Colorful and dressed up enough for Christmas, here's an easy-to-make salad that is wonderful all year-round. The green peas and red onion make it especially festive looking.

1 package (16 ounces) frozen petite peas, thawed
1-1/2 cups fresh snow peas, trimmed and halved
1 cup halved thinly sliced red onion
1 jar (2 ounces) diced pimientos, drained
1/3 cup mayonnaise
1/3 cup sour cream
1 teaspoon minced fresh mint
1/4 teaspoon salt
1/8 teaspoon white pepper
Dash to 1/8 teaspoon ground nutmeg
5 bacon strips, cooked and crumbled

Steps:

  • In a large bowl, combine the peas, onions and pimientos. In a small bowl, combine the mayonnaise, sour cream, mint, salt, pepper and nutmeg. , Pour over pea mixture; toss to coat. Cover and refrigerate for at least 1 hour. Just before serving, stir in the bacon.

1 1/2 pounds pearl onions
1 cup chicken broth
1/4 cup (1/2 stick) unsalted butter
3 teaspoons chopped fresh dill
2 cups fresh sweet peas, shelled
1/2 lemon, juiced
1 small bunch watercress, washed and trimmed
Kosher salt and freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil. Toss in the pearl onions and blanch for 3 minutes. Drain them out and then shock them in ice water to stop from over cooking. Drain again. Pinch the pearl onions out of their little skins and set aside.
  • In a 3-quart saucepan over medium heat, combine the chicken broth, 2 tablespoons of the butter, and 2 teaspoons of the dill. Once the liquid gets hot, add the pearl onions and peas. Cook and stir for 5 minutes until well coated and thickened slightly. Add the lemon juice, watercress, remaining butter, and dill; season with salt and pepper.

Coarse salt
1/2 ounce (1 tablespoon) unsalted butter
2 tablespoons water
2 packages (10 ounces each) frozen petite green peas
1/2 cup small fresh mint leaves

Steps:

  • Cut an X in stem end of each onion. Cook in salted boiling water for 1 to 2 minutes. Drain, and peel.
  • Heat butter and water in a pan over medium-high heat. Add onions, and cook for 4 minutes. Stir in peas and 3/4 teaspoon salt, and cook for 2 minutes. Stir in mint. Serve immediately.

3 whole cloves
1 bay leaf
1 pound pearl onions (about 2 cups), peeled, trimmed, or 1 pound frozen pearl onions, thawed
3 tablespoons unsalted butter, divided
1 1/2 teaspoons kosher salt, divided
1 teaspoon sugar
2 tablespoons all-purpose flour
1/2 teaspoon freshly ground black pepper
1/4 teaspoon freshly grated nutmeg
2 1-pound bags frozen peas, thawed
1/4 cup crème fraîche, whole-milk, Greek yogurt, or sour cream

Steps:

  • Bring milk, cloves, and bay leaf to a boil in a small saucepan; reduce heat to low and simmer for 15 minutes to let flavors meld. Strain into a medium bowl; discard solids. Cover milk and keep warm.
  • Meanwhile, place onions in a large skillet (at least 12"). Add water to half-cover the onions (about 1 cup). Add 1 tablespoon butter, 1 teaspoon salt, and sugar. Cook over medium-high heat, stirring occasionally, until liquid has evaporated and onions are golden brown, about 12 minutes. Gently transfer onions to a large plate.
  • Melt remaining 2 tablespoons butter in same skillet over medium heat; add flour and whisk to combine. Cook, stirring occasionally and scraping up browned bits from bottom of pan, for 1 minute. Whisk in reserved milk, adding 1/4-cupful at a time. Cook, stirring constantly, until thickened and bubbly. Stir in remaining 1/2 teaspoon salt, pepper, and nutmeg. I hesitated to submit this recipe because it is so quick and easy. I changed one that a friend gave me. It is a refreshing change from the regular peas and onions we all have eaten over the years. Try it...you will like it!

1 1/2 cups white pearl onions, frozen
2 cups green peas, frozen
2 teaspoons butter
1 tablespoon fresh rosemary, chopped
1/4 teaspoon pepper
1/2 teaspoon salt
1 cup water

Steps:

  • In a large saucepan bring the 1 cup of water to a boil over high heat. Add the salt and frozen onions, reduce heat to medium. Cover and cook for 6 minutes.
  • Add the peas, return to a boil, cover and cook for about 6-7 minutes until peas are tender.
  • Meanwhile, melt the butter over low heat in a small skillet. Add the fresh rosemary. cook and stir for about 2 minutes.
  • Drain the peas and onions when they are tender. Return to the large saucepan. Add pepper and the butter/rosemary mixture. Lightly stir to completely cover the peas and onions.
  • Pour in serving dish and enjoy!

1 cup cream
salt to taste
ground black pepper to taste
⅔ cup Parmesan cheese

Steps:

  • Saute onions in butter or margarine until transparent. Place in 2-quart baking dish.
  • In a small bowl, beat eggs well. Stir in cream, and season with salt and pepper. Pour mixture over onions, and sprinkle cheese.
  • Bake, uncovered, at 425 degrees F (220 degrees C) for 15 to 20 minutes.

Steps:

  • Blanch onions in large saucepan of boiling salted water 5 minutes. Drain, cool, and peel onions.
  • Sauté onions and guanciale in large skillet over medium heat until fat is rendered, guanciale is golden, and onions are brown in spots, about 10 minutes. Add peas; heat through. Season with salt and pepper. Transfer to bowl.

Steps:

  • In a covered saucepan, cook onions in water for 25 minutes or until tender. Drain, reserving 1/4 cup liquid. Combine onions, peas, soup, 2 tablespoons pimientos and reserved cooking liquid; stir to coat. Transfer to a greased 1-1/2-qt. baking dish. Bake, uncovered, at 350 degrees F for 35 minutes. CREAMED PEAS WITH PEARL ONIONS - GYPSYPLATE
Melt butter in pan over medium heat. Add onions, sauté 5 minutes. Add peas, sauté 1 minute. Season with salt, pepper and sugar. Add flour and mix well, cook for one minute until peas and onions are nicely coated. Gradually add cream, stirring continuously, and cook till thickened. Taste and adjust salt and pepper.
