melted. Add dry cake mix and 1 egg; beat with mixer until blended. Press 2/3 of the dough onto bottom of prepared pan.
  • Beat cream cheese and sugar with mixer until blended. Add remaining egg, zest and juice; mix well. Pour over crust; top with berries. Pinch small pieces of the remaining dough between your fingers; press lightly into cream cheese layer.
  • Bake 55 min. to 1 hour or until toothpick inserted in center comes out clean. Cool completely. Use foil handles to lift dessert from pan before cutting into bars.

1/3 cup finely chopped pecans

2 cups granulated sugar
3 eggs
1 Tbsp. lemon zest
1/2 cup lemon juice
1 Tbsp. powdered sugar

Steps:

  • Heat oven to 350°F.
  • Beat butter, 1/3 cup powdered sugar and vanilla in large bowl with mixer until well blended. Gradually beat in 1-1/2 cups flour. Stir in nuts; press onto bottom of13x9-inch pan sprayed with cooking spray. Bake 15 min.
  • Meanwhile, beat cream cheese and granulated sugar in medium bowl with mixer until well blended. Add eggs, 1 at a time, beating well after each addition. Add remaining flour, lemon zest and juice; mix well.

1 cup shredded coconut (finely shredded)
8 ounces cream cheese, softened

lemon zest, optional for garnish (optional)

Steps:

  • Bar: In mixing bowl, combine cake mix, pie filling, and coconut. Stir until thoroughly mixed (do not add liquid, will be thick). Spread this mixture in a 10x15 inch baking pan.
  • Bake for 30 minutes in a preheated 350 degree oven. Cool thoroughly.
  • Frosting: Combine all ingredients until well blended. Frost the bars. Garnish with zest. You may not need all of the frosting. Cover and refrigerate overnight for better flavoring.
