3 1/2 cups uncooked farfalle (bow-tie) pasta (7 ounces)
3 tablespoons chopped fresh cilantro or parsley
2 teaspoons butter or margarine
2 cups sliced mushrooms (4 ounces)
1/4 cup milk
1/4 cup dry white wine (or nonalcoholic) or chicken broth
2 tablespoons finely chopped oil-packed sun-dried tomatoes, drained
1/2 package (8-ounce size) cream cheese, softened

Steps:

  • Cook and drain pasta as directed on package. Toss pasta and cilantro.
  • Melt butter in 10-inch skillet over medium heat. Cook mushrooms, stirring occasionally, until tender; reduce heat to low. Stir in remaining ingredients; cook until hot. Toss with pasta.

This is a recipe which we have used for those who do not eat meat here at the home. I found this on the Barilla web site. It is really very good and creamy.

Number Of Ingredients 11

2 tablespoons unsalted butter
3 tablespoons all-purpose flour
5 ounces creamy gorgonzola, cubed
2 1/2 cups whole milk
salt & freshly ground black pepper, to taste
crushed red pepper flakes, to taste (optional)
3 tablespoons extra virgin olive oil
1 lb assorted mushroom, chopped
3/4 frozen peas, thawed
16 ounces farfalle pasta (Barilla)
2 tablespoons chopped fresh chives

Steps:

  • Melt butter in a 2 qt saucepan over medium heat.
  • When the butter starts to sizzle, add the flour and whisk until smooth, about 2 minutes.
  • Gradually whisk in the milk.
  • Bring the sauce to a simmer.
  • Simmer for 2 minutes, whisking constantly.
  • Remove from the heat.
  • Add the Gorgonzola and stir until melted.
  • Season the sauce with salt, pepper and crushed red pepper(if using),to taste.
  • Set aside and cover to keep warm.
  • Heat the oil in a heavy large skillet over medium heat.
  • Add the mushrooms and sauté until tender and golden, about 12 minutes.
  • Stir in the peas.
  • Season to taste with salt and pepper.
  • Cook farfalle according to pkg directions and drain.
  • Transfer the pasta to a large bowl.
  • Add the Gorgonzola sauce and mushroom mixture, and toss to coat.
  • Season the pasta with salt and pepper, if needed and top with chopped chives.

This is a really great dish served over noodles or rice. I have had the recipe so long, I don't remember where it came from, but it's good!

4 tablespoons butter, divided
1 tablespoon lemon juice
2 whole chicken breasts, halved
1/2 cup leeks or 1/2 cup green onion, thinly sliced
1 (8 ounce) package fresh mushrooms
2 tablespoons all-purpose flour
1 cup chicken broth
1/4 cup fresh cilantro or 1/4 cup fresh parsley, chopped
1/4 cup milk
1/4 teaspoon pepper

Steps:

  • In a small bowl, combine 2 tbsp melted butter and lemon juice.
  • Place chicken on a greased broiler pan, broil 6-8 inches from heat, turning every 10 minutes and basting with lemon-butter mixture, 30-35 minutes.
  • Meanwhile, melt the remaining butter in a saucepan until sizzling.
  • Stir in leeks and mushrooms.
  • Cook over medium heat, stirring occasionally, for 2-3 minutes.
  • Stir in flour.
  • Add chicken broth, continue cooking and stir constantly until mixture is thickened, about 2-3 minutes.
  • Reduce heat to low.
  • In a small bowl, combine cilantro, milk, and pepper. Add to mushroom sauce, and continue to stir for a minute or two until thickened.
  • Serve sauce over chicken.

1 tablespoon butter
12 ounces mushrooms, presliced exotic
1/2 cup onion, chopped
1/3 cup shallot, finely chopped
1 tablespoon garlic, minced
1 1/2 teaspoons salt
1/4 teaspoon fresh ground black pepper
1/4 cup dry white wine
2/3 cup whipping cream
1/2 cup parmigiano-reggiano cheese, grated
2 tablespoons fresh parsley, chopped

Steps:

  • Cook pasta according to package directions, omitting salt, drain.
  • In a large nonstick skillet, melt the butter over medium high heat.
  • Add the mushrooms,onion, shallots, garlic, 1 tsp salt, and black pepper.
  • Cook for 12 minutes or until liquid evaporates and mushrooms are tender, stirring occasionally.
  • Add wine, cook 2 more minutes or until liquid evaporates, stirring occasionally.
  • Remove from heat.
  • Add pasta, cream, cheese, and parsley. Toss gently to coat.
  • Stir in remaining salt.

1 yellow onion
4 garlic cloves
1 lb mushroom
1/2 cup fresh cilantro
1 teaspoon black pepper
1 tablespoon Worcestershire sauce
1 cup red wine

Steps:

  • In a saucepan heat oil over medium heat. Add chopped onion and crushed garlic; saute 3 minutes. Add sliced mushrooms and 1/4 cup of the cilantro.Reduce heat to low; saute 10 minutes. Add pepper, worcestershire sauce and wine; simmer 5 minutes. Add remaining cilantro, simmer an additional 5 minutes.
  • Serve over steak, pasta, rice or potatoes.
