DINER-STYLE FRENCH TOAST
Diner cooks know three things about French toast: 1. Thick-cut challah is crucial. 2. Cinnamon and vanilla shouldn't be skimped on. 3. Syrup is welcome-but if you do it right, a dusting of powdered sugar is all you really need.

Steps:
- Whisk eggs, milk, granulated sugar, vanilla, cinnamon, and salt in a large bowl.
- Heat a large griddle or 2 cast-iron or nonstick skillets over medium. Brush with a thin coating of oil, then a thin coating of butter.
- Working in batches, dip each slice of bread into egg mixture. Cook, flipping halfway through, until golden brown on each side, about 2 minutes per side. Repeat with remaining bread, brushing griddle with remaining oil and butter as needed. Dust French toast with powdered sugar just before serving. Serve with maple syrup alongside.

Steps:
- Beat the eggs, milk, and cinnamon together. Whisk until well blended.
- Dip each slice of bread into the egg mixture, allowing bread to soak up some of the mixture.
- Melt some butter (or use vegetable oil) over a large skillet on medium high heat. Add as many slices of bread onto the skillet as will fit at a time. Fry until brown on both sides, flipping the bread when necessary.
- I prefer to serve with golden syrup.

Steps:
- Trim off the bread crusts and carefully cut the thick slices in half, leaving one side intact. Spread 1½ tablespoons of peanut butter inside each piece of milk bread.
- In a shallow bowl, whisk to combine the milk, eggs, cinnamon, and salt. Soak the peanut butter-stuffed bread in the milk mixture for 2 minutes on each side.
- While the bread is soaking, melt the butter in a large skillet over medium heat. Add the soaked bread to the pan, cover with a tight lid, and cook until golden brown on the underside, 2 to 3 minutes. Flip the bread and cook the other side, uncovered, until golden brown, 2 to 3 minutes.
- Serve the French toast with a drizzle of condensed milk and a slab of butter.
