2 loaves pita bread
Extra virgin olive oil
Kosher salt
2 tsp sumac, divided, more as needed
1 heart of Romaine lettuce, chopped
1 English cucumber, cut in half, seeds scraped, then chopped or sliced into half moons
5 Roma tomatoes, chopped
5 green onions (both white and green parts), chopped
5 radishes, stems removed, thinly sliced
2 cups chopped fresh parsley leaves, stems removed
1 cup chopped fresh mint leaves (optional)
Juice of 1 lemon or 1 1/2 limes
1/3 cup extra virgin olive oil
1 to 2 tablespoons pomegranate molasses, optional
Salt and pepper
1 tsp sumac
1/4 tsp ground cinnamon
scant 1/4 tsp ground allspice

Steps:

  • Break the pita bread into small bite-size pieces. Heat 3 tbsp of olive oil in a large pan until shimmering, and add the pita bread. Fry briefly until browned, tossing frequently. Using a pair of tongs, transfer the fried pita chips to a plate lined with paper towel to drain. Season with salt, pepper and sumac.
  • In a large mixing bowl, combine the chopped lettuce, cucumber, tomatoes, green onions with the sliced radish and parsley.
  • To make the dressing, in a small bowl, whisk together the lemon or lime juice, olive oil, pomegranate molasses (if using), salt, pepper and spices.
  • Pour toss lightly. Finally, add the pita chips, and more sumac if you like, and toss one more time. Transfer to small serving bowls or plates. Enjoy!

Soup or salad, like the fattoush made with tomatoes and pita bread, is a light way to break the fast.

1 pita bread
1 large tomato, diced, seeds removed
1/4 red onion, diced
2 bell peppers, one red, one yellow, pith and seeds removed, cut into long strips
1 cucumber, peeled and cut in rounds
5 radishes, sliced
2 whole scallions, chopped
1 head of romaine lettuce, purslane or other wild greens
1/4 cup coarsely chopped fresh mint
1 to 3 teaspoons ground sumac, available in Middle Eastern markets
1 teaspoon dried mint
2 cloves garlic, peeled and minced (about 2 teaspoons)
1/3 cup extra virgin olive oil
Juice of 1/2 lemon
4 teaspoons pomegranate syrup
1 teaspoon salt, or to taste
1/4 teaspoon ground pepper, or to taste

Steps:

  • Heat oven to 350 degrees. Separate pita into 2 rounds, and bake on cookie sheet for about 5 minutes, or until very crisp but not browned.
  • Put tomato, red onion, peppers, cucumber, radishes and scallions into large salad bowl. Add romaine or purslane and fresh mint, and sprinkle with sumac and dried mint. Toss.
  • Whisk together garlic, olive oil, lemon juice, pomegranate syrup, and salt and pepper in a small bowl. Just before serving, give dressing another quick whisk and then pour it over vegetables and toss.
  • Break pita into 1-inch pieces and toss with salad, just before taking salad to table. Taste, add seasonings if needed, and serve immediately.

2 teaspoons pomegranate molasses
1/4 cup red wine vinegar

8 ounces loosely packed baby lacinato kale, swiss chard, and/or baby spinach
1 cup sweet 100 tomatoes (halved)
2 medium Persian cucumber (halved lengthwise and sliced into half moons)
6 medium radishes (halved and sliced paper thin)
1 medium red bell pepper (sliced paper thin into rings (optional))
1 medium avocado (pitted and sliced thin)
1/4 cup loosely packed fresh mint leaves (torn in half)

Steps:

  • Make The Dressing: Combine oil, shallot, sumac, honey, pomegranate molasses, and vinegar in a jar, season with salt and freshly ground pepper, close, and shake well to evenly combine. Set aside until flavors meld, at least 10 minutes. Taste, adjust seasoning as desired and serve.
  • Serve The Fattoush Salad: Place lettuce in a bowl then scatter tomatoes, cucumbers, radishes, bell peppers, avocado, and mint across salad. Drizzle dressing on salad, top with crumbled pita chips, sprinkle additional sumac (if desired), and serve.

1 ½ cups halved and sliced cucumber
1 cup chopped purslane leaves and stems

1 head romaine lettuce, chopped
4 radishes, diced

1 tomato, diced
3 green onions, chopped

salt and ground black pepper to taste
¼ cup lemon juice
¼ cup olive oil
1 tablespoon ground sumac

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place pita bread on a baking sheet.
  • Bake in the preheated oven until the bread is a light brown, 5 to 7 minutes. Remove from the oven and allow to cool, 1 to 2 minutes. Break toasted bread into bite-size pieces.

1 large red capsicum, diced
1 green capsicum, diced
3 large tomatoes, diced
5 spring onions, chopped (scallions)

1/2 teaspoon salt

1 large pita bread round

Steps:

  • Put diced and chopped vegetables into a bowl, cover and chill until shortly before serving time.

  • Toast pita bread under the grill - it should be pale gold in colour, not brown.

salt, to taste
2 medium hearts romaine lettuce
1 medium cucumber
2 cups cherry tomato
5 scallions
½ cup radish, sliced
1 red bell pepper, seeded and diced
2 cups fresh parsley, chopped
1 cup fresh mint, chopped
1 ½ lemons, juiced
1 tablespoon white wine vinegar
2 cloves garlic, minced
2 teaspoons ground sumac, or lemon zest
¼ teaspoon allspice
pepper, to taste

Steps:

  • Preheat the oven to 350°F (180°C).
  • Slice the pitas in half to make 4 thin rounds. Place the pitas on a nonstick sheet pan. Brush with 2 tablespoons of olive oil and season with salt.
  • Bake for about 5 minutes, until the outside is golden brown. Let cool until they become crispy.
  • Make 3 cuts lengthwise on each of the romaine hearts, remove the stems, and chop into smaller pieces. Rinse, drain, and add to a large salad bowl.

And because I find the onions, garlic and cilantro flavors so assertive, I really like to punch up the fresh mint so it stands out!
