This is a delicious brown bread closest to what we ate while in Ireland. It isn't Irish soda bread, which has a completely different taste and texture. We LOVE this recipe!

1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 ½ tablespoons butter
2 cups whole wheat flour
¼ cup quick-cooking oatmeal
1 ½ cups nonfat plain yogurt
1 teaspoon milk, or more as needed

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Lightly grease a baking sheet.
  • Mix all-purpose flour, sugar, baking powder, baking soda, and salt in a bowl.
  • Cut butter into flour mixture with a pastry blender or 2 knives until the mixture forms fine crumbs.
  • Stir whole-wheat flour and quick-cooking oatmeal into the butter mixture.
  • Gently stir yogurt into the oatmeal mixture. If mixture is too dry to hold together, add 1 teaspoon milk at a time, just until dough holds together; it should not be sticky.
  • Turn the dough out onto a lightly floured work surface; knead gently about 5 times to form a ball.
  • Place the dough in the center of the prepared baking sheet; cut a large 'X' in the top of the loaf.
  • Bake in preheated oven until well browned, about 40 minutes; transfer to a rack to cool. Bread can be served warm or cold.

Traditional Irish Brown Soda Bread image

Unlike many of the recipes here, none of the soda bread that I have ever eaten in Ireland was sweet or contained sugar, so here is a recipe for a traditional soda bread from Keith Floyd. This is great with Irish Stew but also a handy recipe to have in reserve for the times that you run out of bread and can't face going to the shops. Do feel free to substiute buttermilk for the sour milk in this recipe.

500 g whole wheat flour
150 g strong white flour
50 g oatmeal
1 teaspoon bicarbonate of soda
1 teaspoon salt
475 -725 ml sour milk (or fresh milk soured with juice of 1/2 lemon)

Steps:

  • Mix the dry ingredients very well.
  • Moisten with the sour milk to form a soft dough.
  • Knead lightly.
  • Form into a round, mark with a cross, place on a tin and bake for 30-45 minutes in the oven at 220°C.

NO-YEAST IRISH BROWN BREAD



No-Yeast Irish Brown Bread image

A dense, filling bread. Good for anyone who likes or needs to avoid yeast. Milk can be soured by adding 2 tbsp. vinegar.

1/2 cup natural bran
1/4 cup sugar
1 1/2 teaspoons baking soda
2 cups sour milk

Steps:

  • Mix flours, bran, sugar and soda.
  • Make well in centre.
  • Pour in sour milk and oil.
  • Stir until moistened.
  • Pour into greased loaf pan.
  • Bake 1 hour at 350 degrees.

4 cups brown flour
1 1/2 cups white flour
3 ounces wheat germ
1 large onion, minced
1 pinch salt
2 teaspoons baking soda
4 ounces butter
1 1/2 pints sour milk or 1 1/2 pints buttermilk

Steps:

  • Sieve plain flour, salt, and soda into a bowl.
  • Add in brown flour and wheatgerm.
  • Rub in butter, mix in sour milk (or buttermilk) and onion and then mix to a very soft consistency.
  • Divide dough between 2 greased loaf tins and cover with brown paper.
  • Bake approx.
  • 45 minutes at 375.
  • Remove cover after 30 minutes of baking and continue baking for another 15 minutes.

4 cups coarse ground whole wheat flour
4 cups white flour
3 teaspoons salt
1 tablespoon baking soda
3 -4 cups low-fat cultured buttermilk

Steps:

  • Preheat oven to 475F.
  • Mix all the dry ingredients together in a large bowl.
  • Make a well in the center and add some buttermilk.
  • Work the mixture with your hand until the dough is soft and not too sticky.
  • On a floured surface, knead into a circular shape about three inches thick.
  • Bake for 20 minutes and then turn oven down to 400F; bake for another 20 minutes.
  • Bread should sound hollow when you tap on it when fully cooked.

My Mother always made bread from an Odlums recipe and I have kept it the same....hope you enjoy. It goes great with stews and soups. I also like to serve it with smoked salmon, a combination you are bound to enjoy.

Number Of Ingredients 6

3 cups whole wheat flour
1 cup all-purpose flour
15 g wheat germ (I put in 1/8th of a cup)
500 ml 2% buttermilk
1 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Sieve the Salt, Bread Soda and All purpose flour into a bowl. Mix in the Wholewheat flour and wheatgerm. Add enough milk to make a soft dough. Turn out onto a lightly floured surface and knead until the mixture comes together. Place on a floured baking sheet forming into a round loaf (approx 10" diameter).
  • Place into a preheated oven (central position) and bake at 375 to 400 F for 40 to 45 minutes. When baked the bread will sound hollow when you tap it on the bottom. Cool on a baking rack or wrap in a dry tea towel to give a softer crust.
  • Enjoy.
