The name of the recipe may sound odd, but it is fantastic! My husband and I love to make this for breakfast on lazy weekends. Serve with syrup.

1 cup cottage cheese
⅓ cup all-purpose flour
2 tablespoons vegetable oil
3 eggs, lightly beaten
cooking spray

Steps:

  • Combine cottage cheese, flour, oil, and eggs in a large bowl.
  • Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/3 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

These wholesome pancakes get a healthy dose of protein from cottage cheese. Top with fresh fruit and a drizzle of your favorite natural sweetener.

1 cup plain cottage cheese
2 tablespoons vegetable oil
3 large free range eggs
1 cup all-purpose flour
1 teaspoon baking soda
2 to 3 tablespoons unsalted butter

Steps:

  • Gather the ingredients.
  • In a large mixing bowl, whisk together the cottage cheese, oil, and eggs to create a batter. The batter will be lumpy from the cottage cheese, but that's the texture that's needed.
  • In a separate bowl, add the baking soda to the flour.
  • Sift the flour mixture over the cheese and egg batter and whisk thoroughly until there are no flour lumps. The batter is ready when it is light and frothy with bubbles on the surface. Set aside.
  • Heat a large non-stick skillet over medium heat. Add some butter to sufficiently grease the pan and drop 1/4 cup of the batter into the pan.
  • Cook on one side for 2 to 3 minutes until bubbles are forming on the surface.
  • Flip over and cook for a further 3 minutes. If the skillet is large enough, you can make two or three at the same time. Remove from the pan and wrap in a tea cloth to keep warm while you repeat the process with the remaining butter and pancake batter.
  • Serve your pancakes warm with your favorite sides.

So many other recipes I've found call for several ingredients or make a lot. I've always made my pancakes much more simply than that. I got this recipe when I was recovering from surgery - they're high-protein and quick and easy. Perfect for a quick breakfast when you don't feel well.

1 egg (or 2 egg whites)
1/2 cup cottage cheese
1/4 cup Bisquick (also works great with dry pancake mix)

Steps:

  • Combine all ingredients in a bowl.
  • Cook like regular pancakes in a greased skillet, flipping once - mind the cheese, it melts and sticks sometimes.
  • Serve with syrup or butter (or both).

1 cup cottage cheese
1 egg
1 teaspoon vanilla extract
1 cup oats
½ teaspoon cinnamon
½ teaspoon nutmeg
1 teaspoon baking powder
1 pinch salt
1 tablespoon cocoa powder, optional
1 teaspoon butter, or 1 teaspoon of coconut oil
1 teaspoon butter
1 handful nut
½ cup maple syrup

Steps:

  • Put all of the pancake ingredients in a blender and blend until smooth.
  • Place the frying pan over medium-high heat and add 1 tsp of coconut oil or butter. Then, pour the desired amount of pancake batter on the frying pan.
  • Let pancakes cook thoroughly before flipping; (pancakes should brown on both sides).
  • For the syrup:
  • Melt butter
  • Add nuts of choice (pecans, walnuts, cashews, sliced almonds) to a skillet with 1 tsp of butter and toast for 2 minutes, caramelizing nuts. Add syrup and simmer until cohesive.
  • Serve on top of pancakes.

1 egg
1/4 cup cottage cheese
2 tablespoons flour
1 teaspoon oil
1 pinch salt

Steps:

  • Separate egg into 2 small bowls. Beat egg white until it forms soft peaks. Set aside.
  • Add remaining ingredints to egg yolk. Beat with an electric mixer until smooth.
  • Stir about 1/2 of the beaten egg white into yolk mixture to soften batter. Fold in remaing egg white until blended.
  • Heat a large oiled skillet over medium heat, about 375*F.
  • Drop batter by spoonfuls into hot skillet and spread with back of spoon to form 3 inch circles. When underside is golden brown and edges begin to dry, turn and brown other side.

I looked up several different cottage cheese pancake recipes and altered to make one that fit ingredients I used and liked. It may sound odd, but it makes the best pancakes ever and packs in a lot of protein. For someone who struggles to get enough protein in, this was perfect for me!

1/2 cup whole wheat pancake mix (Fiber One)
1 cup low fat cottage cheese
2 eggs
1/2 teaspoon vanilla extract
1 g Splenda sugar substitute (equivalent of a packet, I used Truvia)

Steps:

  • Blend cottage cheese with a food processor or blender until more of a smooth texture (it won't be perfectly smooth).
  • Mix in Fiber One mix, eggs, vanilla extract and sweetener.
  • Heat a skillet over medium heat, coat with cooking spray.
  • Pour 1/3 to 1/2 cup servings of batter onto hot skillet (depending on how big you want your pancakes), cook until light brown on the bottom and light bubbles appear on the top.
  • Flip (carefully) and cook other side until a light, golden brown.
  • Serve with choice of toppings.
