FESTIVE FRUIT PIZZA
Refrigerated sugar cookie dough is baked in a pizza pan then topped with pineapple spread and assorted fruit for a colorful dessert pizza.

Steps:
- Press cookie dough onto bottom of greased 12-inch pizza pan. Bake as directed on package until golden brown; cool.
- Spread crust with pineapple spread; top with fruit. Garnish with fresh mint leaves, if desired.
- Cut into 16 wedges to serve. Store leftover pizza in refrigerator.

Steps:
- Press cookie dough on bottom of lightly greased 12 inch pizza pan.
- Bake at 350 for 11 to 15 minutes or until light brown.
- Cool to room temperature.
- Beat cream cheese and sugar in medium bowl until smooth and blended.
- Stir in 1/2 cup mandarin oranges.
- Spread over crust.
- Cover and refrigerate until ready to serve.
- Arrange kiwi, strawberries and remaining mandarin oranges over cream cheese before serving.

Steps:
- Preheat oven to 350°F.
- Press cookie dough on bottom of 12 inc pizza pan lined with non stick aluminum foil, bake at 350F 10 to 14 minutes or until light brown. Cool to room temperature.
- Beat cream cheese and sugar in a medium bowl until well blended. stir in 1/2 cup mandarin oranges, spread over crust.
- Cover and refrigerate until ready to serve.
- Arrange kiwi, raspberries, and mandarin oranges over cream cheese and cut into 12 wedges.

- Preheat the oven to 350°F. Form the cookie dough into a large ball, then roll out into a flat circle on a pizza pan. It will expand, so make the crust slightly smaller in diameter than your pizza pan. Bake for 12-15 minutes or until the crust turns slightly golden.
- While the cookie crust is baking, whip the cream cheese for 2-3 minutes on high until it is smooth. In a separate bowl, whip the heavy cream until it becomes stiff and peaks form. Fold the whipped cream into the cream cheese and add in the powdered sugar and lemon zest. Mix well until it's smooth and creamy. Cover and let it chill in the refrigerator.
- Remove the cookie crust from the oven and let it cool for 15 minutes. You can place it in the refrigerator so it chills quicker. Once it's cool, spread the icing over the entire crust. Decorate the pizza with circles of alternating strawberries and blueberries, whatever design you desire. Serve immediately. Cover and save the leftovers in the refrigerator for up to five days.
