The secret ingredient that makes this bread roll recipe fit its "Feather Rolls" moniker? Mashed potatoes! Once you learn how to make rolls with spuds, you'll never skip that step again.

4.25 - 4.75 cup all-purpose flour
1 package active dry yeast
1.5 cup warm water (120°F to 130°F)
0.5 cup mashed cooked potato
0.333 cup butter, melted
0.25 cup sugar
1.25 teaspoon salt
2 tablespoon butter, melted

Steps:

  • In a large bowl, combine 2 cups of the flour and the yeast. In a medium mixing bowl, combine the warm water, mashed potato, the 1/3 cup melted butter, the sugar, and salt. Add potato mixture to flour mixture. Beat with an electric mixer on low speed for 30 seconds, scraping sides of bowl constantly. Beat on high speed for 3 minutes, scraping sides of bowl occasionally. Using a wooden spoon, stir in as much of the remaining flour as you can.
  • Turn dough out onto a lightly floured surface. Knead in enough of the remaining flour to make a moderately soft dough that is smooth and elastic (3 to 5 minutes total). Place dough in a greased bowl, turning once to grease the surface. Cover; chill for at least 2 hours or up to 24 hours.
  • Punch down dough. Turn out onto a lightly floured surface. Cover; let rest for 10 minutes. Meanwhile, grease a 13x9x2-inch baking pan. With lightly floured hands, shape dough into 15 rolls. Arrange rolls in prepared pan. Cover; let rise in warm place until nearly double in size (about 40 minutes).
  • Preheat oven to 400°F. Bake about 25 minutes or until rolls are golden and sound hollow when lightly tapped. Immediately remove from pan. Invert so tops are up. Brush tops with the 2 tablespoons melted butter. Serve warm.

Number Of Ingredients 8

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
1 tablespoon plus 1/3 cup sugar, divided
1 cup warm 2% milk (110° to 115°)
1/3 cup shortening
2 eggs
1-1/2 teaspoons salt
4 to 5 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in warm water. Stir in 1 tablespoon sugar; let stand 5 minutes. Add the milk, shortening, eggs, salt, 3 cups flour and remaining sugar. Beat on medium speed 2 minutes. Stir in enough remaining flour to form a soft dough (mixture will be sticky). Do not knead. Cover and refrigerate overnight., Punch dough down. Turn onto a lightly floured surface; divide into 24 portions. Divide each portion into three pieces; shape each into a ball. Place three balls in each greased muffin cup. Cover and let rise in a warm place until doubled, about 1-3/4 hours. , Preheat oven to 350°. Bake 13-15 minutes or until golden brown. Remove from pans to wire racks. Serve warm.

1 (1/4 ounce) envelope yeast
1 teaspoon sugar
1/2 cup warm water
1/2 cup sugar
1/2 cup lard
1 teaspoon salt
2 tablespoons vinegar
3 1/2 cups warm water
10 -12 cups flour

Steps:

  • Dissolve yeast and sugar in first amount of warm water until foamy.
  • Add yeast mixture to rest of ingredients except flour.
  • Add flour in batches, stirring well in between.
  • Knead until dough becomes elastic yet pliable.
  • Let rise for 2 hours.
  • Knead again and let rise for one hour.
  • Punch down dough and shape into egg sized portions and place on a lightly greased baking sheet.
  • Cover and let rise for 3 hours.
  • Bake at 400F for 15-20 minutes until tops browned.

1/2 cup sugar, plus a pinch
1/2 cup warm water (105 to 115 degrees F)
2 packages active dry yeast
2 teaspoons salt
1/3 cup solid vegetable shortening
1 cup cold water
1 egg, well beaten
4 1/2 cups all-purpose flour
2 tablespoons butter, melted

Steps:

  • In a large bowl, add a pinch of sugar to the warm water. Sprinkle the yeast over the top and let stand until foamy, about 5 minutes. Stir to dissolve yeast. Beat in the remaining sugar, salt, shortening, cold water, and egg until well blended. On low speed, beat in 2 cups of flour and beat for 2 minutes. Beat in enough of the remaining flour, 1/2 cup at a time, to make soft dough. Place the dough in a well-greased bowl and turn to coat the dough. Cover with a towel and let rise until doubled in bulk, about 1 1/2 hours.
  • Punch the dough down and refrigerate for 2 hours. The dough will almost double in bulk. Grease 2 (9-inch) cake pans. Turn the dough out onto a floured surface. Pull off pieces of the dough, about a 1/4 cup each and shape into 24 rolls. Place 12 rolls, sides touching in each of the 2 prepared pans. Brush with butter. Let rise in a warm place for 1 hour or until doubled.
  • Preheat oven to 425 degrees F. Bake the rolls until well browned on the top, about 15 minutes. Transfer the pan to wire racks to cool for 5 minutes.

HOMEMADE YEAST ROLLS

1 1/2 sticks (12 tablespoons) unsalted butter
1/4 cup sugar
3/4 cup whole milk, at room temperature
Three 1/4-ounce packets active dry yeast
5 cups all-purpose flour, plus extra for dusting
2 teaspoons kosher salt
3 large eggs
Olive oil, for greasing
Flaky sea salt, for sprinkling

Steps:

  • Preheat the oven to 400 degrees F.
  • Melt 1 stick of the butter in a small saucepan, then bring to a boil and cook until there are light brown specks in the butter, 3 to 4 minutes. Pour the browned butter into a small bowl and whisk in the sugar until dissolved. Whisk in the milk; the mixture should be lukewarm, around 110 degrees F. Next, whisk in the active dry yeast. Set aside until foamy, 5 minutes.
  • In a large bowl, mix together the flour and salt. Make a well in the center, add the eggs and whisk the eggs together with a fork. Pour the browned butter mixture into the well. Using a fork, gradually incorporate the flour into the liquids. Continue stirring just until a shaggy dough comes together. Transfer to a lightly floured work surface and knead with floured hands until the dough becomes very smooth, about 5 minutes.
  • Lightly grease a large bowl with olive oil. Add the dough, turning it once to coat. Cover with a clean kitchen towel and let rise until doubled in size, about 1 hour.
  • Punch down the dough. Melt the remaining 1/2 stick of butter and use half of that to grease the bottom and sides of a 9-by-13-inch baking dish. Divide the dough into thirds and divide each third into 10 balls. To create smooth tops: roll each ball between your palms, and then stretch the dough across the top of the ball, pinching the excess at the bottom.
  • Place the dough balls, seam-side down, in the prepared baking dish -- 5 to the short side, 6 to long side. Cover and let rise until slightly puffy, 30 minutes. Brush the tops with the remaining butter and sprinkle generously with flaky sea salt.
  • Bake until the tops are golden brown and the rolls sound hollow when lightly tapped, 15 to 17 minutes. Serve warm.

A yummy and simple recipe we made in a local cooking class I took a couple years ago. Recipe is from the instructor Fabienne Ratkov. If you're afraid to work with yeast this is the recipe for you!

2 packages active dry yeast (2 tbs)
1 1/4 cups warm water (Fabienne always said it should be warm "like a comfortable bath")
1/4 cup sugar
1 1/4 teaspoons salt
1 egg
3 cups all-purpose flour
2 tablespoons melted butter

Steps:

  • Preheat oven to 375 degrees.
  • Grease a couple of 12-count muffin tins.
  • Combine yeast and water in a large mixing bowl and let it sit a few minutes to dissolve.
  • Add sugar, salt and egg.
  • Add flour gradually and beat well.
  • Add butter.
  • Fill greased muffin tins half full.
  • Let rise in a warm place uncovered until level with the top of the pans (although I admit to having loosely covered mine sometimes).
  • Bake for 20 minutes.
  • The last time I made these I think I got 18 roll/muffins.
  • Your yield will, of course, vary depending on how much batter you put in each section of the muffin pan.

LIGHT AND FLUFFY YEAST ROLLS

After a long attempt to recreate the infamous yeast rolls of O'Charleys, I was able to get close. This is the result of a few years of trying to find out how they do it. If you've never heard of the place, I guarantee you will still LOVE these rolls! (Note: I doubled this recipe and was able to make enough to feed two very hungry families over Thanksgiving... just so you know!)

1/2 cup warm water (120-130 deg.- the hottest possible water from your faucet should be great!)
2 1/4 teaspoons yeast (or one .25 oz pkg.)
1/2 cup oil
1/2 cup boiling water
1/3 cup sugar
1 beaten egg
3 cups flour
1 tablespoon baking powder
1 teaspoon salt
2 -3 tablespoons melted butter

Steps:

  • Mix together the warm water and yeast packet in measuring cup. Let it get good and foamy.
  • Mix together the oil, boiling water, and sugar. Stir until sugar dissolves. Add the foamy yeast water, and then the beaten egg.
  • Sift together the flour, baking powder and salt. Add about 1 cup of dry mix to the liquids at a time, and mix very, very well.
  • Grease pan.
  • Pinch dough into balls. Keep them small because they will still rise. Let rise 2 hours, or until just past doubled.
  • Preheat oven to 400.
  • Bake for 10-15 minutes, or until golden brown on top. Brush with melted butter fresh out of the oven, and serve warm.

Love baking bread and rolls. When wrists began to make kneading difficult I got a bread maker - my hand made recipe#146085 now only made for those special occasions when family gather. This recipe goes back to my first bread maker and is the one I turn to when needing fresh bread or rolls with the taste of old fashioned bread ... in my bread maker perfect bread every time which is a real plus when expecting guests. Great on the dough cycle for rolls and those recipes calling for frozen bread dough - especially for the pull apart breads. Just the right amount of dough to fill a bundt pan when making Manda's awesome Monkey Bread recipe#17248. Do check your bread maker recipe book to assure it can make a dough using four cups of flour.

1 1/2 cups lukewarm water
3 tablespoons margarine
2 teaspoons salt (I use one teaspoon)

4 cups flour (I whisk the flour before measuring)
1 1/2 teaspoons bread machine yeast (I use Fleishmans bread maker yeast. Keep jar in fridge when not using, take out five minutes before )

Steps:

  • Be sure to whisk that flour before measuring - I soften the margarine in the micro wave.
  • Place ingredients in order listed with the flour and yeast going in last.
  • Choose your cycle.During the first mixing check to assure your dough has the right amount of flour and water - dough should look nice and shiny.Flours differ so you may need to add lukewarm water a teaspoon at a time if it is too dry- a sprinkling of flour if too sticky. Never add more then 3 tablespoons of either the flour or the water. In my breadmaker the whisked flour and the carefully measured ingredients are right on. Makes a large loaf.
  • FOR DOUGH use dough cycle - when cycle complete shape into bread, buns or rolls. I often make braided loaves topping with sesame seeds.
  • Brush tops with softened butter or margarine.Rise 20 to 30 minutes or until double in size.
  • Bake in a 350 oven until nicely golden brown brushing with softened butter or margarine just before they are done - I brush them again when I take them out - makes for nice tops.
  • Time varies - check your machine. Cooking time is machine and baking time.

1 (1/4 ounce) package active dry yeast, dissolved according to package directions (I always use Fleischmann's)
1 1/2 cups scalded milk, cooled
1/2 cup sugar
1 teaspoon salt
1/2 cup butter, plus
additional butter, for basting
2 eggs
5 cups flour

Steps:

  • Mix all ingredients except flour in a large mixing bowl, stir well.
  • Add flour and mix to combine.
  • Cover with plastic wrap and refrigerate overnight.
  • Next, day remove dough from bowl and cut into fourths.
  • using one fourth of the dough roll into a large circle about the thickness of a pie crust.
  • Brush with butter.
  • cut circle into at least 8 triangles (I cut into 16).
  • Beginnng with largest end roll forward.
  • Place on a cookie sheet lined with parchment paper.
  • Brush with melted butter.
  • Continue until all of the dough has been rolled.
  • Let rise for 2 hours.
  • Bake in a preheated 350 degree oven for 10 minutes or until golden brown.
  • Immediately brush with melted butter.
