This is an easy, refreshing fruit salad that's been in our family for years. We usually reserve it for patriotic days, but it can be enjoyed all year long.

1 pint strawberries, hulled and quartered
1 pint blueberries
½ cup white sugar
2 tablespoons lemon juice
4 bananas

Steps:

  • Mix the strawberries and blueberries together in a bowl, sprinkle with sugar and lemon juice, and toss lightly. Refrigerate until cold, at least 30 minutes. About 30 minutes before serving, cut the bananas into 3/4-inch thick slices, and toss with the berries.

2 cups watermelon cubes
2 white or donut peaches, pitted and cut into bite-sized pieces (use Bartlett pears, if peaches are out of season)
2 cups blueberries
2 tablespoons freshly squeezed lemon juice, or to taste
2 tablespoons sugar, or to taste
1/2 cup canned coconut milk
3 fresh mint leaves, julienned

Steps:

  • Combine the fruits in a bowl. Whisk together the lemon juice, sugar, and coconut milk in a small bowl. Toss the dressing with the fruit and the mint. Taste for sugar and lemon juice and chill until ready to serve, up to 10 hours.

1 (3 3/4 ounce) package instant vanilla pudding
1 1/2 cups milk
1 (8 ounce) container Cool Whip, thawed
1 (11 ounce) can mandarin oranges, drained
1 (20 ounce) can chunk pineapple, drained
1 (16 ounce) can fruit cocktail, drained

Steps:

  • Beat with mixer the pudding and milk for 2 minutes. Add cool whip, then fruits. This keeps for one week in the refrigerator.
  • Option: Add minature marshmallows, fresh grapes or bananas. Add just before serving.

1/4 cup fresh lime juice
1/4 cup honey (soften honey first to make it easier to whisk) or 1/4 cup agave nectar (soften honey first to make it easier to whisk)
1 pinch ground cardamom (optional-my addition)
2 tablespoons chopped of fresh mint
3 cups fresh blueberries, washed and drained
1 quart fresh strawberries, washed, hulled and halved
3 medium apples, washed, cored and cut into 3/4-inch-inch chunks (*I used 'Criterion' apples-your choice to peel)
fresh mint leaves

Steps:

  • In a large bowl, whisk together the dressing ingredients.
  • Add the salad ingredients and *to avoid the apples turning brown, toss [immediately] to combine.
  • Let the fruit salad set for 15-30 minutes to allow the flavors to blend.
  • Garnish salad with fresh mint leaves just before serving.
  • Servings are estimated.
