My family loves this all year round if we can find strawberries. Even the grandchildren love this salad. Quick and easy.

2 bunches spinach, rinsed and torn into bite-size pieces
4 cups sliced strawberries
½ cup vegetable oil
¼ cup white wine vinegar
½ cup white sugar
¼ teaspoon paprika
2 tablespoons sesame seeds
1 tablespoon poppy seeds

Steps:

  • In a large bowl, toss together the spinach and strawberries.
  • In a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds, and poppy seeds. Pour over the spinach and strawberries, and toss to coat.

This recipe uses bottled dressing instead of dressing from scratch. My kids liked it better than the scratch recipe. I also use prepackaged baby spinach. Makes it easier on me!

6 ounces baby spinach leaves, rinsed and dried
1 pint fresh strawberries, thinly sliced
1/2 cup thinly sliced sweet onion
1/2 cup bottled balsamic vinaigrette
1 tablespoon sugar

Steps:

  • In a small mixing bowl, stir together salad dressing and sugar until sugar is dissolved.
  • In a large mixing bowl, toss spinach, strawberries and onion. Drizzle with dressing and toss to coat.

1 (5 ounce) bag fresh Baby Spinach
6 green onions, thinly sliced
1 pint strawberry, washed and sliced
1/2 cup olive oil
1/4 cup red wine vinegar
1/4 cup sugar
1/4 teaspoon paprika

  • Remove stems from spinach and place in bowl.
  • Add green onions and strawberries.
  • Make dressing in shaker, pour on salad and toss gently.

1 cup strawberry, sliced
1/4 cup slivered almonds, toasted
1/3 cup white sugar
1/3 cup olive oil
1/4 cup balsamic vinegar
1/4 teaspoon Dijon mustard
1/4 teaspoon paprika
1/2 teaspoon Worcestershire sauce (Use vegetarian Worcestershire to make this recipe vegetarian.)
1 tablespoon minced onion (green onions or shallots also work well)

Steps:

  • Wash and tear spinach into bite-sized pieces (or you can use pre-washed bagged baby spinach).
  • Combine dressing ingredients; mix well.

2 tablespoons white wine vinegar
2 tablespoons finely chopped fresh basil leaves
1 tablespoon olive oil
1 teaspoon sugar
Kosher salt and freshly ground black pepper
5 ounces baby Spinach, washed and dried
1/4 cup crumbled goat cheese
1/4 cup slivered almonds

Steps:

  • For the dressing:
  • Add 3/4 cup strawberries, white wine vinegar, basil, olive oil, sugar, salt, and pepper to a food processor or blender and puree until smooth.
  • For the salad:
  • Toss the spinach, cheese, almonds, and remaining 1/4 cup strawberries in a large bowl and lightly drizzle with dressing.

2 cups strawberries, Sliced
1/2 lb brie cheese, cut into small pieces
3 granny smith apples, pared cored and sliced 1/4-inch thick (Granny Smith Apples or any tart apple)
2 boneless chicken breasts (optional)
1 pinch lemon pepper (optional)
2 tablespoons maple syrup
1/4 cup lighthouse wild huckleberry salad dressing (Lighthouse)
1 garlic clove, Minced
1/2 teaspoon honey dijon mustard
2 tablespoons raspberry vinegar
1 tablespoon balsamic vinegar
1 tablespoon brown sugar
1/4 cup vegetable oil
3 tablespoons apple juice or 3 tablespoons apple cider
3 tablespoons apple cider vinegar
1 teaspoon Dijon mustard
1 garlic clove, Minced
1/4 cup olive oil
salt
pepper
1/4 cup sugar
2 cups slivered almonds

Steps:

  • Arrange apple slices on baking sheet and brush with maple syrup.
  • Broil until golden.
  • Cool.
  • Place spinach, strawberries, Brie, and apples into a large bowl.
  • Toss with one of the dressing options below.
  • Sprinkle almonds on top.
  • If using chicken, season with lemon pepper and sauté or broil.
  • For last 5 minutes of cooking brush chicken with maple syrup.
  • Cool chicken and cut into small cubes.
  • Sprinkle chicken on top of salad with almonds.
  • Dressing Option 1: Add 2 tablespoons Maple Syrup to Lighthouse Wild Huckleberry dressing. Shake to blend (note: This is the one I have tried and it was really good).
  • Dressing Option 2: Whisk together 1 minced garlic clove, 1/2 teaspoons Honey Dijon Mustard, 2 tablespoons Raspberry vinegar, 1 tablespoons Balsamic vinegar, 1 tablespoons Brown Sugar, 1/4 Cup Vegetable Oil.
  • Dressing Option 3: Whisk together 3 tablespoons Apple Juice or Apple Cider, 3 tablespoons Apple Cider Vinegar, 1 teaspoons Dijon mustard, 1 Clove of minced garlic, 1/4 Cup of Olive Oil, Salt and pepper to taste. Whisk dressing ingredients together in a small saucepan and heat to simmering. Pour over salad and top with almonds and chicken.
  • Candied Almonds: Place 1/4 Cup of sugar in a frying pan and heat on medium just until sugar begins to melt. Stir in 2 Cups of Slivered or Halved Almonds. Keep stirring until almonds are glazed and light brown. Cool.

This is a very simple and delicious salad to make, especially in the summer. My family does not like spinach very much, but they love this dish. Also great to take to pot luck or church dinners as it is a "different" salad. The secret is to find the pale green fresh baby spinach leaves as opposed to the larger, tough, dark green ones in a bag! Hope you enjoy it as much as we do!

3 cups fresh baby spinach leaves
1 cup bite size romaine lettuce
1 egg
1/2 cup vinegar
1/2 cup sugar
1/2 cup very finely chopped onion
1 cup sliced strawberries or 1 cup mandarin orange

Steps:

  • DRESSING:.
  • Beat together egg and vinegar Put in a small pot and simmer, stirring well.
  • Continue to simmer, add sugar and onion and cook for 5 minutes.
  • Stir occasionally.
  • Chill in fridge for 1 hour.
  • Wash and drain baby spinach leaves and romaine lettuce well.
  • Place in large salad bowl.
  • Pour chilled dressing over salad and add strawberries or mandarines on top.
  • Mix well.
  • Prep time does not include refrigeration.
  • If you are low carbing -- use Splenda in place of sugar, and strawberries, no oranges.
