BLUE CHEESE AND DRIED FRUIT TERRINE



Blue Cheese and Dried Fruit Terrine image

Number Of Ingredients 10

1 pound/450 g blue cheese, such as Roquefort or gorgonzola, at room temperature
8 ounces/225 g mascarpone cheese, at room temperature
1 tablespoon honey, optional
Freshly ground pepper
Handful chopped dried apricots
Handful currants
Handful chopped dried figs
Handful chopped green pistachios
Handful chopped toasted walnuts
Rustic country breads or crackers, for serving

Steps:

  • Mash the blue cheese and mascarpone together with the honey, if using, and pepper. (You can do this in the food processor, too, but it will cream the blue cheese so much that you get a greenish terrine. Not the end of the world, but just warning you.) Stir in the apricots, currants, figs, pistachios and walnuts. Season with pepper. Wrap in plastic and shape into a terrine. Refrigerate for several hours until firm. Serve with an assortment of rustic country breads or crackers and decorate with some whole dried fruits and nuts, if you like.

PORK AND VENISON TERRINE



Pork and Venison Terrine image

2 pounds pork shoulder or butt
1 pound venison, stew meat preferred
1 pound chicken liver, cleaned of bile
1 large onion
2 garlic cloves
Several sprigs fresh thyme
Several sprigs fresh parsley
2 teaspoons salt
2 teaspoons ground black pepper
2 eggs
1/4 cup heavy cream
1/4 cup brandy
3 tablespoons flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground mace

Steps:

  • Preheat the oven to 325 degrees. Pass the pork shoulder and venison through the medium die of a grinder for a coarse grind. Place the chicken liver in the bowl of a food processor and pulse to a fine paste. Combine the liver, pork and venison in a large bowl that has been chilled in the refrigerator. Chop the onion, garlic, thyme and parsley in the processor until very fine and add to the meats in the cold bowl. Combine the salt, pepper, eggs, cream, brandy, flour, cinnamon and mace and add to the meat mixture. Mix well and chill the entire mixture for 30 minutes. Line a large loaf tin with plastic wrap, pour the terrine mixture in, tamping down to insure an even layer. Cook the terrine in a water bath in the oven by heating some water in a tea kettle, place the prepared terrine into a roasting pan set in the oven, and pour the hot water into the roasting pan, being careful not to get any water into the terrine. Bake for about 90 minutes or until the meat reaches an internal temperature of 155 degrees. Remove from the oven and cool. Place a sheet of plastic wrap over the terrine, poking holes in the plastic so that hot air can escape. Place 2 to 3 pounds of weight (such as dry beans still in the bag) on top of the plastic wrap to weigh down and compress the terrine and refrigerate overnight. Remove from the oven and cool. Refrigerate overnight and serve cold with mustard, pickles and green bean salad.;

COUNTRY TERRINE

Yield one 10-by-2 1/2-inch terrine

Number Of Ingredients 13

2 tablespoons butter
1 small onion, finely chopped
2 to 3 cloves garlic, finely chopped
1/4 cup/60 ml Cognac
1 pound/500 g ground pork
2 tablespoons chopped fresh herbs, such as thyme, parsley and chives
1 teaspoon quatre-epices
3 eggs
8 ounces/250 g pork or beef liver, coarsely chopped
8 ounces/250 g ground veal shoulder
1 1/4 cups/80 g breadcrumbs
Salt and freshly ground pepper
8 ounces/250 g slab fat, pork fatback, or pork belly or bacon

Steps:

  • Preheat the oven to 350 degrees F/180 degrees C.
  • Melt the butter in a saute pan and gently saute the onions until soft. Add the garlic and cook for 1 minute. Pour in the Cognac, remove from the heat and cool slightly.
  • Combine the ground pork, liver and ground veal in a large bowl. Add the onion mixture, breadcrumbs, herbs, quatre-epices and eggs. Mix well. Sprinkle with plenty of salt and pepper. Fry a patty of it to check for seasonings and adjust if necessary.
  • Thinly slice the pork fat and line a 10-by-2 1/2-inch terrine mold with the slices, slightly overlapping them and allowing it to hang over the edges. Pack the meat mixture into the terrine and press down evenly. Fold the overhanging strips of fat over the top and add a few more slices if necessary to cover the top. Cover the top with a piece of parchment paper, then cover the terrine with foil.
  • Put the terrine in a roasting pan and pour around enough boiling water to come halfway up the sides of the terrine. Place in the oven and cook for 1 to 1 1/2 hours. Remove from the water bath and cool completely. Place a brick on it and refrigerate overnight. Slice and serve.

FISH TERRINE

1 lb sole or 1 lb any firm-textured white fish fillet, bones and skin removed
2/3 cup cream (divided)
salt
fresh ground pepper
grated nutmeg
1 lb scallops, cleaned
3 egg whites
1/2 lb spinach
1/2 cup unsalted butter
1/4 lb raw shrimp, peeled and deveined
4 green onions, chopped finely
2 tablespoons chopped fresh parsley
3 egg yolks
1 teaspoon salt
fresh ground pepper
1 tablespoon Dijon mustard
1 -2 tablespoon lemon juice
1 1/4 cups oil
4 tablespoons chopped mixed herbs (parsley and basil)
4 tablespoons spinach

Steps:

  • FOR THE TERRINE: Place the fish in the bowl of a blender or food processor and process until smooth and shiny.
  • Add HALF the cream and season with salt, pepper and nutmeg.
  • Process briefly and then transfer the mixture to a bowl.
  • Repeat the process with the scallops and the remaining cream and transfer the mixture to a second bowl.
  • Beat the egg whites until they hold soft peaks.
  • Fold HALF the egg whites into the fish mixture and HALF into the scallop mixture.
  • Wash and blanch the spinach leaves and drain well.
  • Puree in a blender or food processor.
  • Add 2 Tablespoons of the scallop mixture and 2 Tablespoons of the fish mixture and set aside.
  • Melt the butter in the frying pan and cook the shrimps until just colored and firm.
  • Add the green onions and remove the pan from the heat.
  • When the mixture is cool, add it and the parsley to the spinach mixture in the blender or food processor and process.
  • Oil a 9 x 5 inch loaf pan and spread the scallop mixture on the base.
  • Cover with the spinach mixture and, lastly, the fish mixture.
  • Cover with foil.
  • Put the terrine in a baking dish partly filled with hot water and cook in a preheated 350 F.
  • oven for 1 hour or until set.
  • Cool and then chill overnight.
  • Unmold onto a plate.
  • Serve sliced with herb mayonnaise.
  • FOR THE HERB MAYONNAISE: Place the egg yolks, 1 teaspoon salt, pepper, mustard and lemon juice in a blender or food processor and process to mix ingredients.
  • With the motor still running, add the oil slowly in a thin, steady stream.
  • Add chopped herbs and spinach, taste for seasoning.
  • Vogue Entertaining.

8 ounces fresh pork fatback
2 1/2 pounds pork shoulder
7 ounces fresh pork liver, trimmed of all veins
1 tablespoon olive oil
4 shallots (4 ounces), finely diced
1 cup white bread crumbs
1/2 cup dry white wine
4 cloves garlic (1 ounce), peeled and pounded in a mortar
2 tablespoons chopped fresh parsley
1/3 cup shelled pistachio nuts, parboiled 1 minute, skins removed
1/2 teaspoon finely ground allspice
1/2 teaspoon finely ground bay leaf
1/2 teaspoon finely ground dried oregano
1/2 teaspoon finely ground dried thyme
1 1/2 teaspoons black pepper
3 teaspoons salt
1/4 teaspoon cayenne pepper
8 to 10 large red or green chard leaves, parboiled 2 minutes, until limp

Steps:

  • Slice fatback into thin strips and dice into uniform pieces, about 1/8 inch thick. Cut pork into thin strips and dice. Distribute fatback pieces on top of pork. Divide mixture in half on a chopping block and chop in two batches; chop until you have a varied forcemeat of fine and coarse bits of pork. When chopping, go over mixture with cleaver or knife several times, turning mixture with the blade, until you achieve the right consistency.
  • Slice liver; dice it; chop as finely as possible to a near-liquid consistency. Combine chopped meat and fat with liver in a large bowl.
  • Preheat oven to 325 degrees.
  • Heat olive oil in a small saute pan, add shallots and saute gently 5 minutes without browning until they are soft. Meanwhile, in a separate bowl, combine bread crumbs and white wine and stir until crumbs are soaked. Add wine-soaked bread crumbs, softened shallots, garlic, parsley, pistachio nuts and all spices to the pork forcemeat and mix thoroughly by hand.
  • Line a 1 1/2-quart terrine or loaf mold with chard leaves: cover the bottom with a large leaf and overlap the other leaves around the sides, allowing them to drape over the edge about 2 inches, trimming them if necessary. Pack forcemeat mixture into mold, mounding slightly, and fold leaves over top to enclose it. Rap bottom of mold against table to settle contents and place in a baking pan with enough water to come two-thirds of the way up the sides of the mold. Bake 1 1/2 to 1 3/4 hours, or until a meat thermometer, inserted only as far as the center, reads 130 degrees.
  • Remove from oven and let cool 20 minutes. On the terrine, place a dish or flat board and, on top of that, a weight (a 2- or 3-pound can will do). Continue cooling at room temperature several hours. When cool and quite firm, remove weight, wrap terrine well and place in refrigerator to ripen a day or longer before serving.
