FAT-FREE PROTEIN-PACKED CHOCOLATE OMELETTE (MICROWAVE)
I made this one night as a quick-fix dinner after craving chocolate pancakes, or ANYTHING chocolatey all day. To my surprise, it turned out to be quite delicious and something I will definitely be making regularly. And, as a bonus, it is packed with protein- about 28 grams altogether- so it's great for your body. This was quite satisfying after a long day of work, a 2-hr gym workout, and a killer chocolate craving that lasted all day. All the chocolatey goodness comes from rich cocoa powder, and sugar-free/light hot chocolate. **Topped with PB2 this is to-die-for! A chocolate/PB-lovers treat without the guilt! Enjoy :-)

Steps:
- Whisk together all ingredients until you obtain a uniform consistency, and no lumps remain.
- Pour into pasta bowl, or curved plate so that the mix is relatively the same depth throught (deepest part of the mix should be no more than 1 inch thick to ensure it cooks evenly).
- Microwaves vary, but I nuked my omelette at 50% power for 6-7 minutes and it came out evenly cooked and smelling delicious. I tested it by touching the middle part and making sure it felt a little firm to the touch (no liquid mix remained underneath the cooked portion).
- Top with Jam or Jelly, or PB2. Whatever you like.
- Indulge and enjoy!

MICROWAVE MUG OMELETTE
A microwave omelette is the ultimate fast snack. It takes just minutes to prep and cook and you can adapt the recipe by changing the veg, herbs and cheese.

Steps:
- Put the butter and chopped shallot into a microwavable mug. Cook for 30 seconds, remove from the microwave and stir. Let the mug cool down a little, then swish the butter and shallot around the mug to coat the sides lightly.
- In a bowl or jug, beat the eggs with a fork, then add the parsley, peppers, chives, cheese and a small pinch each of salt and black pepper.
- Pour the egg mixture into the mug and return it to the microwave, cook for 20 seconds. Next, open the microwave and stir the egg, repeat the cooking for 20 seconds and stir again. Finally, cook for another 20 seconds, during which time the egg will start to set.
- Remove the mug from the microwave and let it stand for 1 min. If the omelette is not set enough for you, put it back in on 50% power for no more than 20 seconds.

CHOCOLATE OMELETTE

From Debbwl's suggestion I have added strawberries to the recipe but of course you could add other fruit that is in season.

Steps:
- Whisk together the eggs and drinking chocolate powder.
- Warm a non-stick pan and pour egg mixture straight in and cook for 3 to 4 minutes.
- Sprinkle over the chocolate buttons and place under a hot grill (broiler) until the buttons and melted.
- Slice and serve.
