1-HOUR SOFT AND BUTTERY DINNER ROLLS
My favorite 1-Hour Soft and Buttery Dinner Rolls recipe is easy to make by hand or with a stand mixer and absolutely heavenly served warm out of the oven.

Steps:
- Heat the oven to 400°F. Grease a 9 x 13-inch baking dish with cooking spray, and set aside.
- In a microwave-safe bowl (or saucepan, see below), stir together the water and melted butter, then add in the milk and honey and stir until combined. Microwave the mixture for 1 minute and give it a stir. Continue microwaving the mixture in 15 second intervals, until it reaches 110°F. It will be warm but not hot to the touch. (*Alternately, you can heat the mixture over medium-low heat in a saucepan until it reaches 110°F.)
- Pour the liquid mixture into the large bowl of a stand mixer. Sprinkle the yeast evenly on top, give it a quick stir with a fork to combine, and let the yeast activate for 5 minutes until it is foamy.
- Add in 3 1/2 cups of flour (not all of the flour) and the salt.
- (See alternate instructions in the notes below for how to knead the dough by hand.) Use the dough-hook to mix in the dry ingredients on medium-low speed until combined. If the dough is sticking to the sides of the bowl, add in 1/4 cup more flour at a time until the dough pulls away from the sides of the bowl and is only slightly sticky to the touch. (Only use up to 4 cups of flour total.) Continue mixing on low speed for 4-5 minutes until the dough is smooth. Then form the dough into a ball with your hands and transfer it to a greased bowl.
- Cover the bowl with a damp towel or paper towel, and let it rise briefly for 15 minutes.
- Gently punch the dough down and divide into 15 equal-sized pieces. Form each piece into a ball and place the dough balls in the greased baking dish. Cover the dish again with a damp towel or paper towel and let the dough balls rise for an additional 15-20 minutes.
- Uncover and bake for 15 minutes, or until the rolls are lightly golden brown on top and cooked through.
- Transfer the baking dish to a wire cooling rack and brush the tops of the rolls with melted butter.
- Then serve warm and enjoy!
EASY QUICK BUNS
These are super easy, super quick buns. I get requests to take them everywhere we go. They are great for those last minute dinner guests, or a nice surprise for breakfast. They freeze well, and make excellent toast. This recipe is a combo of my grandmothers recipe and a few others, all tweaked to make a fast, easy, soft, fluffy bun.

- Mix 2 C flour& yeast in a large bowl.
- In a separate bowl, heat milk, water, oil, sugar& salt to lukewarm in microwave.
- Add all at once to flour mixture and beat till smooth. (Approx 2 mins in a Kitchenaid stand mixer).
- Mix in enough flour to make a soft dough (2 - 2 1/2 Cups).
- Mix well until dough is soft and slightly sticky, then turn out onto floured surface and let rest under a large greased bowl for about 15 minutes.
- Shape dough into 12-15 small balls and place on greased baking sheet to rise until doubled in size. (approx 45 Mins).
- Bake in preheated 400 degree oven 12-15 minutes.

FAST BUTTERY BUNS RECIPE | BREAD BAKING
Bread snob that I am, there are times when all I need is something simple. Something that can be made quickly. But even when I'm in a hurry, I'd prefer that the resulting bread isn't completely bland. Sometimes that means I'm a little more generous with flavor enhancers. Like butter! Just a little extra. Y'all.

Steps:
- Put the water, yeast, sugar, and 2 cups of the bread flour into the bowl of your stand mixer. Stir to combine. I will be loose and gooey. Put the remaining flour on top. Add the salt. Cover with plastic wrap (yes, you're just leaving that flour on top for now) and set aside for 20 minutes.
- Remove the plastic wrap and knead the dough with the stand mixer fitted with the dough hook until the dough is smooth, shiny, and elastic. It will be a soft dough. Add the butter and continue kneading until the butter is completely incorporated. Remove the bowl from the stand mixer, cover with plastic wrap, and set aside for 20 minutes.
- Flour your work surface and preheat your oven to 350 degrees. Line a baking sheet with parchment paper. Turn out the dough and knead briefly. It should be soft and feel bouncy. Divide the dough into 12 pieces and shape into balls. Place the balls on the prepared baking sheet. Note: if you want sandwich/burger buns instead of round rolls, flatten the balls to about 1/2 high. I made 6 of the flatter buns and 6 round buns. Cover the buns with plastic wrap and set aside until doubled in size, about 30 minutes.
- Remove the plastic wrap and bake at 350 degrees until nicely browned, about 25 minutes. Remove the buns from the baking sheet and let cool on a rack.

- Put yeast in bread machine first on bottom, then flour, sugar and salt.
- Then melt butter in microwave. Add beaten egg, milk and water.
- Pour onto dry ingredients in bread machine on the dough setting.
- When dough is done, put it onto a lightly floured surface.
- Knead in enough flour to make it easy to handle.
- If it is too elastic, cover and leave 10 minutes.
- Use floured rolling pin to roll out dough on floured surface.
- Roll out into rectangular shape to approx 1/4-inch thick.
- Use filling and spread over entire surface of dough with spoon.
- Roll up dough.
- Cut into circle with a sharp knife about 1-inch thick; place these in a greased 9x13-inch pan.

BEST BREAD MACHINE BUNS
This recipe is easy and foolproof. It makes a soft and tasty bun with a slightly flaky crust. This is a combination of several recipes I've tried, but I've changed it to suit our tastes.

- Place the ingredients in bread machine pan in the following order: milk, oil, sugar, salt, beaten egg, and flour.
- Make a little well in the flour and add the yeast to flour.
- For rolls, select Dough Setting and press start.
- Shape dough into rolls when cycle is completed (my dough cycle is 2 hrs) and place dough rounds unto a lightly floured cookie sheet about 1 inch apart.
- Cover and let rise for about 45 minutes in warm draft free area (I let mine rise in a slightly warmed oven with the light bulb on).
- When Dough has doubled in size, uncover and bake@ 350 degrees for 15 to 17 minutes or until golden brown.
- Cool on cooling rack for 20 minutes, and once cooled it can be stored in plastic bag.

- ********IF USING A KITCHEN AID STAND MIXER USE THE FOLLOWING STEPS:.
- Dissolve 1 tblsp. sugar and the yeast in 1/4 cup warm water.
- Scald 1 cup milk.
- In large mixing bowl combine sugar, oil, salt and milk. Cool to luke warm.
- Stir in eggs and yeast.
- Gradually add enough flour to form a semi-stiff dough, beating well after each addition.
- Once dough comes together in ball, take out dough and knead on a flat surface for about 5 to 10 minutes. The dough is ready when it feels soft like your earlobe.
- Let rest for 5 minutes, and cover and let rise in a covered bowl (saran wrap) for 1 hours or until doubled in size.
- After first rise, punch down dough and knead for an additional 2-5 minutes.
- Form into desired shape and let rise again for 45 minutes to 1 hours.
- When Dough has doubled in size, uncover and bake@ 350 degrees for 15 to 17 minutes or until golden brown.

BUTTERY PAN ROLLS (FOR THE BREAD MACHINE)
From a Favorite Brand Name Recipes book. I've made too many yeast roll recipes to count but these are my hands down favorite. I make them for all holiday meals and whenever bringing dinner to someone. It's really easy with the bread machine and everyone loves them. It's a lot of butter but don't scrimp, they're well worth it! I've doubled the recipe and either baked in two pans or in a 13x9 pan. If you do this, just watch the baking time and make sure the middle rolls are cooked through.

- Reserve 5 T melted butter.
- Put all other ingredients in bread machine according to manufacturer's directions.
- Program dough setting, press start.
- Pour half of remaining butter into 8-inch square baking pan, tilt to coat bottom with butter.
- Drop batter by rounded tablespoonfuls into pan, making 16 rolls.
- Drizzle remaining butter over rolls.

- Tip the flour, yeast, sugar, salt and oil into a bowl. Pour over 325ml warm water, then mix (with a spatula or your hand), until it comes together as a shaggy dough. Make sure all the flour has been incorporated. Cover and leave for 10 mins.
- Lightly oil your work surface and tip the dough onto it. Knead the dough for at least 10 mins until it becomes tighter and springy - if you have a stand mixer you can do this with a dough hook for 5 mins. Pull the dough into a ball and put in a clean, oiled bowl. Leave for 1 hr, or until doubled in size.
- Tip the dough onto a lightly floured surface and roll into a long sausage shape. Halve the dough, then divide each half into four pieces, so you have eight equal-sized portions. Roll each into a tight ball and put on a dusted baking tray, leaving some room between each ball for rising. Cover with a damp tea towel and leave in a warm place to prove for 40 mins-1 hr or until almost doubled in size.
- Heat the oven to 230C/210C fan/gas 8. When the dough is ready, dust each ball with a bit more flour. (If you like, you can glaze the rolls with milk or beaten egg, and top with seeds.) Bake for 25-30mins, until light brown and hollow sounding when tapped on the base. Leave to cool on a wire rack.

- In small bowl place the following ingredients:.
- 1 cup warm water.
- yeast and 2 tbsp white sugar (DO NOT STIR).
- let stand for 10 minutes.
- In large mixing bowl do the following steps.
- Place 8 cups warm water in bowl.
- Place remaining 2 tbsp sugar in water.
- Place 4 tbsp margarine or veg. oil in water.
- Place salt in water.
- Add 6 cups flour one at a time and mix as you are adding. Making sure to remove any lumps. Should be smooth before adding next cup.
- Pour Yeast mixture in other bowl that you set aside into mixture.
- Mix until smooth.
- Continue to add flour mixing thoroughly until dough is sticky and forms a ball (note you will have to use your hands to mix it after its too tough to mix with a spoon. It should take only about a maximum of 17 cups of flour.
- Take dough out of bowl and place on a flat clean dry surface which was sprinkled with about 1/2 cup of flour. Knead dough with hands for about 15 minutes or so. Dough should be soft and feel light to to touch. TIP: To prevent the dough from sticking to your hands a lot rub vegetable oil on them or take a piece of margarine and rub it into your hands then continue to knead dough. DO NOT ADD MORE FLOUR! It will make your bread dough TOO HEAVY! if you do.
- Separate dough in half. Place each half in a bowl. Place a light towel over it and let the dough rise for 1 hour or until doubled.
- FOR BUNS: Take about the size of a baseball of dough in your hand roll into a ball and place it on an ungreased cookie sheet. Let rise for another 1/2 hour or until buns are double in size. For buns to rise tall place them close together almost touching. Bake at 375°F.
- FOR LOAVES: Take a large amount of dough and roll into a roll dough should not take up more than half of the loaf pan. Make sure dough roll is even or you will end up with a lopsided loaf or narrow loaf. Let rise for 1 to 2 hours. Or until Dough is nicely formed above the rim of the loaf pan. Bake at 350°F for 45 minutes or until golden brown. To test to see if done knock on top of the loaf. If it sounds hollow it is completed baking. It will be a dark golden brown color when finished.
- Take Loaves out of oven and take them IMMEDIATELY OUT OF THE PANS upside down. (If you leave them till cooled in pans what happens is the bottom crust gets soggy from the condensation). Brush melted butter over top of loaves to prevent from drying out.
- Yield: 4 loaves 2 dozen buns.
- Depends on size.
- TIP: This bread dough is great for anything such as pizza crusts, cinnamon buns, take a bit and roll it out thin and place it in a frying pan with a little oil and fry it and serve with jam or peanut butter.
