GERMAN BREAD SPICE MIXTURE



German Bread Spice Mixture image

A recipe for German bread spice mix including caraway, anise, fennel, coriander and more. Use this spice mix to make authentic-tasting German bread.

5 tablespoons caraway seed
3 tablespoons anise seed
3 tablespoons fennel seed
1 tablespoon coriander, whole
Optional: 1 to 2 teaspoons fenugreek, or sweet trefoil, allspice, or cardamom

Steps:

  • Gather the ingredients.
  • Grind all seeds together in a clean coffee grinder or with a mortar and pestle. Store with other spices in a dark, dry area of the house. If you prefer, you may instead mix together the whole seeds.
  • Use 1 to 3 teaspoons of the spice mixture per loaf of bread.

Number Of Ingredients 7

3 tablespoons black pepper (ground to your liking) or 3 tablespoons white pepper (ground to your liking)
1 cup kosher salt
1 tablespoon celery salt
2 teaspoons ginger
2 teaspoons nutmeg
1 tablespoon sweet paprika
1 tablespoon hot paprika

Steps:

  • Mix well and store cool in airtight jars.
  • For those who do not like it hot, they can use 2 Tbsp sweet paprika!
